Abstract

Introduction: Gandaria (Bouea macrophylla Griff) is a tropical fruit plant which in the Maluku region is only found in several areas, namely Ambon Island as the largest production center. Gandaria contains secondary metabolites, one of which is flavonoids, which are generally found in various plants and are very potential to be researched and developed by Indonesian researchers because they have many good benefits for living things. Methods: This study used qualitative and quantitative research methods to test the color of the gandaria fruit samples to identify the presence of flavonoid compounds and then to find out how much flavonoids were in the gandaria fruit research samples taken from various altitudes on Ambon island. Results: The results of this study indicate that the Suli area as the area with the lowest altitude where the sample was taken contains the highest levels of flavonoids with an average of 21.498 mgQE/g, then the area of medium altitude where the sample is taken, namely Kusu-kusu has a flavonoid content with an average of 9.692 mgQE/g then in the area with the highest altitude level in sampling, namely Soya with the lowest flavonoid content with an average flavonoid content of 9.084 mgQE/g.

Abstract

In Maluku, the salak center is on Ambon Island, namely Soya, Hatalai, Wakal, Amahusu, and Hative Besar Villages, and also on Seram Island, namely Piru, Taniwel, Riring Villages. Salak in West Seram Regency is one of the native salak cultivars of Maluku. This is because this cultivar has a red fruit appearance and a sweet and sour taste. Organoleptic of red snake fruit jelly candy on the color parameter the highest value on a scale of 4 with a total of 11 panelists, who really like the brownish red color with an average of (3.92), the taste parameter the highest value on a scale of 4 with as many as 16 panelists who like the sweet taste typical of red snake fruit with an average of (4.00), the aroma parameter the highest value on a scale of 4 as many as 10 panelists who like the fragrant aroma typical of red snake fruit, with an average of (3.60), the texture parameter the highest value on a scale of 5 as many as 12 panelists who like a very soft and chewy texture, with an average of (4.12) and the average vitamin C content in red snake fruit jelly candy is 4.58 mg/100g.

Abstract

Application of science-technology-society (STS) in the village of Ambon City Music Attraction through empowerment of Gandaria (Bouea macrophylla) Maluku Endemic Plants. Community service is participatory in nature, namely the method of strengthening community capacity is not in the form of training but increases knowledge and skills that are normative. The service is carried out in Amahusu village as a tourist attraction village in Ambon city. The subjects in this service activity consisted of Mrs. PKK, and teenagers in Mahahusu village. The products produced include 6 snacks and beverages, namely: Yogurth, Nata, Wine, Dodol, Boble Tea, and Jelly drinks. Organoleptic test on color, aroma, texture, taste, and acceptability. This service program has changed the culture of the community into producing products. In addition to the ability of the program, it is hoped that the community will be more independent and just
