Abstract

Lipid oxidation is a major cause of quality deterioration in processed fish products during storage. Snakehead fish (Channa striata) sausages contain unsaturated fatty acids that are susceptible to oxidative degradation. This laboratory experiment evaluated the effects of packaging and vacuum packaging on lipid oxidation in snakehead fish sausage. This experimental study was conducted between March and August 2025 at the Food Laboratory of the Department of Nutrition and Integrated Laboratory of Politeknik Kesehatan Kemenkes Jayapura, Jayapura, Indonesia. A 2×2 factorial design with two packaging materials (polyethylene [PE] and polypropylene [PP]) and two techniques (vacuum and non-vacuum) was used with seven independent production batches as replications stored at 10 ± 2 °C for 30 days. TBARS were measured on days 0, 5, 10, 15, 20, 25, and 30 and analyzed using two-way ANOVA. The TBARS levels increased progressively in all groups. Vacuum packaging significantly affected TBARS at all observation times (p ≤ 0.003; ηp² = 0.317–0.826). Packaging material had significant effects on days 5, 10, and 30 (p ≤ 0.008), with PP yielding lower values than PE values. No interactions were detected. The lowest TBARS on day 30 was 0.374 mg MDA/kg in the PP + vacuum. In conclusion, storage at 10 ± 2 °C and vacuum sealing were associated with lower TBARS, whereas PP showed lower values on several days. These findings describe secondary lipid oxidation only and do not establish the microbiological or sensory shelf life.

Abstract

Food hygiene and sanitation are essential for ensuring food safety in hospitals, where improper food handling may increase the risk of cross-contamination and foodborne illnesses among vulnerable patients. Visual education, including posters, may improve food handlers’ knowledge, attitudes and practices. This quasi-experimental study employed a one-group pretest–posttest design and was conducted at the Nutrition Unit of Dr. Loekmono Hadi Kudus Regional General Hospital in July 2025. A total sampling technique was used, involving 51 food handlers. Data on knowledge, attitudes, and practices related to food hygiene and sanitation were collected using structured questionnaires, both before and after the intervention. The intervention consisted of direct counseling supported by the distribution of digital posters. Data were analyzed using the paired sample t-test for knowledge and Wilcoxon signed-rank test for attitudes and practices. The mean knowledge, attitude, and practice scores increased from 69.18 to 82.43, 65.16 to 81.37, and 56.25 to 76.40, respectively. All improvements were statistically significant (p < 0.05). In conclusion, poster-assisted education significantly improved food handlers’ knowledge, attitudes and practices regarding food hygiene and sanitation. This strategy may serve as an effective, low-cost intervention for strengthening food safety in hospital nutrition services.

Abstract

Exclusive breastfeeding remains suboptimal, and concerns regarding insufficient milk production may contribute to early breastfeeding discontinuation. Hypnobreastfeeding, oxytocin massage, and katuk leaf (Sauropus androgynus) consumption have been proposed as supportive approaches to lactation, although comparative evidence remains limited. This study aimed to compare the changes in lactation scores among postpartum women receiving these interventions or standard postnatal care. Methods: An exploratory non-randomized quasi-experimental study was conducted at the Independent Midwifery Practice (IMP) Eneng Nurasiah, Bogor, from May to June 2026. Twenty postpartum women were purposively recruited and allocated into four groups (n=5 each): hypnobreasfeeding, oxytocin massage, katuk leaf consumption, and standard postnatal care. The interventions were provided for seven days. Lactation was assessed before and after the intervention using a 12-item checklist. Changes in scores were analyzed using the Kruskal–Wallis test, followed by Holm-adjusted Dunn pairwise comparisons. Results: Lactation score changes differed significantly across groups (H=17.748; p<0.001; ε²=0.92). Significant pairwise differences were observed between hypnobreastfeeding and oxytocin massage (p=0.045), hypnobreastfeeding and standard care (p<0.001), and katuk leaf consumption and standard care (p=0.045). In conclusion, hypnobreastfeeding and katuk leaf consumption showed greater short-term improvements in lactation scores than standard care in selected comparisons. These findings should be interpreted as preliminary because of the small sample size and non-randomized design.

