Abstract

Stunting remains a major public health concern in Indonesia and is associated with inadequate nutritional intake, particularly animal protein and micronutrients. Kelurahan Kwala Bingai, Stabat District, Langkat Regency, North Sumatra, has local food resources, namely Indian mackerel (Rastrelliger sp.) and moringa leaves (Moringa oleifera), which have not been optimally utilized as nutritious food products. This community service activity aimed to improve the knowledge and practical skills of members of the Family Welfare Empowerment group in utilizing local food resources to produce Indian mackerel and moringa leaf sticks as an alternative nutritious snack for toddlers. The activity was conducted on July 1, 2026, involving 30 participants. The method used was Participatory Learning and Action, combined with nutrition education, product-making demonstrations, hands-on practice, packaging and labeling activities, and evaluation through pre-test and post-test questionnaires. The results showed that the participants’ average knowledge score increased from 13.07 before the activity to 18.90 after the activity, representing an absolute increase of 5.83 points or a relative increase of 44.6%. During the practical session, participants were able to follow the main stages of product preparation, including ingredient preparation, dough making, stick formation, frying, and packaging. The activity also produced packaged Indian mackerel and moringa leaf stick products. These findings indicate that the integration of nutrition education and practical training using locally available food resources can improve participants’ knowledge and skills in food processing for toddler nutrition.
