Abstract

Anemia is a condition characterized by a low number of red blood cells or reduced hemoglobin (Hb) levels in the blood. In adolescent girls, normal hemoglobin levels range from 11–15 g/dL. One factor contributing to anemia is a monotonous and less diverse diet, which may result in inadequate nutrient intake and hinder hemoglobin synthesis. Developing healthy snacks rich in iron, vitamin C, and potassium may support anemia prevention. This study used a descriptive observational design based on laboratory analysis. Sample testing was conducted in duplicate to improve accuracy and reliability. Data on vitamin C, potassium, and iron content were analyzed descriptively using mean and standard deviation. The results showed iron content of 11.435 mg/100 g (F1), 14.450 mg/100 g (F2), and 17.450 mg/100 g (F3). Potassium content was 6.685 mg/100 g, 8.625 mg/100 g, and 8.910 mg/100 g, while vitamin C content was 7.760 mg/100 g, 5.350 mg/100 g, and 3.155 mg/100 g, respectively. The product has potential as a healthy snack for anemia prevention; however, further studies on shelf life, nutrient stability, microbiological safety, and sensory quality are needed.
