Penelitian ini bertujuan untuk menjelaskan dan mendeskripsikan kajian etnosains proses pembuatan gula merah Dawan sebagai pendukung pembelajaran IPA SMP. Penelitian ini menggunakan pendekatan etnosains dengan jenis penelitian kualitatif deskriptif. Tekning sampling yang digunakan yaitu purposive sampling dan sowball sampling yang diperoleh sebanyak 6 subjek penelitian diantaranya 3 orang produsen gula merah Dawan, dan 3 orang guru IPA SMP Negeri 1 Dawan. Teknik pengumpulan data yang digunakan yaitu observasi, wawancara, dokumentasi dan angket. Teknik analisis data menggunakan model Miles dan Huberman yaitu reduksi daya, penyajian data, dan penarikan kesimpulan. Hasil penelitian menunjukkan bahwa alat dan bahan yang digunakan dalam proses pembuatan gula merah Dawan berupa alat jalikan, beruk, wajan, panged, pengeledokan, pencetakan kau-kau, saringan, dan keraras, serta bahan yang digunakan meliputi air nira kelapa, larutan lau, serta kayu jati dan pelepah tumbuhan kelapa sebagai kayu bakar. Proses pembuatan gula merah Dawan dibagi menjadi beberapa tahapan, diantaranya ngirisin, nyaringin, mumpunin, ngeledok, pencetakan, dan pencetakan. Hasil kajian sains ilmiah dari proses pembuatan gula merah Dawan relevan dan dapat didukung oleh beberapa materi dalam pembelajaran IPA SMP, diantaranya klasifikasi makhluk hidup, membedakan perubahan fisika dan kimia serta memisahkan campuran sederhana, kalor dan perpindahan, sekaligus membedakan isolator dan konduktor kalor, pencemaran udara, mengenal larutan asam basa berdasarkan karakteristiknya, sistem gerak pada manusia, pesawat sederhana, dan sistem perkembangbiakan pada tumbuhan.This research aims to explain and discribe an ethnoscience study of the process of making Dawan brown sugar as a support for junior high school science learning material. This research uses an ethnoscience approach with a descriptive qualitative research type. The sampling technique used was purposive sampling and snowball sampling. There were 6 research subjects, including 3 Dawan brown sugar producers and 3 scince teachers at SMP Negeri 1 Dawan. The data collection techniques used were observation, interviews, documentation, and questionnaires. The data analysis technique uses the Miles and Huberman model, namely data reduction, data presentation, and drawing conclusions. The results of the research show that the tools and materials used in the process of making Dawan brown sugar are in the form of tools, namely jalikan, beruk, pan, panged, pengeledokan, kau-kau molding, klakat, sieve, and keraras, and the materials used include coconut juice, lau solution, as well as teak wood and coconut fronds as firewood. The process of making Dawan brown sugar is divided into several stages, including slicing, nyaringin, mumpunin, ngeledok, molding, and packaging. The results of scientific studies of process of making Dawan brown sugar are relevant and can be supported by several materials in junior high school science learning, including the classification of living things, distinguishing between physical and chemical changes and separating simple mixtures, heat and transfer, as well as distinguishing insulators and heat conductors, air pollution, recoginze acid-base solutions based on their characteristics, movement system in humans, simple machines, and reproductive system in plants.
