Abstract

Fish is highly perishable, and is spoiled rapidly if improperly handled. Salted dried, one of the techniques for preserving fish has been practiced for long period and it is an alternative to lowering the water activity of flesh fish. Snakehead fish (Channa striata) is a potential freshwater fish species and has become an important commodity in health food industry due to its abundant albumin content. The snakehead fish has commercial value due to its health benefit. It is a good source of medicinal food because it contains high level of amino acids and fatty acids. Therefore we conducted several experiments to identify the effect of salt soaking time, salt soaking concentration, dry temperature and stability of the dried snakehead fish filler by prerservation time. Our results showed that the best quality of the dried snakehead fish fillet could be obtained if the dried snakehead fish fillet treated with 1.0% salt in 1.5 hours and drying at 60oC to 20% moisture content. This application could preserve the dried snakehead fish fillet for 12 months in PA bag without any deterioration. Through this investigation, the added value of snakehead fish could be improved in domestic consumption.Keywords: Snakehead fish, Fillet, Salinity, Drying, Soaking, Preservation

Abstract

                                             Aim: The purpose of this study was to calculate the inhibition zones of the growth of A. actinomycetemcomitans by snail slime at concentrations of 12.5%, 25%, 50%, 100%. Methods: The study was an experimental randomized posttest-only control group design. This research was conducted in the oral biology laboratory of the Faculty of Dentistry, Airlangga University, Surabaya Indonesia. Variables in this study snail slime were made with concentrations of 12.5%, 25%, 50% and 100%. Take germ stock with osse, then plant on BHI broth media, then incubate 37C for 24 hours. Plant germs on BHI media so that with the swab technique to evenly spread on the surface, then contact the paper disc that has been given each concentration of 12,%, 25%, 50%, 100%, with tweezers on the surface as much as 10 micromillimeters, then incubate 37C for 2x 24 hours, eight repetitions are carried out. Results: The mean diameter of the inhibitory zone snail slime on the growth of A. actinomycetemcomitans bacteria in the treatment groups had significant differences p<0.05. The mean inhibition zone between controls and LB treatment group (LB 12.5%, 25%, 50%, 100%), were statistically different (p<0.05).In contrast with LB 12.5% (p>0.05) which significant difference with the control group. Conclusion: The concentration of 100% snail slime has the highest inhibitory power, against the growth of the A. actinomycetemcomitans bacteria, The 12.5% concentration snail slime showed no antibacterial activity against the growth A. actinomycetemcomitans.Keywords: Snail slime, Actinobacilus actinomycetemcomitans bacteria, Inhibition zone diameter.

Abstract

Antioxidants are considered important nutraceuticals on account of many health benefits. Due to the high antioxidant activity, Helianthus annuus seeds might be considered in the management and prevention of degenerative diseases associated with free radical damage. It is the rich source of vitamins specially vitamin E.  Drying and roasting are the most important processes giving neccessary alterations to the product.  Roasting can enhance flavour through caramelization on the surface of the food. There was no any research mentioned to varify the change of antioxidant (tocopherol) during heat pump drying as well as storage. So the objective of the present study was to identify the effect of temperature in heat pump drying, roasting condition, packaging and storage to antioxidant (tocopherol) in the dried Sunflower (Helianthus annuus) seed. Results demonstrated that drying temperature (40 oC), roasting (145 oC in 5 min), vaccum packing in polyethylen (PA) bag and keeping in 4 oC were recommended to maintain the tocopherol, total phenolic and antioxidant activity in the final products for 12 months. The effect of drying, roasting temperature and time were clearly demonstrated to produced dried roasted sunflower seed.Keywords: Sunflower, Drying, Roasting, Antioxidant, Tocopherol, Vaccum.

Abstract

Pigmented potato (Solanum tuberosum L.) varieties are a rich source of anthocyanins, in particular acylated derivatives. The potato products such as French fries, chips, balls etc. are also fried products which absorb high amount of oil. These products though taste good, pose health problems due to high calorie and cholesterol intake. The consumers prefer to low fat and fatfree fried foods. This research has been focused on different parameters of blanching, coating, frying, kind of frying oil for minimum oil absorption and sensory palatability while maintaining the most phytochemical components such as total phenolic, total flavonoid and anthocyanin during preservation. Results revealed that blanching 95oC in 30 seconds with ascorbic acid of 0.05 g/100g potato, coating with carrageenan 0.20%, frying 4 mm of potato crisp in sunflower oil heating at 155oC in 2 minutes was appropriated. Fried potato crisp could be preserved for 12 weeks at ambient 4oC. Moisture and oil content, as well as colour and texture are important quality attributes of fried potato products which were significantly affected by blanching.  Reducing the oil content of fried potato slices by application of coating is an effective method. Frying of potato crisps is carried out to convert the tubers to value added products. Frying method brings out unique flavor and texture to the products that improve their overall acceptability. Kind of oil used for frying also positively affected to oxidative reaction in fried potato crisps. The present study has examined various technical aspects to minimize the oil uptake in fried foods still retaining the desirable texture and flavor of the final product.Keywords: Potato crisp, Blanching, Coating, Frying, Shelf life, Anthocyanin, Flavonoid, Carrageenan.

