This activity aims to describe community economic empowerment through the innovation of processing chayote into shredded chayote (abon) as a flagship product of Sempajaya Village, Karo Regency. A descriptive qualitative method was employed by outlining empowerment stages, identification of local potential, product innovation development, community participation, and business development opportunities. The results show that chayote can be diversified into shredded chayote with greater added value than its conventional use as a daily food ingredient. The empowerment process provided the community with experience in processing local resources, enhancing creativity, and recognizing economic opportunities from product development. Shredded chayote also has further development potential through improvements in quality, flavor variations, packaging design, brand identity, and marketing, including digital media utilization. Sustainable development can strengthen local potential, create business opportunities, increase the economic value of chayote, and support the establishment of a distinctive village flagship product while fostering more sustainable community economic activities.
