Penentuan Isolat Bakteri Asidogenik yang Mampu Menghasilkan Total Asam Tertinggi dari Limbah Cair Tahu Andriani Sukma Witari; Irnia Nurika

Abstrak Penelitian ini bertujuan untuk mendapatkan bakteri asidogenik yang mampu memproduksi total asam tertinggi dari limbah cair tahu. Uji kemampuan asidogenik meggunakan Rancangan Acak Kelompok pola faktorial dengan menggunakan dua perlakuan yaitu persentase inokulum (5%, 10%, dan 15%) dan lama waktu inkubasi (24 jam, 48 jam, dan 72 jam). Parameter yang diukur meliputi kadar total asam tertitrasi, pH, kadar gula reduksi, dan total bakteri asidogenik. Hasil penelitian menunjukkan karakterisasi morfologi koloni isolat terpilih (isolat 1031) berwarna putih tulang, berbentuk bulat, permukaan timbul, dan tepiannnya rata dan karakterisasi morfologi sel isolat 1031 adalah Gram negatif dan berbentuk batang. Berdasarkan hasil karakterisasi biokimia, isolat 1031 memiliki probabilitas kedekatan dengan Hafnia alvei biogp 1 sebesar 94,53%. Persentase inokulum dan lama waktu inkubasi berpengaruh terhadap produksi total asam tertitrasi. Perlakuan terbaik adalah kombinasi perlakuan A3B1 (persentase inokulum 15% dan waktu inkubasi 24 jam), dengan nilai total asam tertitrasi 2,70%, nilai pH 6,33, kadar gula reduksi 0,07%, dan jumlah populasi bakteri asidogenik 1,1 x 108 CFU/ml.Kata kunci: asidogenesis, bakteri asidogenik, limbah cair tahu, dan total asam teritrasiAbstract This research had an objective to find an acidogenic bacteria which was able to produce the highest organic acid from tofu wastewater. Test of acidogenic capabilty used Randomized Block Design arranged in factorial by using two treatments, inoculum percentage (5%, 10%, and 15%) and incubation time (24 hours, 48 hours, and 72 hours). Parameters measured were production of titration acidity total, pH, degree of sugar reduction, and acidogenic bacteria total. Result showed identification of colony morphology of selected isolate (isolat 1031) were bone-white, round shape, raised surface (elevation), flat edge and cell morphology were Gram-negative bacillusshaped. Based on the biochemical identification showed isolate 1031 was Hafnia alvei biogp 1 with a probability value of 94.53%. Inoculum percentage and incubation time had significant effect in production of titration acidity total. The best treatment combination was A3B1 (inoculum percentage of 15% and incubation time in 24 hours). A3B1 treatment produced titration acidity total 2,70%, pH 6,33, degree of sugar reduction 0,07%, and acidogenic bacteria total 1,1x108 CFU/ml.Keywords: acidogenesis, acidogenic bacteria, titration acidity total, and tofu wastewater

