Abstract

Penelitian ini bertujuan mendeskripsikan: (1) perkembangan motif hias kain tenun endek di Pertenunan Artha Dharma, (2) komposisi motif hias kain tenun endek di Pertenunan Artha Dharma, (3) teknik pembuatan motif kain tenun endek di Pertenunan Artha Dharma. Penelitian ini adalah penelitian deskriptif dengan objek penelitian perkembangan motif hias kain endek Pertenunan Artha Dharma di Desa Sinabun, Kecamatan Sawan, Kabupaten Buleleng. Sumber data dalam penelitian ini adalah pemilik pertenunan, pegawai, serta para penenun di Pertenunan Artha Dharma. Metode pengumpulan data menggunakan metode observasi, dan metode wawancara. Instrumen penelitian menggunakan lembar observasi dan lembar wawancara. Teknik analisis data menggunakan teknik analisis deskriptif. Hasil penelitian menunjukkan bahwa, (1) Perkembangan motif hias kain tenun endek di Pertenunan Artha Dharma yaitu; (a) motif hias garis, (b) motif hias temos, (c) motif hias wajik, (d) motif hias skordi, (e) motif hias tunjung, motif hias cempaka, motif hias bambu, motif hias anggur, motif hias bangau, motif hias singa, motif hias lumba-lumba. (2) Komposisi motif hias kain endek di Pertenunan Artha Dharma meliputi : (a) prinsip komposisi motif hias kain tenun endek berupa repetisi, harmoni, unity, dan balance. (3) Teknik pembuatan motif hias kain tenun endek di Pertenunan Artha Dharma menggunakan teknik ikat, teknik jumputan, teknik prada, dan teknik songket yang menghasilkan motif endek jumputan, motif endek prada, motif endek songket. Kata Kunci : Tenun Endek, Motif Hias, Pertenunan Artha Dharma This study aims to describe: (1) the development of decorative motifs for endek woven in Artha Dharma Weaving, (2) the composition of decorative motifs for endek woven in Artha Dharma Weaving, (3) techniques for making endek woven motifs in Artha Dharma Weaving. This research is a descriptive study with the object of research on the development of the decorative motifs of Artha Dharma Weaving in Sinabun Village, Sawan District, Buleleng Regency. Sources of data in this study are weaving owners, employees, and weavers in Artha Dharma Weaving. Data collection methods using the method of observation, and interview methods. The research instrument used observation sheets and interview sheets. Data analysis techniques using descriptive analysis techniques. The results showed that, (1) The development of decorative motifs of endek woven in Artha Dharma Weaving namely; (a) line decorative motifs, (b) temos decorative motifs, (c) diamond decorative motifs, (d) skordi decorative motifs, (e) tunjung decorative motifs, cempaka decorative motifs, bamboo ornamental motifs, grape ornamental motifs, stork ornamental motifs , lion ornamental motifs, dolphin decorative motifs. (2) The composition of the decorative motifs of endek woven in the Artha Dharma Weaving covers: (a) the principle of the composition of the decorative motifs of endek woven in the form of repetition, harmony, unity, and balance. (3) The technique of making decorative motifs of endek woven in Artha Dharma Weaving uses ikat technique, jumputan technique, prada technique, and songket technique that produce endek jumputan motif, endek prada motif, songket endek motif.keyword : Endek Weaving, Decorative Motifs, Artha Dharma Weaving

Abstract

Penelitian ini bertujuan untuk mengetahui (1) resep baku dari kerupuk subtitusi tepung ampas tahu, (2) mengetahui kualitas yang dilihat dari aspek tekstur, warna, rasa, dan pengembangan. Jenis penelitian menggunakan penelitian eksperimen. Metode pengumpulan data yang digunakan adalah metode observasi dengan menggunakan lembar uji kualitas sebagai instrumen. Panelis dalam penelitian ini adalah panelis terlatih yang terdiri dari 15 orang guru jasa boga. Teknik analisis data yang digunakan adalah analisis deskriptif kuantitatif. Hasil penelitian ini menunjukkan (1) resep baku kerupuk subtitusi tepung ampas tahu yaitu 250gr tepung tapioka, 250 gr tepung ampas tahu, 2 butir telur, 10 gr garam, 10 gr merica, 10 gr gula pasir, 10 gr bawang putih bubuk, dan 150 ml air, (2) kualitas kerupuk dilihat dari aspek tekstur berada dalam kategori baik dengan nilai 3,00, kualitas kerupuk dilihat dari aspek warna termasuk dalam kategori baik dengan nilai 2,93, kualitas kerupuk dilihat dari aspek rasa termasuk dalam kategori cukup dengan nilai 2,3, kualitas kerupuk dilihat dari aspek pengembangan termasuk dalam kategori baik dengan nilai 2,6. Kata Kunci : Tepung ampas tahu, kerupuk, kualitas This research aims to determine (1) basic ingredients for crackers subtitute made from tofu waste (2) the quality as seen from texture, colour, taste and expansion. The type of research used is experimental research. The data shown are collected using the observation method with a quality test sheets as the instrument. The panelist used consist of 15 trained panelist from culinary service. Data analysis technique used is quatitative descriptive analysis. The results of this research shows that (1) basic ingredients for crackers subtitute made from tofu waste are 250 gr of tapioca flour, 250 gr of tofu waste flour, 2 pc of eggs, 10 gr of salt, 10 gr of pepper, 10 gr of sugar, 10 gr of garlic powder, and 150 ml of water (2) the quality as seen from texture is in good quality with a value of 3.00, the quality as seen from colour is in good quality with a value of 2,93, the quality as seen from taste is in fair quality with a value of 2,3, the quality as seen from expansion is in good quality with a value of 2,6. keyword : Tofu waste flour, crackers, quality
