Abstract

Rice bran has been known to contain bioactive components, namely oryzanol which has some  effects of improving human health, one of these effects is to lower cholesterol content.  The use of rice bran flour as subtitued ingredient on cereal products with 50% rice bran flour, 50% sweet potato flour, 40% tapioca flour, 10% modified starch, 8% sugar, 8% milk powder, 4% cocoa powder, 2,8% salt and 0,5% baking soda composition.  This study was aimed to determine the effect of rice bran flour in cereal product on blood cholesterol levels of rats.  The results showed that cereal product was able to lower LDL cholesterol levels on rat’s blood, each at 57 mg/dl and 10 mg/dl, and increased HDL cholesterol and triglyceride rat’s blood for 24 mg/dl and 107 mg/dl respectively. Abstract

Usage of high chemicals at process of paper and pulp generate much negative impact at environment. To lessen the mentioned used by enzyme of mushroom upon which white rot fungi because owning ability of lignin degradation selectively and only elaborating and cellulose of hemicelluloses in number a few. Result of research indicate that from is fourth of isolate test that is ampas tebu busuk isolate, isolate P. Porigens, isolate V. Volvaceae , Ganoderma sp and Omphilia sp can existing lignin degradable in bags and yield enzyme of laccase. Omphilia sp have potency for the degradable of lignin equal to 72% with degradation of cellulose equal to 0, 5% and yield enzyme activity of laccase equal to 37, 56 units / ml.   Keyword:  bagasse, lignocellulose, biopulping

Abstract

A standard operating procedure (SOP) is a procedure or a sequence of steps which is standardized and must be passed to complete a particular work process (U.S. EPA., 2007). Arranging SOP draft is based on a review of Good Manufacture Practice. SOP is made for a guide line in doing process in an industry. In this research, a drafting SOP of the tofu industry was done by observating and recording every detail of the process. The research was conducted through four steps. Firstly, field observation to observe the process, this includes sanitation, tools specification, and description about step of processing the tofu. The Second step was determining the critical point and optimating the condition. The next step was arranging the SOP draft. The last step was testing of the SOP draft. Then the data were compared and discussed descriptively.  The result showed that the implementation of SOP draft in Tofu Production gave tofu with better characteristic in flavor, aroma, color, compactness, appearance and texture which were prefered than the products made without using reference of the SOP draft. Abstract

The objectives of this research were to find out the physical, chemical, and sensory characteristics of the mixed tomato juice produced and to determine the suitable fruit for tomato mixed juice. The experiment was arranged in a  completely randomized block design with 4 replications.  The fruit mixed with the tomato juice was either peanapple, orange, red guava, mango, passion fruit, or soursop.  The formulation of  mixture contained of 60 % of tomato juice and of 40 % added fruits juice.  The result showed that the addition of fruits juice to the tomato juice significanty affected color, flavor, taste, overall acceptance, pH, total dissolved solid, vitamin C, and stability of mixed juice.  More over the addition of red guava resulted in the best characteristic of mixed tomato juice. The formulation of tomato juice mixed with red guava gave the most acceptable.  The mixed juice of guava and tomato had pH of 4,4, total dissolved solid of 6,90 Brix, level stability of 0,53, antioxidant activity of 87,727%, and vitamin C of  60,4 mg/100g . Abstract

The objectives of this research were to observe the decision making process and the influence of product attributes in consuming of instant coffee products in sachets. This research used questionnaires to obtain information on the characteristics and consumer behavior of respondents. Data were analyzed using descriptive analysis and importance attributes.  The results showed that process of buying through the stages in the purchase decision process, namely               a). need recognition: the main benefits expected was freshness of coffee, highest frequency was  once a day; and the main barrier was product quality; b). searching of information: the main source was promotion; c). alternative evaluation: The main factor in evaluation was taste, the known brand of instant coffee were Torabika, Nescafe, Kopi Luwak, ABC, Top, Good Day; d). The decision to buy: the main reasons to buy was taste; purchase decision depending on the situation, most influential are friends. e). post-purchase evaluation: customers are willing to keep buying previous products.. The highest product attributes importance of instant coffee were the highest sense of 4.34; aroma 4.23; and freshness of 4.11 which is the characteristics specialty[H1] of coffee. Abstract

This study aimed to identify, determine and formulate the mitigation strategies of shallot supply chain risk using Fuzzy FMEA and AHP. Risk identification was performed on shallot supply chain actors include farmers (suppliers), tengkulak (distributors) and pengecer (retailers). Fuzzy FMEA was used as a tool to measure the risks identified priorities. AHP was used as a tool for determining the weighting strategies in supply chain risk mitigation strategies. Research showed that there were some risks identified on the perpetrators of the supply chain in terms of supply and demand. Risk priorities for supply chain farmers (suppliers) were risks associated with government policies that were policies related to shallot imports, the risk priority of middlemen (distributors) supply chain was risks associated with shallot imports competition, and the risk priority of retailers supply chain was a risk for competitor with other retailers. There were six alternative mitigation strategies, and the highest priority was choosing the right varieties, followed by a partnership, improve the promotion, maintain quality, maintain price stability, and maintain supplies.Keywords: AHP, Fuzzy FMEA, Risk Management, Shallot.

