This study aims to determine the effect of temperature and roasting time on the quality of salak (Salacca zalacca seeds) in making Salak seed powder drink. This study used a completely randomized design (CRD) factorial pattern with several temperature treatments 100°C, 125°C, and 150°C and time variations of 5 minutes, 10 minutes, and 15 minutes with a combination of 9 treatments and in triplicates giving the total treatment of 27.The data were analyzed using Analysis of Variety (ANOVA) continued with the Duncan test The results showed that roasting temperature and roasting time had a significant effect on moisture content, ash content, protein content, carbohydrate content, and organoleptic characteristics (color, aroma, taste) of salak seed powder. The roasting time of 15 minutes at 150°C is the best treatment for obtaining the best moisture content, carbohydrate content, and organoleptic characteristics (color, aroma, taste) of salak seed powder, while the most protein content and ash content are found in roasting time of 5 minutes at 100°C.Penelitian ini bertujuan untuk mengetahui pengaruh suhu dan lama penyangraian terhadap mutu biji salak (Salacca zalacca) dalam pembuatan minuman bubuk biji salak. Penelitian ini menggunakan rancangan acak lengkap (RAL) pola faktorial dimana terdapat beberapa perlakuan suhu yakni 100°C, 125°C, dan 150°C serta variasi waktu yakni 5 menit, 10 menit, dan 15 menit dengan kombinasi perlakuan sebanyak 9 buah dengan masing-masing pengulangan 3 kali sehingga total perlakuan adalah 27 buah. Data hasil pengamatan dianalisa menggunakan analisa sidik ragam (ANOVA) dan dilanjutkan dengan uji duncan. Hasil penelitian menunjukkan suhu dan lama penyangraian berpengaruh sangat nyata terhadap kadar air, kadar abu, kadar protein, kadar karbohidrat, dan organoleptik (warna, aroma, rasa) bubuk biji salak. Perlakuan lama penyangraian 15 menit dan suhu 150°C adalah perlakuan terbaik terhadap nilai kadar air, kadar karbohidrat, serta nilai organoleptik bubuk biji salak, sedangkan untuk kandungan protein dan kadar abu terbanyak terdapat pada lama penyangraian 5 menit suhu 100°C.
