Dental caries is a major problem of dental and oral health. One of the bacteria that causes dental caries is Streptococcus mutans. Water hyacinth leaves contain flavonoids, tannins, alkaloids, and terpenoids that can be used as antibacterials. Objective for identifying the antibacterial activity of water hyacinth leaf extract (Eichhornia crassipes) against Streptococcus mutans bacteria. Type of research used True Experimental with a Posttest-only Control Group. Antibacterial activity using well-diffusion method and determination of MIC and MBC using liquid dilution method analyzed non-parametric statistics Kruskal-Wallis and Mann Whitney. Results from this water hyacinth leaves contain secondary metabolites, namely flavonoids, tannins, alkaloids and terpenoids. The antibacterial activity test of water hyacinth leaf extract has an inhibition zone diameter of 15.41 mm. The MIC value at a concentration of 50% and does not have a MBC. Research results show that hyacinth extract is bacteriostatic against Streptococcus mutans bacteria that cause tooth decay.
