Abstract

One product from the sugar cane is brown sugar cane. ‘UKM Bumi Asih’ is one of the producer of the sugar cane in Bondowoso Regency. Brown sugar cane has potential prospect to developed because it can be used to any purposed (for household needs and beverage industries). This study was aimed to identify the internal and external factors that affected business development of brown sugar cane. The study were used the methods of internal factor evaluation (IFE) and eksternal factor evaluation (EFE). Internal factor analysis was performed to identify the company's internal strengths that can be used and anticipated weaknesses. External factor analysis was conducted to identify opportunities that can be exploited and threats that can be avoided. The scores output from matrix IFE and EFE were all categorized with total score 2.812 for internal factors and 3.0315 for external factor. Both scores were above 2.5 which meas that the internal position was strong enough. So its has the ability above the average to take advantage of the power and opportunities to anticipated the internal weakness and the threats. Abstract

Coffe cherry tea or cascara contained the compound of polyphenol class such as tannin, flavanol, flavan-3-ol, hydrazine acid, antosianin. The compound is very sensitive to oxygen and light because it is easily oxidized. Microemulsions can control both the active ingredient and can protect the active component from undesirable oxidation. Mikoemulsions is composed of water, oil, and food surfactant. Vegetable oil sources that can be applied in microemulsion are coconut oil and palm oil. The addition of cascara extract to microemulsion is expected to provide functional value of microemultion. However, the addition of cascara extract in microemulsion formulation affected the stability of microemulsion system. The objective of the research was to determine the effect of oil and cascara to stability of microemulsion, content of polyphenol and the antioxidant activity of microemulsion. The result showed that the kinds of oil variation given significantly effect for the microemulsion stability. The palm oil resulted the higher absorbance than coconut oil. The concentration of cascara extract had significantly effect for the microemulsion stability. The variation of cascara extract increased the absorbance value and significantly effect to the polyphenol total and antioxidant activity. Abstract

CV Margo Utomo dairy farm has approximately 99 cows. Livestock activities include feeding, cage cleaning, milking and livestock bathing. High feed and water requirements resultes high amounts of waste feed and waste produced. If wastewater discharged into channel, it could cause water pollution and could reduce environment. There were two types of waste water. The wastewater that disposed directly wastewater in to channel and the wastewater that settled in basin for three days. Steps of this research included field observation, secondary and primary data collection, problem identification, clean production alternatives identification, feasibility analysis and alternative selection based on priority scale of alternative clean production actions. Feasibility analysis includes technique, environment and economy. Assessment of feasibility based on assessment indicators in the form of questionnaires. This study used NPV, IRR, B / C Ratio, and PBP. There were three alternatives based clean production, that could be applied at the CV. Margo Utomo, such as biogas, water recycle , and cleaning pool for cows. Based on these alternatives, biogas was a best priority to applied in the CV. Margo Utomo dairy farm. Abstract

Star anise is an important spicepart for human needs, commonly used as an enhancer of taste, color and aroma of the food.The purpose of this study were to identify the active compounds contained in crude extract star anise and its antimicrobial activity. In this study identified component of extract star anisewas extracted using maceration method for 24 hours. The result showed that the crude extract of star anise had 6 compounds as active compound by UPLC method i.e Orthidine E, Adriadysiolide, 8-Decene-4,6-diyne-1,2,10-triol, Chrysogedone A, Egomaketone, Lepalone. Crude extract of star anise also determined amount of total phenolic content and flavonoid content. Ethanolic extract contained 81.46 ppm of phenolic compound and 16.97 ppm of flavonoid. The crude extract of star anise about 6% concentration had highest antimicrobial activity with inhibition zone around 1.5 cm for the microbe isolated from the spoilage of broiler chicken meat. Abstract

Peanut butter is one type of jam that favored by the people. The raw materials of peanut butter such as peanut has a high enough consumption rates but this consumption is not always followed by its productivity. The alternative ingredients in the process of peanut butter production can be substituted by jack bean cause it has lower economic value and good nutrition, but its utilization is still limited. The Utilization of jack bean into a jam requires an additional ingredients to improve its physical, organoleptic and chemical characteristics. Therefore, the additional ingredients that can be used in the production process of jack bean butter is a full cream milk. The purpose of this research is to know the effect of the addition of full cream milk and the amount of its addition to get a good physical, chemical and organoleptic characteristics of jack bean butter.The addition of full cream milk as much as 5%, 7.5%, 10%, 12.5%, and 15% of the total water mix and jack bean flour. The results showed that the addition of full cream milk increased the spreadability of jack bean butter, but not affected the lightness. The addition of full cream milk could increase the value of fat, protein and ash content, however this addition reduced water and carbohydrate content. It was improved the acceptance of organoleptic. Addition 12.5% full cream milk was the best treatment with the lightness 70.72; spreadability 15.90 cm; water content 33.12%; fat content 25.08%; protein content 22.14%; ash content of 0.81%; carbohydrate 18.85%; the preferences of color, flavor, taste, spreadability and overall respectively 4.92; 4.64; 5.08; 5; 5.04 (rather like to likes). Abstract