Abstract

Pediatric overweight and obesity are rising globally, including in Indonesia. Mobile health (mHealth) applications using gamification, artificial intelligence (AI)-based personalization, or both have been proposed for this group, but the evidence is unsynthesised and unclear. This study aimed to synthesize their effects on eating behavior and weight-related outcomes and describe engagement. Methods:  The following PRISMA 2020, four databases were searched (January 2016–July 21, 2026) with citation searching. Eligible studies enrolled participants aged 5–19 years, evaluated an mHealth application with gamification and/or AI-based personalization, and reported eating behavior or weight-related outcomes. Screening, extraction, and risk of bias assessment (RoB 2; NIH pre-post tool) were duplicated. The synthesis was narrative. Results: Five studies (four RCTs and one single-arm study; 486 participants) were included. Two interventions used conversational agents only, two used gamification only, and one used both; none was fully integrated. The dietary game increased simulated healthy food choices immediately after play (2.48 vs. 1.10; p<.001; d=1.25). Diet-tracking and gamified lifestyle applications produced no significant dietary changes, and none improved the BMI-SDS or z-score. Engagement metrics were non-comparable and showed a decline. Three RCTs had a high risk of bias. In conclusion, these applications are promising but not yet proven; current evidence is insufficient rather than negative. Adequately powered, registered trials with standardized outcomes and longer follow-ups are needed, including in Indonesia.

Abstract

Several studies have shown that schoolchildren in Indonesia frequently consume foods high in sugar, salt, and fat (SSF), and low physical activity may also contribute to an increased risk of metabolic syndrome from an early age. This study aimed to analyze the association between SSF intake and physical activity and the risk of metabolic syndrome among adolescents in Depok City. A cross-sectional study was conducted among 119 high school adolescents selected purposively. SSF intake was assessed using a Semi-Quantitative Food Frequency Questionnaire (SQ-FFQ), physical activity using a structured questionnaire, and metabolic syndrome risk using the Metabolic Syndrome Risk Score for Adolescents, which has been validated in a similar population. Data were analyzed using univariate, bivariate (chi-square), and multivariate (logistic regression) analyses at a significance level of p < 0.05. Most respondents had low physical activity (68.9%) and excessive sodium (86.6%) and transfat (97.5%) intakes. Physical activity was a significant protective factor against metabolic syndrome risk (p < 0.001; Exp(B) = 0.02), whereas sugar intake showed a tendency toward increased metabolic syndrome risk (p = 0.06; Exp(B) = 7.24). In conclusion, adequate physical activity may play an important role in reducing the risk of metabolic syndrome, whereas excessive sugar intake may increase the risk. Therefore, health promotion and preventive efforts focusing on increasing physical activity and controlling the intake of SSF should be prioritized during adolescence.

Abstract

Malnutrition in toddlers remains a public health concern in Indonesia. East Java reports a relatively high prevalence of wasting (7.2%), while Lumajang Regency recorded a severe wasting prevalence of 6.9% in 2022, exceeding WHO public health thresholds and increasing from the previous year. The 2021 eruption of Mount Semeru disrupted food systems and limited access to health and nutrition services, increasing nutritional risks among affected toddlers. This study evaluated the effectiveness of an emergency nutrition program for toddlers in Lumajang Regency, using the CIPPO model. This evaluative study used a mixed-method approach with an exploratory sequential design. Data were collected through in-depth interviews with seven informants, questionnaires from 44 mothers, and comparisons of the nutritional status of 16 toddlers. Data were analyzed using content analysis and paired-sample t-tests. The context (67%) and process (72%) aspects were moderately effective, whereas the input aspect was very effective (86%). The product aspect was very effective (100%), indicating substantial improvements in maternal knowledge and feeding behaviors. However, no statistically significant changes were observed in the nutritional status of toddlers (p = 0.344). In conclusion, the program improved maternal knowledge and feeding behavior but showed limited measurable impact on the toddlers’ anthropometric status.

