ABSTRAK Keandalan mesin espresso Mastrena di Starbucks Rest Area KM 754 Sidoarjo sangat memengaruhi kelancaran pelayanan karena mesin ini beroperasi hampir 20 jam setiap hari dan menangani seluruh proses pembuatan minuman berbasis espresso. Intensitas kerja tersebut membuat mesin rentan mengalami kerusakan. Selama Januari 2024–Juli 2025 tercatat 38 kejadian downtime dengan total 149 jam dan biaya perawatan sebesar Rp87.900.000. Analisis pola kerusakan, FMEA, dan prinsip RCM digunakan untuk mengenali komponen yang paling sering bermasalah. Data penjualan harian ikut dianalisis untuk menentukan waktu perawatan yang tidak mengganggu aktivitas operasional. Hasilnya menunjukkan bahwa pelaksanaan preventive maintenance pada hari Selasa dan Rabu dengan tingkat transaksi terendah, mampu menekan risiko kerusakan berulang dan memberikan potensi penghematan 10–15% dari total biaya perawatan tahunan. Temuan ini memberikan dasar bagi penerapan sistem perawatan yang lebih terencana, stabil, dan mendukung keberlanjutan operasional gerai. ABSTRACT The reliability of the Mastrena espresso machine at Starbucks Rest Area KM 754 Sidoarjo plays an essential role in maintaining smooth store operations, as the machine runs for nearly 20 hours a day and supports all espresso-based beverage production. This high workload makes the machine prone to failures. Between January 2024 and July 2025, there were 38 recorded downtime incidents totaling 149 hours, with maintenance costs reaching Rp87,900,000. Failure patterns, FMEA, and RCM principles were applied to identify the components most susceptible to malfunction. Daily sales data were also reviewed to select maintenance days that minimally affect operations. The results indicate that preventive maintenance carried out on Tuesdays and Wednesdays—days with the lowest transaction volume, can reduce recurring failures and provide potential savings of 10-15% in annual maintenance costs. These findings support the adoption of a more structured and stable maintenance system that enhances the store’s long-term operational sustainability.