Abstract

Objective: Retinoblastoma is a malignancy that originates from primitive retinal cells and is usually found in children under 4-5 years of age. Retinoblastoma is the second largest cause of death among other malignancies in developing countries. The purpose of this study was to determine the characteristics and pathological risk factors of enucleated retinoblastoma Patients and Methods: This is a descriptive study with a cross-sectional study design conducted retrospectively by evaluating data from the patient's medical record. A total of 18 subjects were enrolled in this study. Characteristics observed were sex, age, and laterality.  Data was compiled and calculated by Microsoft Excel 2017 software. All calculations and presentations were conducted in descriptive manner. Results: Unilateral retinoblastoma cases (77.2%) were found more often in this study. Leucochoria was the most often presenting symptoms (61.1%), followed by propotosis, strabismus, and cellulitis. Out of 18 subjects, 72.2% subjects had intraocular retinoblastoma. The most common PRF finding in this study was optic nerve invasion (44.4%), followed by choroid invasion, and scleral invasion. While 11.1 % of the subjects had no PRF findings. Conclusion: Invasion to the optic nerve was the most common pathological risk factors found in enucleated retinoblastoma. Other PRFs include choroid invasion and sclera invasion. PRFs may become a sign that determines the progressivity of retinoblastoma, and it can also determine further decisions regarding the prevention of recurrence and possible adjuvant therapy in retinoblastoma patients.Keywords: Pathological risk factor, Retinoblastoma, Enucleation.

Abstract

Purple sweet potato possesses a high content of anthocyanins and has an abundant amount of phytochemicals beneficial to human health. The high perishability of sweet potato roots during storage remains a major constraint. This study was carried out to assess value addition of purple sweet potato (Ipomoea batatas) processed in forms of baked strip. This present research aimed to optimize the production parameters as well as come out with an acceptable product. Different parameters affecting to the production of baked purple sweet potato were examined. The results revealed that blanching the purple sweet potato strip in 1.4 cm thickness in 0.15% CaCl2 solution, coating 0.2% xanthan gum, baking at 155oC in 2 minutes, and packing in PET/AL/PE bag were appropriated to maintain the physicochemical properties of baked strips as well as extend product shelf life. Abstract

Introduction: Similar to the world, Indonesia also undergoes a population explosion. One solution to overcome this population problem is to conduct contraception. Although woman contraception is widely used, still the role of man is needed. There are a few methods in male contraception, but all is still not proven optimally. Therefore, it is intend to understand more about the cellular mechanism of male contraception.  Methods: A computerized finding process of database in Pub med which related to the key words was performed for obtaining data. After that, the most update and relevant articles were reviewed and selected. Results: The results are mainly revealing the regimens that are administered in male hormonal contraception and substances that are used in immunocontraception. Furthermore, this reviews also reveales the cellular mechanism of both types of male contraception. In male hormonal contraception, the mechanism was depends on negative feedback in hypothalamic-pituitary-gonadal axis by regimens to impair the spermatogenesis into severe-oligozoospermia or azoospermia. In addition, immunocontraception was based on ‘vaccination’ concept in which antibodies recognize proteins in the spermatozoa as "non-self” thus spermatozoa may be destroyed. Conclusion: It is necessary to understand the cellular mechanism, thus the development of male contraception increases.  Further researches should be conducted to confirm the cellular mechanisms.Keywords: Male hormonal contraception, Testosterone, Progestin, Negative feedback, Immunocontraception, Sperm antigen.

Abstract

Custard apple (Annona squamosa L.) is a climacteric fruit and highly perishable in nature. The fruit is well known for its sweet taste, specific flavour, and pleasant, aromatic creamy pulp. The fresh fruit pulp contains high nutritional value such as protein, carbohydrate, sugar, vitamin and mineral. Edible coatings are widely used for extension of shelf life of fruits and vegetables by reduction of moisture loss and gas exchange as well as reduction of the physiological disorders. The main problem of postharvest losses associated with custard apples is rapid loss of firmness. The objective of the present study was to identify the effect of different xanthan gum concentrations (1%, 2%, 3%, 4%, 5%) and storage temperature (8 oC, 12 oC, 16 oC, 20 oC) to the weight loss, firmness, total soluble sugar and ascorbic acid in custard apple (Annona squamosa) fruits during preservation. Moreover, shelf life (0 day, 7 days, 14 days, 21 days and 28 days) of custard apple (Annona squamosa) fruit in storage also clarified. Results demonstrated that xanthan gum 4% and storage temperature 8 oC could maintain custard apple (Annona squamosa) fruit quality for 28 days without any deterioration. This is an opportunity to develop value‐added products reducing the postharvest losses, improving nutritional value and generating additional revenue for custard apple growers.Keywords: Custard apple, Xanthan gum, Coating, Firmness, Shelf life, Preservation.
