Abstract

Skipjack tuna (Katsuwonus pelamis) is a large pelagic fish that seeks prey using the sense of sight, so the color of the hook used must be able to attract the attention of skipjack to eat the hook. The purpose of this research is to determine the effect of hook color on pole and line catches. The colors of the hook used are red, green and silver. The analysis used to see differences in skipjack catches based on hook color used two analyzes, namely comparative descriptive and statistical. Comparative descriptive analysis was carried out on the composition of pole and line catches. Statistical test using completely randomized design (CRD). The results showed that the hooks that produced the most skipjack tuna were red with 1785 fish or 57% of the total catch, then green with 830 fish (26%) and silver with 513 (17%) catches. Based on the CRD ANOVA statistical test, the average difference in catches based on hook color was significantly different with a significance value less than 0.05 (0.00<0.05), which means the catches of the 3 hook colors were significantly different. From the catch data, the hook color that gets the most catches is the red hook.

Abstract

This study aims to examine the effect of different concentrations of NaOH (60%, 70%, and 80%) on the isolation process of chitosan from by-products of squid bone (Loligo sp). The resulting chitosan was then tested for water content, solubility, yield, degree of deacetylation, and functional groups. The results showed that the physical appearance of chitosan tends to be white, specific to the characteristics of commercial chitosan. The use of different NaOH concentrations only affects the water content. The water content of chitosan in the 70% and 80% NaOH treatments has met the maximum chitosan quality standard of 12%. The highest chitosan solubility was obtained in the 70% NaOH treatment, namely 97.76%. Likewise, the best degree of chitosan deacetylation reached 95% (70% NaOH treatment), while the average yield of chitosan obtained reached 25.55%. In general, the absorption values of functional groups in the NaOH treatment (60%, 70%, 80%) showed that there were characteristics of chitosan, namely carbonyl (C=O) and amino (N-H2) vibrations in the fingerprint area (~1500–3000 cm-1). and a widening of the absorption band ~1600-3500 cm-1 caused by O-H stretching and N-H vibrations due to deacetylation. Other characteristics are aliphatic C-H vibrations, –NH bond deformation, and glycosidic chitosan (C-O-C) vibrations at a wavelength of ~664–1600 cm-1.

Abstract

The use of traceability systems in the food industry is very important for performing search actions in the event of a product withdrawal. The use of the FMECA method in evaluating the level of efficiency and effectiviveness of the traceability system, through the possibility of failures that arise in the traceability sytem implemented. Data analysis was perfomed based on an expert system using the FMECA method. The result of the FMECA conducted on the traceability management system there are 27 points of failure, each function has local effects and global effects. The results recorded from the FMECA analysis show that there are 11 critical points in the acceptable without revision area, 13 points are in the acceptable area with revision, and 2 points are in the undesirable area. The traceability of frozen tuna products at tuna freezing companies has been going well with 2 traceability critical points.

Abstract

Tuna is a type of fish that is very popular with the people of Indonesia and abroad. There are many types of tuna products or preparations, including frozen cooked tuna loin. This study aimed to determine the quality of frozen cooked tuna loin. Quality testing of raw materials and frozen cooked tuna loin products include organoleptic, microbiological (Total Plate Count, Escherichia coli, Coliform, Staphylococcus aureus, Vibrio parahaemolyticus, and Salmonella), chemical (histamine) tests, as well as observing the application of cold chain, yield and productivity. Organoleptic test results for raw materials and frozen tuna loin products showed the same value, namely 8. Microbiological test results for frozen tuna ALT 4.9 x 103, E. coli <3, Coliform <3, S. aureus <3, Salmonella negative and V. parahaemolyticus negative. Microbiological test results of frozen cooked tuna loin were E. coli, Coliform <3, S. aureus, V. parahaemolyticus negative and Salmonella negative. The histamine content of the raw material was 2.2 ± 0.6 ppm, while the final product of frozen cooked tuna loin was 3.48 ± 0.72 ppm. The average yield at the weeding stage was 89%, cooking 81%, deheading 60.7%, skinning 50.4%, and cleaning 38.3%. The average productivity of employees at the butchering stage is 324.47 kg/hour/person, the deheading and skinning stages are 43.55 kg/hour/person, and the loining and cleaning stages are 7.06 kg/hour/person. Overall, frozen cooked tuna loin products meet the SNI standard for Frozen Cooked Tuna Loin (7968:2014).

