Pemberdayaan Pedagang Makanan dalam Upaya Pencegahan Foodborne Dissease di Pasar Wisata Kuliner Payangan

Abstract

Abstrak Permasalahan tentang hygiene dan sanitasi makanan selalu menjadi permasalahan kesehatan tertinggi bagi wisatawan. Salah satu permasalahan kesehatan yang menjadi kasus tertinggi pada klinik wisata adalah food borne disease yaitu diare. Pasar Payangan merupakan tempat umum di Kecamatan Payangan yang ramai dikunjungi wisatawan baik domestik maupun mancanegara. Berdasarkan hasil wawancara dengan beberapa klinik 24 jam di daerah tersebut, didapatkan data bahwa kasus yang paling sering ditangani adalah penyakit diare yang terjadi setelah menyantap makanan lokal. Berdasarkan hasil diskusi bersama pedagang, pedagang tidak mengetahui bahwa ada kecenderungan wisatawan mengalami diare setelah menyantap makanan yang dijual di Pasar Payangan. Pedagang mengatakan bahwa belum pernah lagi dilakukan penyuluhan tentang kebersihan makanan di Pasar dan penting untuk dilakukan edukasi kepada para pedagang kuliner tentang pengelolaan makanan yang baik dan penyakit yang bisa ditimbulkan. Intervensi dilakukan dengan memanfaatkan kelompok pedagang makanan sebagai tenaga promosi dan edukatif tentang hygiene dan sanitasi makanan. Kegiatan dilakukan melalui metode penyuluhan dan diskusi dua arah yang diawali dengan pre test dan diakhiri dengan post test. Kegiatan dilakukan untuk mengukur seberapa besar pengaruh program yang dijalankan terhadap pengetahuan, sikap dan perilaku mereka tentang sanitasi makanan. Kegiatan juga diawali dengan pre test dan diakhiri dengan post test. Pelatihan diikuti oleh 22 pedagang dengan rentang usia 30-60 tahun. Didapatkan hasil bahwa lebih dari 80% pedagang mengalami peningkatan pengetahuan tentang sanitasi dan proses pengelolaan makanan. Kegiatan ini diharapkan dapat dilakukan secara berkelanjutan untuk menurunkan prevalensi kejadian penyakita bersumber dari makanan kepada wisatawan yang berkunjung ke Pasar Payangan. Kata kunci: Pasar Payangan, sanitasi, diare Abstract [Empowering Food Traders to Prevent Foodbore Dissease at Payangan Culinary Tourism Market] Issues regarding food hygiene and sanitation have always been the highest health problem for tourists. One of the health problems is food borne dissease, namely diarrhea. Payangan market is a public place in Payangan district which is busy with tourists, both domestic and foreign. Based on interviews with several 24-hour clinics in the area, data was obtained that the most frequently treated cases were diarrheal disseases that occured after eating local food. Based on the results of discussions with traders, they did not know that there was a tendency for tourist to experience diarrhea after eating food sold at Payangan Market. Traiders said that there had never been any education about food hygiene in the market and it was important to educate culinary traders about good food management and the dissease that could be caused. The intervention was carried out by utilizing groups of food traders as promotional and educational personnel about food hygiene and sanitation. Activaties are carried out through a two-way counseling and discussion methode that begins with a pre-test and ends with post test. Activities were carried out to measure how much influence the program had on their knowledge. The training was attended by 22 traders with an age range of 30-60 years. The resutl showed that more than 80% of traders experienced increased knowledge about sanitation and food management processes. It is hoped that this activity can be carried out in asustainable manner to reduce the prevalence of food-borne illness among tourists visiting Payangan Market.