Abstrak Salah satu industri olahan apel di Kota Batu yang berkembang saat ini adalah CV Segar Buah Hutama yang memproduksi minuman sari buah apel “Dewata” dengan kondisi persaingan yang cukup ketat dengan berbagai merek dan harga jual. Tujuan penelitian ini adalah menganalisis faktor internal dan eksternal CV Segar Buah Hutama, merumuskan alternatif strategi pemasaran, serta memformulasikan prioritas strategi pemasaran minuman sari apel “Dewata”. Metode analisa menggunakan pendekatan QSPM (Quantitative Strategic Planning Matrix). Hasil penelitian menunjukkan pada Matriks IFE bahwa CV Segar Buah Hutama belum memiliki kekuatan yang cukup untuk mengatasi kelemahan. Matriks EFE menunjukkan bahwa perusahaan belum efektif mengambil keuntungan dari peluang dan meminimalkan efek dari ancaman dalam industri minuman sari apel. Hasil Matriks IE menunjukkan kondisi Growth and Stability. Formulasi strategi yang diterapkan oleh CV Segar Buah Hutama adalah market penetration and product development strategy. Prioritas alternatif strategi pemasaran minuman sari apel “Dewata” yaitu (1) Mendorong promosi aktif dari mulut ke mulut terhadap konsumen dan distributor dengan membuktikan kualitas minuman sari apel “Dewata”, (2) Meningkatkan daya saing melalui kualitas produk dan pelayanan perusahaan, dan (3) Mengoptimalkan bahan baku serta minimasi biaya produksi.Kata kunci: sari apel, pemasaran, strategi, SWOT, QSPMAbstract One of apple processing industry development in Kota Batu is CV Segar Buah Hutama which produces “Dewata” apple beverages with high comptitivenss arising among many brands and lower selling prices.The goals of this research are to analyse the internal and external factor of CV Segar Buah Hutama, formulating alternative marketing strategy, as well as priorities of “Dewata” apple beverages marketing strategies. The method of analysis is Quantitative Strategic Planning Matrix. The results showed that IFE Matrix indicates the inability of CV Segar Buah Hutama to overcome weakness. EFE Matrix indicates the company’s infectivity to take advantage of opportunities and minimize the effect of the threat in this industry. Based on the IE Matrix, CV Segar Buah Hutama is at the stage of Growth and Stability. Formulation of the strategy should be applied is the market penetration and product development strategy. The priority of alternative marketing strategies of “Dewata” apple beverages includes increasing the word of mouth marketing to consumer and distributor with prove the quality of “Dewata” apple beverages, increase the competitiveness through product’s quality and the consumer services, as well as optimizing raw materials and minimizing production cost.Keywords: apple beverage, marketing, strategy, SWOT, QSPM

Abstrak Salah satu jenis serat alam yang potensial adalah serat daun nanas. Terkait dengan isu lingkungan, perkembangan penggunaan pewarna alami sebagai pewarna tekstil belakangan ini semakin meningkat. Tujuan dari penelitian ini yaitu mengetahui kekuatan daya sobek kain tenun yang dihasilkan, mengetahui pengaruh aplikasi jenis pewarna dan kombinasi jenis serat terhadap intensitas warna kain, dan mengetahui pengaruh aplikasi jenis pewarna dan kombinasi jenis serat terhadap ketahanan luntur kain. Metode yang digunakan yaitu RAK dengan 2 faktor. Hasil penelitian menunjukkan bahwa pengujian kekuatan daya sobek kain menunjukkan bahwa kain yang terbuat dari 50% serat daun nanas : 50% katun memiliki kekuatan daya sobek lebih tinggi dengan nilai rerata 1306,67 gram arah pakan dan 1381,33 gram arah lusi. Perlakuan terbaik berdasarkan intensitas warna yang dipilih yaitu pada perlakuan proporsi jenis benang 100% katun dengan jenis pewarna kunyit dengan nilai 0,198 berdasarkan perhitungan Multiple Attribute. Perlakuan terbaik berdasarkan ketahanan luntur warna yang dipilih yaitu pada perlakuan proporsi jenis benang 50% serat daun nanas : 50% katun dengan jenis pewarna alpukat dengan nilai rerata 3,3 pada uji ketahanan gosokan kering, 7,2 pada uji ketahanan gosokan basah, 1,3 pada uji ketahanan pencucian (Stainning Scale), dan 1,4 pada uji ketahanan pencucian (Grey Scale).Kata kunci: kain, katun, pewarna daun alpukat, pewarna kunyitAbstract One type of potential natural fibers are pineapple leaf fiber. As environmental issues, the use of natural dyes for coloring textiles lately increasing. The purposes of this research is to determine the strength of the resulting woven fabric torn, knowing the effect of the application of the dyes and the combination of the type of fiber to the intensity of the color of fabric, and determine the influence of the type of application and combination dye fastness types of fiber to fabric. This method used RCBD (Randomized Complete Block Design) with 2 factors. The results showed that fabric with proportion of 50% pineapple leaf yarn: 50% cotton had higher value of tensile strength. The average value were 1306.67 gram and 1381.33 gram from “Pakan” direction and “Lusi” direction. The best treatment based on color intensity selected, namely was proportion of 100% cotton yarn with type of dye turmeric with a value of 0.198 based on Multiple Attribute calculation. The best treatment based on the selected color fastness proportion of 50% yarn pineapple leaf fiber: 50% cotton with type of dye avocado leaf with a mean value of 3.3 on a dry rub resistance test, 7.2 in the wet rub resistance test , 1.3 on endurance test laundering (Stainning Scale), and 1.4 on the endurance test laundering (Grey Scale).Keywords: avocado leaf color, cotton, fabric, turmeric color

