Abstract

Fresh fruit juice was processed food was a part of healthy diet. Daily fresh juice consumption could improve health and prevent the occurrence of degenerative disease. Fresh juice were produce without any heat treatment which could allow natural microflora to growth. The aims of the research was to determine the microbiological contaminant of avocado street juice sold in Surakarta. Twenty five of samples were taken from 5 district. Samples were analyze for total viable aerobic count (TVAC), total coliform, total salmonella count, and total staphylococci. The results showed that microbiological contaminant of street avocado juice was extremely high. TVAC of avocado juice was 6.07 ± 0.37 to 8.95 ± 0.04 log CFU/ml; Total coliform 3.28 ± 0.01 to 4,60 ± 0,02 log CFU/ml; Total Staphylococci 4,47 ± 0,07 to 7,35 ± 0,07 log CFU/ml; and Total Salmonella-Shigella 2,34 ± 0,06 to 4,80 ± 0,00 log CFU/ml. There was 1 grocery that produce avocado juice which have undetected for coliform analysis. Producers, government and also consumers need to make some agreement to improve the safety of fresh juice.

Abstract

In milk processing, supply chain activities were started fromthe procurement of raw materials, milking cows, milkprocessing, marketing of dairy products, and wastemanagement. The purposes of this study were to analyzeeconomical aspect, and to study environmental aspect onGSCM implementation in CV. MUER. Direct survey anddisccussion, environmetal indicators and economicalanalysis were implemented in this study. The results of studyfound that the use of water for cage cleansing was 3600liters, number of feeding was 2265.57kg, milking productionwas 550 liters, the water usage for washing tools was 250liters. The assessment of environmental indicators using 13indicators found that this unit has score of 30 means thatCV. MUER has implemented most of the GSCM conceptsalong the supply chain of milk production. Other resultshowed that the amount of contamination (COD and BODvalue) in the milk processing was higher than govermentregulation standard. In term of economical analysis shownthat NPV value was Rp.2.723.162.185, IRR 36.99%, and B /C ratio was 1.48. This means that the value of NPV wasgreater than zero, IRR was greater than the bank interestrate (equal to 10%), and B/C ratio was greater than 1, thisindicated that based on environmental and economicalaspect, GSCM has a high feasibility to be implemented inCV. Abstract

Snakehead fish (Channa striata), a freshwater fish, is known to havefunctional properties in helping the process of healing burns andwounds after surgery. Besides that, the use of seaweed as a source offood fiber is also widely reported. This research was conducted todesign fiber-rich fish nuggets. The purpose of this study was todetermine the maximum levels of seaweed substitution in theprocessing of snakehead fish nuggets based on sensory properties.Single-factor experiment (seaweed, Eucheuma cottonii, substitution)arranged in a Completely Randomized Design with four replicationswas applied in this study. The parameters observed were hedonic andhedonic quality sensory properties for the attributes of color, aroma,texture, and taste of nuggets. The data obtained were analyzed by theFriedman Test, followed by the Wilcoxon Rank Test to detect thedifferences between treatments. Treatment of up to 75% seaweedsubstitution (0, 25, 50, and 75%) decreases significantly (p 0.05) thehedonic sensory acceptance of the snakehead fish nuggets for allattributes except the texture which shows an increase. Whereas, thetreatment with substitution of seaweed in the narrow percentage of 0,5, 10, 15, and 20% gave an expected result, which showed that therewas no significant difference (p 0.05) of the hedonic sensoryresponse for the overall acceptance. Nevertheless, 15% of seaweedsubstitution provides the best hedonic sensory response for overallacceptance. These results indicate that 15% of seaweed (Eucheumacottonii) substitution is recommended for use in the processing ofsnakehead fish nuggets.
