Abstract

Diabetes mellitus is a chronic metabolic disorder characterized by elevated blood glucose levels resulting from impaired insulin production or utilization. In addition to pharmacological therapy, blood glucose control can be supported through the use of herbal interventions such as carrot juice. Carrots (Daucus carota L.) are low calorie, high fiber vegetables rich in antioxidants, including vitamin C, β-carotene, lycopene, and flavonoids which may protect pancreatic β-cells and help reduce blood glucose levels. This study aimed to examine the effect of carrot juice consumption on blood glucose levels among individuals with diabetes mellitus. A quasi-experimental design with a pre-test–post-test control group was employed at the Piyeung Health Center, Montasik Subdistrict, Aceh Besar Regency. A total of 32 participants were selected using purposive sampling and divided into two groups: the treatment group, which received carrot juice daily for seven days, and the control group, which received mineral water for the same duration. Blood glucose levels were measured using an Easy Touch device. Data were analyzed using paired and independent t-tests in SPSS, and the results were presented in tabular and textual form. The mean blood glucose level before carrot juice administration was 221.88 mg/dL, which decreased to 199.88 mg/dL after the intervention, indicating a reduction of 22.0 mg/dL. The findings demonstrate that carrot juice consumption significantly reduces blood glucose levels among individuals with diabetes mellitus in the Piyeung Health Center area (p < 0.05).

Abstract

Functional beverages innovatively formulated from natural ingredients such as cucumber (Cucumis sativus L.) and celery (Apium graveolens L.) contain abundant bioactive compounds with antihypertensive properties, offering a nutritious and safe alternative to support the prevention and management of hypertension. This study aimed to determine the effect of celery extract powder substitution on the organoleptic properties and the sodium and potassium contents of functional cucumber powder drinks. This experimental research employed a non-factorial Completely Randomized Design (CRD) consisting of three treatments and three replications. The parameters tested included acceptability (color, taste, aroma, and texture) through hedonic testing by semi-trained panelists, as well as sodium and potassium analysis conducted at the Center for Standardization and Industrial Services. Data were analyzed using ANOVA, followed by Duncan’s test when significant differences were observed. The highest mean scores for color and aroma were obtained in treatment P (50% celery: 50% cucumber), for taste in treatment R (60% celery: 40% cucumber), and for texture in treatment N (40% celery: 60% cucumber), with all treatments categorized as “slightly liked.” Treatment N (40% celery: 60% cucumber) showed the lowest sodium content (3.85 mg/200 ml, 0.25% RDA) and the highest potassium content (24.21 mg/200 ml, 0.51% RDA). Substitution of celery leaf powder in treatments N, P, and R had no significant effect on color, taste, aroma, or texture, but significantly affected sodium and potassium levels. The formulation in treatment N (40% celery: 60% cucumber) demonstrated the greatest potential as a functional beverage for hypertension management.

Abstract

Diabetes mellitus is a chronic metabolic disorder characterized by insufficient insulin production or the body’s inability to effectively utilize insulin. In Indonesia, the prevalence of diabetes mellitus in 2023 reached 1.7%, while in Aceh Province it was 1.6% of the total population. In Southwest Aceh District, there were 5,339 reported cases of diabetes mellitus. This study aimed to develop a booklet as a nutrition counseling medium and to evaluate its effect on nutritional knowledge and attitudes among hospitalized patients with type 2 diabetes mellitus at the Southwest Aceh District General Hospital. The study was conducted in two phases. The first phase involved booklet development using a Research and Development (R&D) approach. The second phase employed a quasi-experimental design with a one-group pre-test–post-test approach. A total of 22 respondents were selected using the Lemeshow formula. The study was conducted at Teungku Peukan District General Hospital, Southwest Aceh District, in December 2024. Data were analyzed using normality tests and dependent t-tests with a 95% confidence level (p < 0.05). The results showed that the mean knowledge score increased from 36.81 before nutrition counseling to 71.13 after counseling (p = 0.000). Similarly, the mean attitude score increased from 34.54 before the intervention to 48.09 after the intervention (p = 0.000). These findings indicate that booklet-based nutrition counseling significantly improves nutritional knowledge and attitudes among patients with type 2 diabetes mellitus.

Abstract

Stunting among toddlers remains a major nutritional problem in Indonesia, including Aceh Besar Regency. In Gampong Kayee Kunyet, Blang Bintang District, the prevalence of stunting reached 29.82% in 2024. One contributing factor is inadequate complementary feeding practices, particularly low intake of animal protein. Maternal knowledge plays an important role in shaping feeding practices and parenting behaviors. Nutrition counseling using poster media is considered an effective and easily understood educational approach. This study aimed to determine the effect of poster-based nutrition counseling on mothers’ knowledge of high–animal protein complementary feeding among toddlers aged 6–24 months at the integrated health post in Gampong Kayee Kunyet, Blang Bintang District, Aceh Besar Regency. This study employed a quasi-experimental design with a one-group pretest–posttest approach. The study population consisted of all mothers of toddlers aged 6–24 months attending the integrated health post (n = 21), using a total sampling technique. Data were analyzed using a dependent t-test with a 95% confidence level (α = 0.05) in SPSS. The mean knowledge score increased3 from 12.10 before the intervention to 15.86 after the intervention. Statistical analysis showed a significant difference (p = 0.000; p < 0.05), indicating a significant effect of the intervention. Poster-based nutrition counseling significantly improved mothers’ knowledge of high–animal protein complementary feeding. Health workers and community health cadres are encouraged to routinely use poster media and place them in strategic locations to improve accessibility for mothers of toddlers.

