Abstract

This study aims to analyze the competence of culinary graduates of SMK Negeri 9 Padang and the competency of graduates expected by the industry. This study uses a qualitative descriptive research method. The research was conducted in three different hotels in the city of Padang, namely Whiz Prime Hotel, Grand Inna Hotel, and Pangeran Beach Hotel. Informants in this study included the culinary industry where graduates worked as well as graduates working in the industry. There are two data collection techniques used, interviews and documentation. Processing data in this study using NVivo 11 software. The results of data analysis showed that there were 17 themes on cognitive aspects, 15 themes on affective aspects, and 18 themes on psychomotor aspects. The results of the analysis of the competence of culinary graduates from SMK Negeri 9 Padang, which is expected by the industry, show that there are 7 themes summarized from cognitive, affective, and psychomotor aspects. In general, the results of the study showed that the cognitive and psychomotor aspects of graduates were good. Cognitive and psychomotor aspects include eating and drinking services, non-alcoholic drinks, pastry, Indonesian food, and continental food. Whereas in the affective aspect an increase is needed, namely the level of self-confidence, adaptation, and discipline.

Abstract

The problem primarily faced by vocational education institutions is a gap between skills taught at schools and skills required by the industries. This leads to the increasing unemployment rate of Vocational High School graduates. Thus relevant curriculum is required to satisfy the industry demands. This study aimed at analyzing the relevance of the productive course of hair beauty in Vocational High Schools to the job requirements in beauty salons in Padang. This study was qualitative descriptive. The data collection used interviews, observation and documentation. The data collection instruments consisted of observation sheets and interview guidelines. The data were analyzed using the stages of data reduction, presentation and conclusion. The results showed positive relevance of the productive course of hair beauty in Vocational High Schools to the job requirements in beauty salons in Padang. The skills learned in the schools were adequately relevant with the skills required by beauty salons, since from thirteen productive lessons taught in the schools, eleven of them were implemented and used in the workplaces.

Abstract

This study aims to (1) describe the career information Jasa Boga students SMKN Padang 9, (2) describe the Jasa Boga students interest in entrepreneurshipt SMKN Padang 9 and (3) reveal the contribution of career information to Jasa Boga students' interest in entrepreneurship in SMKN 9 Padang. This study is a descriptive correlational study. The study populationwas Jasa Boga student’sof class XIISMK 9Padangin the academic year2012/2013as many as102students. Samples were obtained from 50% of a population of 51 students. Collecting data using a structured questionnaire with Likert scale.Questionnaire used had been tested for validity and reliability. The descriptive analysis of the results showed that the students' career information categorized quite good (37%) and interest in entrepreneurship categorized quite good (45%). Correlation coefficient between the variables of career information with interest in entrepreneurship (r2) = 0.096 means career information contributed 9.6% to as much interest in entrepreneurship. While the rest (90.4%) affected other variables. The results showed that the students' career information obtained is still less than the maximum. Therefore need to be increased efforts to provide information about career. Therefore need to be increased efforts to provide information about careers. Abstract

This research was motivated by the utilization of sago flour which is used in diversification of food processing, while sago flour can be one alternative to replace some of flour as the main ingredient of pie skin. This study aims to analyze the influence of substitution of sago flour as much as 25%, 50% and 75% to the quality of pie skin in terms of shape, color, aroma, texture and taste. This type of research is a pure experiment using a completely randomized design method. The data used were primary data sourced from 30 semi-trained panelists by proposing the organoleptic test format. Analyze data using ANAVA, if FCcount> FTable then proceed with Duncan test. The result of this research is significant influence from the use of sago flour to the quality of pie skin with the use of sago flour as much as 75% produce the best quality pie skin, including brownish yellow color, to the quality of sago aroma and for the taste of sago. Abstract

This study aims to analyze the contribution of learning to the learning outcomes Continental Food Processing and Presentation of student membership food service program SMKN 2 Bukittinggi. This type of research is quantitative descriptive by using the correlation method. The subjects of this research were students of class XI SMKN 2 Bukittinggi, amounted to 70 people. Collecting data through direct observation and measurement using a questionnaire with Likert Scale. Hypothesis testing using correlation coefficient analysis. Based on the results of research shows that learning PPMK of food service student SMKN 2 Bukittinggi in both categories with a percentage of 70% and the learning outcomes in categories with a percentage 54.3%, with a correlation coefficient of 0.27. the hypothesis proposed (Ha) recieved, which reads some positive contribution and significant between learning styles to student learning outcomes Continental Food Processing and Presentation of SMKN 2 Bukittinggi.Kata Kunci: Learning, Learning Outcomes, Continental Food Processing and Presentation