Analisis Postur Kerja pada Stasiun Pemanenan Tebu dengan Metode OWAS dan REBA, Studi Kasus di PG Kebon Agung, Malang Reza Fatimah Nur; Endah Rahayu Lestari; Siti Asmaul Mustaniroh

Abstrak Tenaga kerja yang melakukan pekerjaan secara manual beresiko mengalami gangguan muskuloskeletal, yaitu cedera pada bagian otot, urat syaraf, urat daging, tulang, persendian tulang, tulang rawan yang disebabkan oleh aktivitas kerja. Tujuan penelitian ini adalah untuk membandingkan tingkat risiko musculoskeletal disorders (MSDs) atau gangguan muskuloskeletal akibat postur kerja pada saat pemanenan tebu berdasarkan metode OWAS dan REBA. Pengolahan data dilakukan dengan software WinOwas dan ErgoFellow. Hasil pengolahan data menunjukan bahwa masing-masing elemen aktivitas memanen tebu, hampir seluruh elemen kegiatan memiliki tingkat risiko yang tinggi dan sangat berbahaya bagi sistem muskuloskeletal. Hasil pada OWAS menunjukkan sebanyak 87,5% kegiatan termasuk ke dalam kategori sangat berbahaya dan perlu perbaikan saat ini, serta 12,5% termasuk kategori tidak berbahaya dan tidak perlu perbaikan, sedangkan pada REBA menunjukkan 62,5% kegiatan memiliki tingkat risiko sangat tinggi dan perlu perbaikan saat ini, 25% kegiatan dengan tingkat risiko tinggi dan perlu perbaikan segera, serta 12,5% dengan tingkat risiko rendah dan diperlukan perbaikan di masa mendatang.Kata kunci: OWAS, postur kerja, REBA, stasiun pemanenan tebuAbstract Labors that do work manually was risky of suffering a musculoskeletal disorders that is an injury to the muscular parts, nerves, bone, joints, cartilage. The purpose of this study is to compare the level of risk musculoskeletal disorders (MSDs) due to posture work at the time of the harvesting cane based on a methods OWAS and REBA. Data was performe by software WinOwas and ErgoFellow. The result of the processing data showed that all element of the activity of harvesting cane have a highly risk and dangerous for the musculosketal. Owas method show that 87.5% of activities was catogarized as highly dangerous and need a repair right now, and 12.5%activities was categorized as not dangerous and no to require improvement or repair method. Reba method showed that 62.5% activity has a very high risk and need a repair at the moment, and 25% activity has a high risk and to require improvement or repair immediately, and 12.5% has a low risk and necessary repair in the future.Keywords: OWAS, working posture, REBA, harvesting sugarcane station

