The 2023 Indonesian Health Survey (SKI) explained that malnutrition in pregnant women remains a significant challenge, with 27.7% of pregnant women experiencing anemia and 16.9% at risk of chronic energy deficiency (CED). Against this backdrop, this study aims to develop local potential, namely beetroot and snakehead fish, as functional foods high in protein and iron. This experimental study used a Completely Randomized Design (CRD) with two treatments and two replications. The treatments included the use of fresh snakehead fish and fresh beetroot in the preparation of enteral and special diets in varying amounts, with the addition of fresh soybeans and orange juice. This study included tests for viscosity, osmolality, flowability, water content, and pH, as well as organoleptic testing. The results showed significant differences (p<0.05) in viscosity, osmolality, flowability, and pH, as well as organoleptic testing for three formulas: F1, F2, and F0 as a control. Meanwhile, in the water content test, there was no significant difference (p>0.05) between the three formulas. The organoleptic test found that panelists generally preferred Formula F1.