Abstract

Caffeinated beverage consumption is common among adolescents and may influence their attention, sleep, and academic functioning. This study aimed to synthesize evidence on the relationship between coffee and caffeine consumption and cognition, attention, sleep, and academic performance among adolescents. This literature review searched PubMed and ScienceDirect for English-language, peer-reviewed articles published from July 2016 through June 2026. Eleven articles were retained: five adolescent studies, one multi-population systematic review used as background evidence, and five young adult studies used as contextual comparators. The findings were synthesized narratively by outcome domain. Results: Acute caffeine administration was associated with dose-dependent improvements in sustained attention. In contrast, habitual or late-day food intake is associated with poor sleep quality or short sleep duration. Young adult studies have shown similar patterns, although their findings are not directly generalizable to adolescents. Evidence directly linking caffeine intake to adolescent academic performance is limited and largely observational. In conclusion, caffeine may provide short-term attentional benefits; however, intake timing and habitual use may compromise sleep, which is an important determinant of adolescent functioning. More rigorous adolescent-specific studies are required.

Abstract

Adolescent nutritional status is a major public health concern because it affects growth and development in this age group. In Indonesia, the prevalence of overweight and obesity among adolescents continues to increase, partly due to the high consumption of sugar-sweetened beverages. Mindful eating and nutrition label literacy may promote healthier consumption behavior. This study examined the associations between mindful eating, nutrition label literacy, and sugar-sweetened beverage consumption with the nutritional status of adolescents. A cross-sectional analytical study was conducted in May 2025 at Public Junior High School 31 in Tangerang City. A total of 160 participants were selected using proportionate stratified random sampling method. Data were collected using the Mindful Eating Questionnaire, Nutrition Label Literacy Questionnaire, Food Frequency Questionnaire, and anthropometric measurements to determine BMI-for-age. Pearson’s and Spearman’s correlation tests were performed. Mindful eating (p < 0.001; r = 0.494) and sugar-sweetened beverage consumption (p < 0.001; r = 0.601) were significantly associated with nutritional status. Nutrition label literacy was also significantly associated with nutritional status, although the correlation was weak (p = 0.049; r = −0.156). In conclusion, higher mindful eating and lower sugar sweetened beverage consumption were associated with better nutritional status in adolescents.

Abstract

Community Health Volunteers (CHVs) play a critical role in supporting stunting reduction programs; however, their performance in Balikpapan City remains suboptimal, as reflected in low family assistance coverage and increasing local stunting trends. This study aimed to analyze the influence of cash incentives, non-cash incentives, motivation, and retention on CHV performance. A cross-sectional study was conducted from March to July 2025, involving 603 CHVs, with 235 respondents selected through purposive sampling. Data were collected using a structured questionnaire that had undergone validity and reliability testing, and the variables were measured based on predefined operational definitions. Data analysis included univariate, bivariate (chi-square), and multivariate (logistic regression) tests. The results showed that retention and marital status were significantly associated with the CHV performance. Respondents with high retention had significantly higher odds of good performance (OR = 8.217; 95% CI: 3.640-18.549; p < 0.001), and marital status also showed a significant effect (OR = 2.629; 95% CI: 1.090-6.342; p = 0.031). In contrast, cash incentives, non-cash incentives, and motivation were not significantly associated with performance in the final model. In conclusion, retention is the most dominant factor influencing CHV performance. Therefore, strengthening CHV performance requires strategies focused on sustaining volunteer engagement and retention, alongside supportive non-financial mechanisms.

Abstract

The growing interest in functional foods has increased attention to stingless bee (kelulut) honey; however, its translation into standardized commercial products remains limited. This narrative review synthesized 25 studies included after screening from searches of PubMed and ScienceDirect conducted on 2 September 2026, covering studies published from January 2015 to August 2026 to evaluate evidence on its bioactive properties, quality determinants, and translational barriers. Current evidence supports the antioxidant and antimicrobial potential of kelulut honey, whereas evidence for antidiabetic, anti-obesity, and wound-healing effects remains largely preclinical. Variability in bee species, botanical origin, post-harvest handling, and analytical methods limits evidence comparability and product standardization. Limitations in the species- and region-specific calibration of existing Indonesian quality criteria, together with the limited validation of authentication methods, may constrain commercialization. Stingless bee honey shows potential as a functional food ingredient, but further validation of quality criteria, authentication methods, processing approaches, and human clinical evidence is needed to support evidence-based commercial translation.