Abstrak Tujuan penelitian adalah untuk mengembangkan strategi pemasaran yang dapat diterapkan bagi Restoran Waroeng Steak & Shake (WS) Cabang Soekarno-Hatta Malang. Dengan menggunakan matriks SWOT dan Quantitative Strategic Planning Matrix (QSPM), alternatif strategi yang didapatkan yaitu mempertahankan citra atau image perusahaan, fasilitas restoran, mempertahankan kualitas dan pelayanan produk untuk menarik konsumen, meningkatkan kemampuan manajemen dan kerjasama untuk tujuan perusahaan, memberikan layanan delivery order untuk konsumen, memanfaatkan kemajuan teknologi untuk pemasaran, melayani pangsa pasar menengah ke bawah dengan menyediakan paket atau porsi khusus, dan menjaga hubungan baik dengan pemasok atau wilayah sekitar restoran. Strategi pemasaran prioritas yang disarankan adalah mempertahankan citra perusahaan.Kata kunci: matriks EFE, matriks IFE, pemasaran, SWOT, QSPMAbstract The purpose of research was to develop a marketing strategy that can be applied to Waroeng Steak & Shake (WS) Restaurant Branch Soekarno-Hatta Malang. By using SWOT Matrix and Quantitative Strategic Planning Matrix (QSPM), strategies alternative obtained were maintain the image of the company, the restaurant facility, sustaining services and products quality to attract customers, improve management capabilities and cooperation for company’s goal achievement, providing delivery order service for the consumer, utilizing technological advances for marketing activities, serving middle-market share by providing special package or portion, and maintaining good relationships with suppliers and the restaurant neighbourhood. Pemanfaatan Pati Ganyong Sebagai Bahan Baku Edible coating dan Aplikasinya pada Penyimpanan Buah Apel Anna (Malus sylvestris) (Kajian Konsentrasi Pati Ganyong dan Gliserol) Destry Anggarini; Nur Hidayat; Arie Febriyanto Mulyadi

Abstrak Tujuan penelitian ini adalah untuk mendapatkan kombinasi terbaik dari konsentrasi pati ganyong dan gliserol pada pembuatan edible coating dan untuk mengetahui pengaruh penerapan edible coating terbaik terhadap kualitas buah apel. Penelitian ini menggunakan Rancangan Acak Kelompok (RAK) dengan 2 faktor. Faktor 1 yaitu konsentrasi pati ganyong 1%, 1,5% dan 2% (b/v) dan faktor 2 yaitu konsentrasi gliserol 4%, 5% dan 6% (v/v). Setiap perlakuan diulang 3 kali. Apabila hasil analisis ragam menunjukkan tidak ada interaksi antar faktor perlakuan, maka dilanjutkan dengan uji BNT 5%, apabila ada interaksi, maka dilanjutkan dengan uji DMRT 5%. Pemilihan perlakuan terbaik menggunakan Multiple Attribute. Hasil penelitian menunjukkan formula edible coating terbaik yaitu pada konsentrasi pati ganyong 1% dan gliserol 6% dengan pH sebesar 6.98 dan viskositas sebesar 186.3 cP. Pada apel coated menunjukkan nilai susut bobot sebesar 3,99%, nilai TPT sebesar 15,8°Brix dan nilai kekerasan sebesar 3,63 Kg/cm2. Hasil uji organoleptik menunjukkan panelis memberikan penilaian yang lebih tinggi pada apel coated yaitu nilai tekstur sebesar 4,3; warna sebesar 4,3 dan aroma sebesar 3,9.Kata kunci: apel, edible coating, gliserol, pati ganyongAbstract The purpose of this research was to attain the best combination from canna edulis starch (Pati Ganyong) and glycerol from the process of edible coating, and to identify its effect on the quality of the apples. This research applies randomized block design within 2 factors that were 1%, 1,5% and 2% (w/v) of canna edulis starch concentrate and 4%, 5% and 6% (v/v) of glycerol concentrate. Each process was repeated 3 times. If the result of variance analysis did not show any interaction between each treatment factor, then 5% LSD test will be applied, if the interaction appears, then the research will be continued by applying the 5% DMRT test. Multiple Attribute was used to select the best treatment act. The result of this research showed that the formula of the best edible coating is in the 1% of canna edulis starch concentrate, and 6% of glycerol with 6.98 amount of pH and 186.3 cP amount of viscosity. On the coated apple, 3.99% of weight loss and 15.8°Brix total dissolved solids and 3.63Kg/cm2 of hardness. The result of organoleptic test showed that the panelists given the higher score on the coated apple that were, score of texture at 4,3, color at 4,3 and aroma at 3,9.Keywords: apple, canna edulis starch, edible coating , glycerol