Abstract

Child malnutrition remains a major public health problem worldwide. In Indonesia, the Ministry of Health reported through the Indonesian Nutrition Status Survey (SSGI) that the prevalence of stunting in 2022 reached 21.6%. One contributing factor to poor nutritional status among children is inadequate food provision by parents or caregivers, including daily lunch meals. Nutrition education using appropriate media is one strategy to address this issue. This study aimed to develop a leaflet entitled “Bekal Ku Berkualitas” as a nutrition education medium for parents and caregivers at PAUD–Kindergarten Dinul Islam, Aceh Besar. This study employed a Research and Development (R&D) approach using the ADDIE model, which consists of analysis, design, development, implementation, and evaluation stages. The sample consisted of 20 parents or caregivers of children enrolled at PAUD–Kindergarten Dinul Islam, Aceh Besar. Data were collected using questionnaires and analyzed using both qualitative and quantitative methods. Expert validation results showed an average feasibility score of 85.7% from material experts, 81.7% from media experts, and 92.5% from language experts, indicating that the leaflet was highly feasible. The average knowledge score of parents increased from 82.00 before the intervention to 92.25 after the intervention. Statistical analysis revealed a significant difference in knowledge before and after the intervention (p = 0.002). In conclusion, the development of the “Bekal Ku Berkualitas” leaflet as a nutrition education medium effectively improved parents’ knowledge regarding quality food provision for children at PAUD–Kindergarten Dinul Islam, Aceh Besar.

Abstract

Anemia remains a major public health concern in Indonesia, affecting individuals across all age groups, particularly women and adolescents. According to Basic Health Research (2018), anemia prevalence among women is 48.9%. In Pidie Regency, the prevalence of Iron Deficiency Anemia (IDA) remains high, largely due to low compliance with iron supplement consumption among adolescents. This study aimed to analyze the effect of WhatsApp-based nutrition education on knowledge and attitudes regarding anemia among female adolescents. This quasi-experimental study applied a one-group pretest–posttest design with a non-probability quota sampling method. A total of 42 female adolescents participated. Data were collected using validated structured questionnaires administered before and after the intervention. Nutrition education was delivered through WhatsApp media, focusing on anemia prevention and management. Paired t-test was employed to analyze differences between pretest and posttest scores. Results showed a significant improvement in knowledge, with a mean increase of 10.47 points from baseline (p = 0.000). Attitude scores also improved significantly, with a mean increase of 1.19 points (p = 0.001, t = 3.89, SD = 1.40). Overall, the average knowledge improvement reached 10.5 points after the intervention. In conclusion, WhatsApp-based nutrition education proved effective in enhancing both knowledge and attitudes about anemia among female adolescents. This digital health promotion approach offers an accessible, cost-effective, and practical strategy that can be adopted by nutritionists and health workers to strengthen education programs and encourage positive behavior change for anemia prevention.

Abstract

School snacks play an important role in children’s health and nutritional status. However, many snacks consumed by school-aged children do not meet food safety and nutritional standards, thereby increasing the risk of health problems. Therefore, appropriate nutrition education media are needed to improve students’ knowledge and attitudes toward healthy snacking. This study aimed to determine the effectiveness of the Nutricase educational media in improving students’ knowledge and attitudes toward healthy snack consumption.This study employed a Research and Development (R&D) approach using the ADDIE development model (Analysis, Design, Development, Implementation, and Evaluation). Data were collected using questionnaires, and both quantitative and qualitative data were obtained. The study sample consisted of 22 fourth-grade students selected using a total sampling technique. Data analysis was conducted using descriptive and inferential statistics, including the Wilcoxon signed-rank test to analyze knowledge and the independent t-test to assess attitudes. The validation results from material, media, and language experts indicated that the Nutricase media was categorized as very good. The results of the Wilcoxon test showed a significant difference between pre-test and post-test knowledge scores (p = 0.003; p < 0.05), while the t-test results also showed a significant improvement in students’ attitudes toward healthy snacking (p = 0.026; p < 0.05). It is expected that Nutricase can serve as an effective nutrition education tool to enhance students’ awareness of healthy snacking practices.

Abstract

The Indonesian government has implemented various efforts to reduce anemia among pregnant women, including the provision of 90 iron supplement tablets (Tablet Tambah Darah, TTD) during pregnancy. Counseling is one of the strategies used to improve maternal knowledge and awareness regarding the importance of iron tablet consumption. This study aimed to determine the effect of leaflet-based counseling on pregnant women’s knowledge and attitudes toward iron tablet consumption at the Seuneubok Village Health Center, Johan Pahlawan Subdistrict, West Aceh Regency. This quantitative study employed a quasi-experimental design. A total sample of 23 pregnant women was selected using purposive sampling. The study was conducted in Seuneubok Village in October 2023. Knowledge and attitude data were collected using questionnaires, and data analysis was performed using a paired t-test. The average knowledge score increased by 9.0 points from pretest to posttest, while the average attitude score increased by 7.26 points. The results showed a significant difference in both knowledge and attitudes before and after the intervention (p = 0.000 for both outcomes). These findings indicate that counseling using leaflets effectively improves knowledge and attitudes regarding iron supplement tablet (TTD) consumption among pregnant women at the Seuneubok Village Health Center.
