Abstract

Chili (Capsicum sp) is one of the agricultural product. Katokon chili (Capsicum chinense Jacq.) is one of the most popular chili  in Toraja-South Sulawesi. Katokon chili has a distinctive aroma and strong spicy flavor. The red color on chili is an indicator of natural pigment content. The aim of this study was to determine the types of pigments in katokon chili and to see the stability of the pigment to the exposure of hot temperature. The method used is pigment extraction using acetone. Pigment analysis was performed with spectotometer UV-Vis and TLC. The thermostability test with the addition of VCO and boiling for 5, 10, 15, and 20 minutes ago was analyzed with spectrophotometer UV-Vis. The result of research, there is 8 color fraction from a result of TLC. Total carotenoids of 0.93 mg / 100 g mg / 100 ml. Carotenoid decline in heating; 0.113164 mg / 100ml (5 min) 0.150986 mg / 100 ml (10 min), 0.099259 mg / 100ml (15 min), and 0.024046 mg / 100 ml (20 min). The colors of the 8 fractions show the characteristics of the compound present in the pigment based on the molecular weight and the polarity. The decrease in carotenoid concentration caused by heat exposure causes the pigment to lose protection from its membrane, so oxidation can occur easily, especially under high-temperature conditions, resulting in the color of the pigment fading.Keyword: chili, carotenoid, pigment, katokon, thermostability.

Abstract

Timorese people have made gender segregation for several things such as; sex, traditional house and job. Timorese women are identical to round houses (ume kbubu), where inside the house, the women spend their time and activities. Timorese women play an important role in ume kbubu, one of which is the management of food. The purpose of this research is to investigate the role of Timorese women in food management. This research was conducted in Binaus Village, Molo Tengah District, South Central Timor Regency, West Nusa Tenggara Province. This research employed qualitative descriptive method from observation and interview. Timorese entitlement receives rights and responsibilities related to food management. They will arrange all streams of incoming and outgoing food. The conclusion of this research is that Timorese women have full control over family food management.

Abstract

Abstract: Obesity is a world health problem caused by abnormalities or diseases by the accumulation of fat tissue in an excessive body. The maximum expiratory velocity of a person can achieve in liters per minute (L / min) or liters per second (L / sec). Body Mass Index (BMI) affects maximum expiratory velocity. A person with BMI 18.5-24.9 (normal category) has low vital pulmonary capacity compare to a person with BMI >25 (obesity category) who has vital lung capacity. Research aim was to determine the relationship between obesity and maximum expiratory velocity among students in SMA Negeri 1 Candiroto Temanggung. The study was conducted on 66 respondents aged 15-18 years. Research measurement for maximum expiratory velocity used spirometer while body mass index used weight divide to height (meters). Result showed there was a positive relationship between body mass index and maximum expiratory velocity. Majority respondents showed body mass index and maximum expiratory velocity results above average. Conclusion was daily routine physical activity affects body mass index and maximum expiratory velocity. Vital capacity of the lungs of obesity people who did daily routine physical activity had better than who did not do daily routine physical activity. Daily routine physical activity takes effect of body mass index, maximum expiratory velocity and keep healthy body.Keywords: body mass index, cardio respiration, physical activity, obesity, maximum expiratory velocity Abstrak: Obesitas merupakan masalah kesehatan dunia disebabkan suatu kelainan atau penyakit ditandaii oleh penimbunan jaringan lemak di tubuh secara berlebihan. PEF adalah kecepatan arus puncak ekspirasi maksimal yang bisa dicapai oleh seseorang, dinyatakan dalam  liter per menit (L/menit) atau liter per detik (L/detik). IMT sangat berpengaruh pada PEF dikarenakan IMT yang >25 kategori obesitas akan memiliki kapasitas vital paru-paru yang sangat rendah dibandingan yang memiliki IMT 18,5-24,9 kategori normal yang memiliki kapasitas vital paru-paru yang besar. Tujuan penelitian ini untuk mengetahui hubungan obesitas terhadap PEF pada siswa di SMA Negeri 1 Candiroto Temanggung. Penelitian dilakukan pada 66 partisipan siswa SMA Negeri 1 Candiroto Temanggung usia 15–18 tahun, hasil dari IMT dengan presentase BB/ TB2 (m) yang hasilnya >25 dan pengukuran PEF dengan spirometer. Peningkatan IMT dengan peningkatan fungsi paru pada pemeriksaan spirometri bahwa IMT menunjukan hubungan yang positif dengan PEF. Hasil grafik dilihat dari beberapa sampel yang IMT dan PEF tinggi diatas rata-rata. Kesimpulannya aktivitas fisik dengan rutin memengaruhi IMT dan PEF dikarenakan hasil kapasitas vital orang obesitas yang rutin melakukan aktivitas fisik akan lebih baik dibandingan yang tidak melakukan aktivitas fisik sama sekali. Rutin melakukan aktivitas fisik berpengaruh pada IMT, PEF dan menjaga tubuh tetap sehat, terjauh dari penyakitKata kunci : Aktivitas fisik, IMT, Kardiorespirasi, Obesitas, PEF.

