This study evaluated the antibacterial, antioxidant, and anticancer activities of aqueous ginger extract (Zingiber officinale) obtained from Mempawah Regency. The extraction process was carried out by boiling ginger in distilled water until a concentrated paste was obtained. From 2 kg of raw material, the extraction yielded 197 g of extract (9.85%), which was subsequently used for further bioactivity testing. Antibacterial activity was assessed against Escherichia coli (E. coli) using the disc diffusion method, resulting in an average inhibition zone of 4.17 ± 0.29 mm. Antioxidant activity was determined using the Ferric Reducing Antioxidant Power (FRAP) method, showing a value of 33.74 mg Ascorbic Acid Equivalent per gram of extract (mg AAE/g). Meanwhile, anticancer testing against MCF-7 cells yielded an IC₅₀ value of 4,654 µg/mL.