In the storage processes strawberries experiencesdetrimental changes so that they can affect the quality of fruit. This change can be detected by testing the physical and chemical properties in particular shelf life period. In generally the measurement of physical and chemical properties are done manually andcausing damage to the object being observed (destructive method). Based on description above, it is necessary to measure non-destructive method using digital image processing. This study aimed to identify the relationship between physical and chemical propertiesvariables and image quality variables (area, height, widht, perimeter red index andblue index) based on 0, 1, and 2 days shelf life using an image processing program. The sample used in this study were 155 pieces strawberry from A quality. The strawberry image was taken by using a CCD camerathen extracted using SharpDevelop 4.2 software. Physical and chemical properties of the strawberry were measured using digital O'hauss pioneer scales, penetrometer, refractometer and pH meter to obtain data on weight, hardness, total dissolved solids and acidity (pH). Correlation test results indicated from strong to very strong relationship between physical and chemical properties variablesand image quality variables with a range of correlation coefficient values from 0,725 to 1,000. Image quality variables that could be used as input for estimating shelf life was blue index, with validation test resulted 87,7%total accuracy. Abstract

Rubber is an export commodity which gave the country’s contribution in increasing Indonesia's foreign exchange effort. PTPN XII Banjarsari isone of the industries which process the latex material. From the whole processing stages, the sorting-part workers were the workers who complained the most about work discomfort. A sorting table with no cavities for the feet would caused workers complain about knee and calf pain. This study aimed to redesign the sorting chair and table based on the anthropometry principle. This research was expected to create table and chair sortation design that can reduce workers’ complaints in order to increase productivity and reduce human error. The data collecting method was done by 3 steps, they were interview, questioner, and direct measurement. Then, the obtained anthropometric data was made into the most appropriate sorting design of chair and the table based on the worker's posture and it was tested on the employee’s complaints, productivity and human error. The results showed that the redesign of the tables and chairs on RSS sortation caused the complaint of sorting workers in PTPN XII Banjarsari decreased. Productivity increased to 8.6%. Human error had decreased, before the redesign it was 8.1% and decreased to 1.9%. The lighting source before redesigned did not fulfill the lighting standard, therefore the redesigned lighting source used an 8 watt LED flourecent with average intensity of 685 lux. It was compatible with the lighting standard to do work that requires average intensity between 500 to 100 lux (Kuswono, 2014). Keywords: anthropometric, ergonomic, RSS

Abstract

Pempek is a typical food of Palembang, South Sumatra, Indonesia, mostly processed in the form of wet with a moisture content of 50-60%, so that it only lasts for 3-4 days. In order for pempek to long last, it was processed into instant pempek using the freeze drying method. Pempek had tube form with a size of 3 cm in high and 4 cm in diameter. This study was aimed to see the freeze drying pressure and time to length of cooking, density, and lightness of instant pempek. Stored pempek at temperature of -50° C was carried out freeze drying with a pressure of 0.002 bar, 004 bar, 0.006 bar, and 0.008 bar for 38 hours, 40 hours, 42 hours, and 44 hours with a methodology of Split the Duncan Real Distance Difference Test Plot Design. The result showed that the pressure and time had very significant effect on the length of cooking, density and lightness of pempek. P3 (0.006 bar) pressure treatment affected shorter cooking time of pempek about 10.83 minutes, L2 treatment has 14.17 minutes for cooking times and the P3L2 treatment combination has low density of 0.71 g / cm3 and color brightness (lightness) about 85.38, almost resemble with white color. Making instant pempek with freeze drying method gave better results in ways of shorter and faster cooking time than instant pempek by other drying methods. Abstract

Food contamination is not desired by producers or consumers. Safety factor is important in order to prevent side effects due to food contamination that can endanger health. Contamination in food occurs from small to large industries. Sanitation also plays an important role in many industries including the food industry. The research subject was a home industry of beans-based healthy drinks (BBHD), such as mung beans, soybeans, and red beanss drinks at Jukajo Sukses Mulia home industry in Tangerang Regency. This study was conducted to determine the level of security, sanitation, and sources of contamination in the BBHD industry Tangerang Regency. This study was carried out through observation and interview with the owner and the workers of Jukajo Sukses Mulia home industry. The result showed that the level of security and sanitation in the production environment was quite good. The potential source of contamination in the production process was the hygiene of the employees and the cleanliness of the production equipment. The critical control points were be located in filling, chilling, and storing processes. Total plate count value of mung beans, soybeans, and cashwes drinks were too numerous to count (TNTC), 3 x 103, and 2 x 102CFU/ml, respectively. Abstract

Merang mushroom and tiram mushrooms are perisable agricultural products. Processing mushrooms into flour is one of the intermediate products that have a wider use value, such as for meatballs, nuggets, and flavorings natural. The purpose of these research was to evaluate the physicochemycal characteristics of paddy straw mushroom (Volvariella volvacea) and oyster mushroom (Pleurotus ostreatus) flour with variation of blanching treatment. Physical characteristics included rendemen, color and degree of white, and bulk density. Chemical characteristics included water content, ash, protein, fat, carbohydrates, and dissolved proteins content. The results showed that physical characters for rendement, color, and white degree were the highest value on tiram mushroom flour without blansing. The bulk density of mushroom flour was no significant of difference. Tiram mushroom flour without blansing contained the highest content of water (9.09%), ash (2.79% db), protein (43.69% db) and fat (2.33% db). Blanced merang mushroom flour contained the highest content of carbohydrate (67.74% db) and protein (19.34% db). Keywords: blanching, mushroom flour, oyster mushroom, paddy straw mushroom