Abstract

The purpose of this study was to produce butter from canistel fruit and see the carotenoid content. The method used is butter production, sensory analysis, and carotenoid analysis. Butter production is made with 2 different formulations by comparing fruit extracts and whipping cream: mentega-1 (1: 3.5), and mentega-2 (1: 1.5). Sensory testing involving 53 untrained panelists by providing parameters; taste, aroma, color, texture, and overall. The results of the study, canistel fruit can be made into butter with 2 variants. Organoleptic test results, overall the panelists liked control butter, while for the color and aroma of the panelists liked mentega-2. The content of carotenoids in canistel was 278, 24 µg/g, mentega-1 was 95.99 µg / g, and mentega-2 was 112.35 µg/g. Carotenoid content in butter from canistel can be used as intake of vitamin A. It can be concluded that for canistel can be used as butter and contains carotenoids to the needs of vitamin A.

Abstract

The natural climate of Nusa Tenggara Timur (NTT) is dry all the year. However, prior to wet season, the region will suffer from cold weather, particularly in August. Ume kbubu and ume naek, both are traditional houses of Timorese especially for those who come from Mollo. Ume kbubu is used as a kitchen and barn, while ume naek is used for shelter and receiving guests. This paper will explain the functional change of ume kbubu during cold weather. The research took place at Binaus village, Timor Tengah Selatan district in August 2016 using observation to monitor the people’s activity. Measurement of the temperature was conducted for 24 hours. At night the temperature outside might reach 20°C, and 22°C in ume naek, while in ume kbubu, it can reach 35 - 37°C. The low temperature, both outside and in ume naek, causing the residents to replace their activities in the warm ume kbubu. By evening, the people are usually sleeping in ume naek, but in cold weather, they sleep at ume kbubu. The conclusion of this research is there was a functional change of ume kbubu in the community activity during cold weather

Abstract

Personal hygiene behavior is one effort to prevent the occurrence of various diseases due to microorganism from the waste. Children aged 6 - 11 years are still vulnerable awareness about personal hygiene. Factors of knowledge, environment, and family support become the determinants of personal hygiene practices by children. Children living in landfill have a greater risk of health disruption due to an environment that does not support personal hygiene. The purpose of this study was to look at the pattern of personal hygiene of primary school age children living in the TPA Ngronggo, Salatiga. This research is descriptive qualitative. Collecting data by interviewing respondents aged 6 - 11 years and living in landfill. The results obtained, most children do not fully understand and practice personal hygiene in their daily lives. Concluded if the children living in the landfill do not have the knowledge and practice of personal hygiene is good.