Abstract

Bintaro fruit is a tropical plant that is widely grown in Indonesia, but it has not been utilized optimally.  Seed of bintaro fruit contains saponin steroids and fatty acids such as palmitat, stearat, oleat, miristat, linolenat, and linoleat fatty acid.  Kernel of bintaro fruit contains saponin and polifenol that are toxic for the pests and insects.  Kernel and seed of bintaro fruit may contain antibacterial activity.  Fatty acid content of bintrao fruit was influenced by level of its maturity, more mature contains more fatty acid.  The purpose of this research is to determine the most suitable solvent to produce the best extract which has activity of anti bacteria and find out the level of anti bacteria activity which is produced from seed and kernel extracts from the bintaro fruit by using difusi agar method.  This research was arranged in a Complete Randomized Block Design, two factorial with four replications.  The first factor was different part of the fruit: seed and kernel.  The second factor was different type of solvent: ethyl acetate, hexane and aquades.  The data were analyzed using Bartlett test for homogeneity and Tuckey test for additivity.  The data then were analyzed using Anova to see the differences between treatments and tested further using LSD of 5% level to determine the best treatment. The result of this research indicated that the kernel of bintaro fruit extracted with ethyl acetate produced the extract which has the highest resistant zone activity of anti bacteria (about 10,95 mm), categorized as an average activity of antibacterial, while bintaro seed extraxted with hexane has less active of antibateria (about 8,43 mm).  The most sensitive bacterium againts seed extracts and kernel of bintaro was Staphylococcus aureus.Keywords : antibacteria, bintaro fruit, extraction, and organic solvents

Abstract

Most of the corn produced in Lampung Province is utilized for feed. The farmers sell the corn seed in  a market where the price is fluctuated. So far, the  number of business people in feed industry are still low, therefore the corn itself is still not fully exploited. This study was aimed to select the proper type of agro-industry for Lampung Province which was analyzed using Hierarchy Analysis Process, specifying the location of selected agro-industries by using Exponential Comparative Method. In this research, we used the research survey, data collected includes primary data and secondary data by the method of quantitative analysis and qualitative descriptive. By using hierarchy analysis process, the proper agro-industry for Lampung province is corn flour. Then, by using exponential comparison method, the proper place for developing the corn flour industry is in East Lampung regency specifically in Sribhawono. Corn flour industry viable market assessed with consideration of market opportunities to reach 35% corn flour that is equal to 1.533 million tones. The production process is done using wet and dry production methods. Based on the calculation of costs and production capacity , the sale price of the corn flour is Rp. 5800, - per kilogram.

Abstract

The purpose of this study was to identify the presence of formaldehyde in some fresh fish commodities and to trace formaldehyde distribution in Bandar Lampung City. The  formadelhyde tests were done  on the storage water of fresh fish samples. The study conducted in July to October 2013 was devided in two stages: a survey to fill out a questionnaire to a number of respondents, followed by sampling some storage water of fresh fish to be tested in the laboratory.  The tests were  carried out on 52 sampling points taken from the fishing boats in the fishing landing port (17 boats), fish supplier car from outside Bandar Lampung (6 cars) as well as some fish sellers in 5 traditional market in Bandar Lampung (29 sellers). By conducting a laboratory test using Formaldehyde Test Kit, there were 2 samples that were purple (positively contain formaldehyde), which were taken from 2 boats in fish landing port of Lempasing. Then the assertion test was carried out to the positive samples using chromotropic acid (SNI 01 – 2894 – 1992). The results showed that the samples positively contained formaldehyde indeed, which was characterized by a bluish purple color. Based on the survey results and tracking, there was a distortion of formaldehyde distribution in Bandar Lampung, where domestic industries (including fisherman) obtained formaldehyde illegally, either from End Users, a local manufacturer or drugstore/hospital/other health care facilities. Abstract

In Indonesia, pulp and paper production generally uses wood.  Intensive forest explotation causes deforesting, global warming,and lessen the wood deposit and forest area.  Therefore, government should seek alternative raw material such as bagasse for pulp and paper production, with naturally friendly environment pulping method, such as acetosolve method. In this research bagasse and banana fiber were used as raw material for pulp production.  Then, raw material analyses was conducted for chemical content which were cellulose, hemicellulose, lignin, and ash, and  pulp physical properties.  The best result in pulping process was 70:30 ratio of bagasse and banana fiber with 80% acetate acid concentration which resulted 56% of cellulose, 27,4% of hemicellulose, 16,2% of lignin, 66% rendemen, 16.1 GE of brightness index,  0,83 (kPa.m/g) of  break index, 2,05 Nm2/Kg Of tear index,  19 Nm/g of tensil strength, and 93% of paper opacity.
