This study aims to improve critical thinking skills and student learning outcomes of class X Agribusiness Vocational High School (SMK) Agricultural Product Processing in learning Vegetable Agricultural Product Processing through the application of the Problem-Based Learning (PBL) model. This research is classroom action research. The research subjects were students of class X APHP skill competency. Collecting data using the observation method with a checklist instrument and performance test. The data obtained were analyzed descriptively. The results of the study show as follows: (a) the application of the PBL model in the learning of Vegetable Agricultural Products Processing material can improve students' critical thinking skills in learning by 24.2%, (b) critical thinking skills after the application of PBL, namely students with very high thinking skills category. high as many as 20 students (69%), high category as many as 7 students (24.2%), low category as many as 2 students (6.9%) and very high category as many as 0 students (0%), (c) application of PBL can improve student learning outcomes 31.03%, and (d) student learning outcomes by the application of PBL the number of students who achieve KKM as many as 29 students (100%). ABSTRAK Penelitian ini bertujuan untuk meningkatkan keterampilan berpikir kritis dan hasil belajar siswa Sekolah Menengah Kejuruan (SMK) kelas X Agribisnis Pengolahan Hasil Pertanian dalam pembelajaran Pengolahan Hasil Pertanian Nabati melalui penerapan model Problem-Based Learning (PBL). Penelitian ini adalah penelitian tindakan kelas. Subjek penelitian adalah siswa kelas X kompetensi keahlian APHP. Pengumpulan data menggunakan metode observasi dengan instrumen checklist dan tes unjuk kerja. Data yang diperoleh dianalisis secara deskriptif. Hasil penelitian menunjukkan sebagai berikut: (a) penerapan model PBL dalam pembelajaran materi Pengolahan Hasil Pertanian Nabati dapat meningkatkan keterampilan berpikir kritis siswa dalam pembelajaran yaitu sebesar 24,2%, (b) Keterampilan berpikir kritis siswa setelah penerapan PBL yaitu siswa dengan kategori keterampilan berpikir kritis sangat tinggi sebanyak 20 siswa (69%), kategori tinggi sebanyak 7 siswa (24,2%), kategori rendah sebanyak 2 siswa (6,9%) dan kategori sangat rendah yaitu sebanyak 0 siswa (0%), (c) penerapan PBL dapat meningkatkan hasil belajar siswa sebesar 31,03%, dan (d) Hasil belajar siswa setelah penerapan PBL yakni jumlah siswa yang mencapai KKM sebanyak 29 siswa (100%).
