Abstract

Tomohan International Flower Festival (TIFF) is an annual event in Tomohon City, North Sulawesi Province. Satya Wacana Christian University (UKSW) provides support at TIFF 2024, namely in providing consumption in the form of healthy food in the form of sourdough bread which uses natural yeast from the Tomohon region. In Tomohon City, natural yeast is available in abundance and one of them is obtained from farmers who arenga tap (palm water sugar) . Yeast from arenga tap is used as a developer in bread dough. Sourdough bread was chosen because it has good health benefits, namely having a low glycemic index, low gluten, rich in fiber and antioxidants and prebiotics. The implementation of activities is divided into two, namely training and sourdough bread production. The sourdough bread making training was attended by junior high school teachers, woman communities representatives, and church women. In the production of sourdough bread, 200 pieces of bread were produced which will be served to VVIP guests at TIFF 2024. Before being served, the bread passed a food safety test and the results were negative for containing borax, pesticides, cyclamate, formaldehyde and synthetic food colorant.
