Temperature and pH are critical factors in the coffee fermentation process, necessitating a bioreactor for precise control. Existing bioreactors struggle with temperature regulation, prompting the need for an improved design. This study develops a bioreactor with a 50 kg/batch capacity, featuring a water jacket for temperature control and a stirrer for uniform fermentation. Designed using Autodesk Inventor Professional 2022, the bioreactor is constructed from stainless steel 304, with a 21.78-liter water jacket. Finite Element Analysis (FEA) simulations confirm structural integrity, showing maximum stress values below material yield strength, minimal displacement, and a safety factor of 15. The bioreactor ensures safe operation, with stress levels within acceptable limits and displacements in the elastic range. This design offers enhanced temperature control and uniform fermentation, addressing key challenges in coffee processing.