Abstract

This research aimed to describe student attitude of flavoring and synthetic dyes in food processing. Including cognitive, affective, and conative indicators. The The population in this research is the attitude of family welfare major of technic department of UNP 2008 untill 2010 who have been had food material science in the first class which are 163 persons. The sampling technic is propotionate random sampling with 48 samples. For synthetic flavor 49% respondents have the good attitude, 60,4% for cognitive indicator, 60,4% for affective and 65.1% for conative of the use of synthetic flavor in food processing. For synthetic dyes 60.4% respondents have the good attitude, 60.4% for cognitiveindivator, 67.4% for affective and 65.1% for conitive of the use of synthetic dyes. The result of score T analysis shows that the students have the negtive attitude of flavoring and synthetic dyes use. Negative means that the students not use the flavor and synthetic dyes in food processing.

Abstract

This study aims at developing interactive multimedia valid and practical in entrepreneurship courses and analyze the validity and practicalities of multimedia are developed. This research is a development model that IDI consists of three stages: define (determine), develop (development) and Evaluate (ratings). Subjects consisted of 4 validator, 30 students to test the practicalities. The technique of collecting data using questionnaires and analyzed with the formula Aiken's V for validity analysis and descriptive analysis using a percentage formula for analysis practicalities. The results showed that the value of design validation 0.83 with valid category and validation of the contents of 0.83 with a valid category. Test the practicalities of the two lecturers, obtained an average score of 83.85% with a very practical category. Test the practicalities of the students obtained an average score of 83.03% with a very practical category. Based on the above it can be concluded that interactive multimedia is valid and very practical for use as a medium of learning in the Family Welfare Education courses State University of Padang.Keywords: development, multimedia, interactive, entrepreneurship

Abstract

The background of this study is still a lack of service in the majors KK equipmentfor the course Basic Setup and food services. This study aims to, 1) Describe theavailability of equipment service in the majors KK, 2) determine student resultsIKK course Basic Setup and food services, 3) Reveal contributions equipmentavailability service to the learning outcomes of students IKK (Food coordination)course on Basic structuring and food services. This type of research is quantitativedescriptive by using the correlation method. The research population amounted to169 people, with a sample of 42 people and using simple random sampling. Theresults showed that: 1) the availability of equipment service outcomes of moderate(71.43%). 2) results of student learning subjects IKK Basic Setup and good foodservices (31%). 3) contributions equipment availability service to the learningoutcomes of 13.2% it can be concluded that the hypothesis that "there is acontribution availability of equipment service for learning outcomes" can beaccepted (Ha).2Kata kunci: ketersediaan, peralatan service, mahasiswa IKK

Abstract

The purpose of this research is to find out the relation Emotional Intelligence and Study Motivation with the Study Result of SMK N 2 Bukittinggi student in academic year 2016/2017. This research is a quantitative research with correlation approach. The population of this research is 80 culinary students of Grade X and the sample is 62 students. The technique of data collective is using questionnaire with Likert scale measurement. The analysis of data is using descriptive analysis and correlational. Based on the result of the research known that the highest percentage of emotional intelligence 65%, study motivation 52%, result study 74%, with the correlation coefficient0,688. The hypothesis (Ha) accepted as there is a positive and significant correlation between emotional intelligence and study motivation with study result at sanitation hygiene and work safety lesson in SMK N 2 Bukittinggi.Keyword : Emotional Intelligence , Study Motivation, Study Result.

Abstract

The background of this research is the problems related to the learning result which is stile in the low level in the practical activity in Jasa Boga subject in the second grade students of the SMK Negeri 1 Suntuk Toboh Gadang Kabupaten Padang Pariaman school year 2014/2015 totalling 50 poople. This research was done  in descriptine quantitive way by using correlation method. The population of this research is the parents of 50 student at the second grade of SMK Negeri 1 Sintuk Toboh Gadang Kabupatan Padang Pariaman in the 2014/2015 school year. Based on the data analysis, the oncome of the parents is in the level, ≤ Rp. 1.500.000,00 in fact with a percentage of 40%, achivementof the student show that 66% student cannot pass the test but only 34% pass the test. The analysis shows that there is a positive correlation between the parents income and learning result of the second grade students of SMK Negeri 1 Sintuk Toboh Gadang Kabupaten Padang Pariaman.   Keyword : The Level Of Income, Parents, Learning Outcomes.