Abstract

Many studies have been conducted on load imbalance in 3-phase electrical installations, but research on the effects of unbalanced electrical loads on 3-phase electrical installations in fishing vessel generators has not been carried out. This study aims to determine the percentage value of load imbalance in the 3-phase electrical installations of KM fishing vessels in Pulau Pinang and observe its effect on the emergence of electric current in the neutral conductor cable in the electrical installation. The Indonesian Classification Bureau (BKI) in Volume IV rules for 2019 and 2022 regarding Electrical Installation on Ships requires that, under normal operating conditions, the percentage value of load imbalance in each phase must not exceed 15%. The research was conducted in three stages: March, April, and June 2021. From the study results, it was found that the average percentage value for load imbalance in KM Pulau Pinang on March 12, was 15.73% with an average electric current value of 8 Amperes in the neutral conductor. On April 7, the average percentage of unbalanced load sharing was 23.42% with an average neutral current of 12.26 Amperes. On June 19, the average percentage of unbalanced load sharing was 16.02% with an average neutral current of 6.11 Amperes.This research can provide new information regarding the study of load sharing imbalance and electric current in 3-phase electrical installations on fishing vessels. It can also serve as an evaluation for ship owners in reducing power losses due to the emergence of electric currents in the neutral conductor.

Abstract

To realize efficient, sustainable and sustainable use of capture fisheries, it is necessary to regulate the optimum number of fishing facilities or vessels. The purpose of this study is to calculate the optimum allocation of selected fishing vessels. Optimum allocation of fishing vessels of choice or priority to types of superior fish resources based on the maximum allowable potential. The analytical method used to calculate the optimization of fishing vessels using Linear Goal Programming (LGP) analysis. Linear Goal Programming (LGP) analysis is used to analyze the dynamics of capture fisheries management which is focused on the optimum allocation of the needs of existing fishing vessels. Linear Goal Programming (LGP) analysis is used to analyze the dynamics of capture fisheries management which is focused on the optimum allocation of the needs of existing fishing vessels. The optimal allocation of fishing vessels to catch Grouper, Snapper and Mackerel is fishing gear (X4) with a size of <5 GT, an allocation of 1,201 vessels per year. To catch the kite and cob commodities, three types of fishing gear were allocated, namely ring purseseine (X1) as many as 10 vessels with a size of 10-15 GT, an allocation of 10 vessels per year, a lift net (X2) with a size <5 GT, an allocation of 150 vessels per year. and gill nets (X3) with a size of <5 GT with an allocation of 100 vessels per year.

Abstract

Carrageenan has been added to various fish jelly products. Some studies shown that the addition of carrageenan can affect the consumer preferences and the quality of some fish jelly products. So far, there is no study about the consumer preferences and the effect of  carrageenan into the chemical composition for fish jelly products made from grouper fish. Therefore this research was conducted to determine the effect of the carrageenan on the chemical composition of fish jelly products and to obtain the best composition of fish and carrageenan. Procedures of making fish jelly products and also sensory analysis are carried out in accordance with Indonesian National Standards (SNI) No. 7759:2013). Sensory test data were analyzed using the kruskal wallis followed by the Least significance Different Test (LSD), while the chemical composition were analyzed using ANOVA (Analysis of Variance). The Kruskal wallis analysis showed that carrageenan has significant effect on appearance of fish jelly products and also has significant effect on the protein and crude fiber content, and no significant effect on the moisture, ash, and fat content. Product with 1% of carrageenan as the the preference of consumer contains 50.96% of water, 1.74% of ash, 10.90% of fat, and 14.59% of protein. It’s composition is in accordance with the Indonesian National Standard (SNI) No. 7759-2013.

Abstract

Dompak Island, Tanjungpinang City has a potential beach tourism object. The beauty of the beach is the main attraction for tourists. There are several beach tours on Dompak Island, one of which is Tanjung Siambang Beach. Through the Tourism and Culture Office of Tanjungpinang City, tourism industry stakeholders and Tanjungpinang City have worked to manage tourist objects, increase tourist visits and develop attractions at Tanjung Siambang Beach. Tourist satisfaction greatly influences the increase in visits to a tourist attraction. The research aims to determine the level of tourist satisfaction with the Tanjung Siambang Beach tourist attraction using a quantitative descriptive method. Analysis of research data using Customer Satisfaction Index Analysis (CSI) and Importance Performance Analysis (IPA). The results showed that tourists were quite satisfied with the Tanjung Siambang Beach tourist attraction with a CSI value of 57.53% and an average conformity level obtained of 57.94% which shows an overall picture that the performance of Tanjung Siambang Beach has not been able to meet visitor expectations because the value Conformity level is still below 100% and not optimal.