Abstract

Indonesia memiliki beragam jenis legum atau kacang-kacangan lokal. Beberapa di antaranya berasal dari Pulau Timor – Provinsi Nusa Tenggara Timur yang kaya akan nilai gizinya, terutama kandungan karbohidrat, lemak dan protein. Namun biasanya oleh masyarakat lokal hanya diolah dan dikonsumsi bersama jagung bose, yang di mana dalam proses pemasakannya yang sangat lama bisa saja merusak dan menurunkan nilai gizi dari legum tersebut. Pemanfaatan legume lokal dari Pulau Timor untuk pembuatan food bar dikarenakan food bar merupakan produk siap makan yang praktis, mudah dibuat, bernutrisi tinggi, bisa diolah dari bahan pangan apa saja, dan memiliki daya simpan yang lama. Penelitian ini bertujuan untuk memanfaatkan legum dari Pulau Timor NTT dalam pembuatan food bar dan menganalisis kandungan nutrisinya serta melihat tingkat penerimaannya. Pembuatan food bar dilakukan dengan 2 perlakuan yaitu P1 (sampel kacang ditepungkan), dan P2 (sampel kacang ditanak hingga lunak). Analisis meliputi analisis proksimat, dan analisis organoleptik. Sampel food bar P1 memiliki kadar air 6,02%, kadar abu 2,13%, protein 12,58%, lemak 27,51%, karbohidrar 51,76%, dan serat kasar 14,02%. Sedangkan sampel food bar P2 memiliki kadar air, 8,12%, kadar abu 2,03%, protein 10,48%, lemak 27,33%, karbohidrat 52,03%, dan serat kasar 12,52%. Hasil uji organoleptik pada kedua jenis perlakuan yang berbeda sampel food bar P1 dan P2 memperoleh penilaian skala hedonik rata-rata untuk atribut rasa, tekstur, dan aroma dari skala 3 – 4 (cukup suka – suka) dari panelis umum (masyarakat umum) maupun panelis khusus (masyarakat asli NTT).

Abstract

Sengkawang adalah buah yang memiliki nama ilmiah (Shorea sumatrana) atau meranti yang mengandung lemak nabati yang bermanfaat bagi tubuh dan dapat diaplikasikan menjadi penyedap nasi, obat, coklat dan lem. Dalam biji Sengkawang terdapat senyawa golongan asam lemak dengan berbagai manfaat untuk kesehatan, pangan dan kosmetik. Tujuan penelitian ini adalah menganalisis komponen dan manfaat senyawa bioaktif pada minyak Sengkawang. Metode yang digunakan adalah mengekstrak minyak dengan pelarut hexana dan analisis metode GC-MS. Penelitian dilakukan di laboratorium Biokimia Fakultas Biologi UKSW dan laboratorium Terpadu Universitas Diponegoro pada bulan Januari-Maret 2019. Terdapat 20 senyawa bioaktif yang berhasil diidentifikasi dari minyak Sengkawang yang bermanfaat dibidang pangan, farmasi, gizi dan kosemetik. Berdasarkan 20 senyawa bioaktif yang dianalisis minyak Sengkawang mengandung senyawa golongan asam lemak essensial yang bermanfaat diantaranya antioksidan, anti kanker, anti inflamasi dan anti jamur.

Abstract

Kemangi imbu atau sengkubak ((Pycnarrhena cauliflora) dimanfaatkan sebagai penyedap alami. Tumbuhan ini bisa dijadikan sebagai alternatif penggunaan MSG. Selain sebagai penyedap masakan, kemangi imbo juga memiliki senyawa bioaktif yang berpotensi dimanfaatkan dalam bidang farmasi, kosmetika dan pangan. Tujuan penelitian ini adalah untuk mengetahui senyawa bioaktif yang terdapat dalam kemangi imbo. Metode yang digunakan adalah ekstraksi senyawa biokatif dengan menggunakan etanol dan dilakukan pemurnian dengan rotary vacuum evaporator dan selanjutnya dianalisis dengan GC-MS. Hasil analisis menunjukan terdapat 15 jenis senyawa bioaktif yang berperan sebagai antioksidan, anti kanker, anti jerawat, anti bakteri/biotik, insektisda alami, dan perisa alami.

Abstract

Canistel fruit (Pouteria campechiana) is one of the plants that originates from Central America. In Indonesia, canistel is rarely found and not utilized optimally. Canistel contains very high carotenoids which can be used as food coloring and vitamin A supplements. Butter from canistel is an effort to increase the nutritional and economic value of this fruit. Objectives; the purpose of this study was to use the canistel into butter and see the acceptance of the researchers. Method; the study was conducted in September 2018, at the Food Technology Food Process Laboratory, Faculty of Medicine and Health Sciences, Satya Wacana Christian University. This study uses laboratory experimental methods with various prescription formulations. Results; organoleptic test results obtained differences in color, aroma, taste, texture and overall from 3 variants butter. Butter from canistel showed a positive trend toward the acceptance of panelists. This product has good potential in the utilization of canistel into butter. Conclution; utilization of canistel in the development of food products can be used as a food diversification that is rich in nutrients as well as a good impact to help nutritional intake, especially of vitamin A.
