Abstract

Addition of dragon juice to emulsion products formulated from olein fraction of red palm oil and pumpkin juice was conducted as an effort to improve the taste thus it can be accepted by consumers. This study aims to (1) observe the acceptance of 60 panelists aged 17-21 years on the parameters of taste, aroma, mouthfeel, color, flavor and aroma of each contributing components of dragon fruit, palm oil, and raspberry flavor with the addition of dragon fruit juice at level 0 (control), 25, 50, and 75% (v/v), and (2) observe the changes in chemical components i.e. vitamin C and total titrable acids, total carotenoid by spectrophotometry, and antioxidant activity by 2,2-diphenyl-1-picrylhdrazyl (DPPH) reduction method. The best formula was the one containing 75% (v/v) of red dragon juice in fresh condition with vitamin C content of 19.32±0.62 mg/100 mL, antioxidant activity of 354.25±0.77 ppm, hedonic color, taste, and viscosity between favorable and very favorable. After 2 weeks of storage at room temperature (28±2ºC), the vitamin C, total carotene, and antioxidant activity of the mixture decreased by 29.72, 15.44, and 46.59%, res-pectively.

Abstract

Cempedak (Artocarpus champeden) is a tropical fruit whose inner-skin contains high polyphenolic-based antioxidant. Traditionally, the inner-skin is soaked in brine to induce spontaneous lactic acid bacte-ria (LAB) fermentation. This research aimed to investigate the changes of polyphenolics substances and antioxidant activity during the course of spontaneous and Lactobacillus casei induced fermented at opti-mum (37°C) and sub-optimum (8°C) temperatures. Phenolic substances were spectrophotometrically measured with gallic acid (GAE), tannic acid (TAE), and catechin (CE) as the standards for the respective groups. The 50% maximum inhibitory concentration (IC50) for DPPH reduction was measured. A thin layer chromatography (TLC) using different solvents was utilized to qualitatively show differences of substances extracted from the unfermented and fermented mandai cempedak. The retention factor (Rf) values for TLC spots were measured after the plates were exposed under 366 and 254 nm of UV lamp. Fermentation increased phenolic substances release from the inner skin of cempedak which positively modulated the potential antioxidant activity. Sub-optimum temperature fermentation reduced total phenolic-based antioxidant. Ethyl acetate or combinations of n-hexane and ethyl acetate gave better separation in TLC plate. Differences in stain patterns were exhibited by mandai cempedak before and after L. casei induced fermentation. In summary, L. casei induced fermentation was more effective at optimum temperature to increase phytochemical substances of mandai cempedak, while spontaneous fermentation showed to be more effective after 11 and 13 days at sub-optimum temperature.

Abstract

Kerupuk ikan gabus telah dikenal luas namun biasanya terbuat dari bagian dagingnya saja. Limbah berupa tulang ikan belum dimanfaatkan secara  optimal, oleh karena itu dijadikan sebagai bahan substitusipada pembuatan produk kerupuk. Tujuan penelitian ini adalah untuk menentukan pengaruh substitusi tepung tulang ikan gabus (TTIG) sebagai fortifikan kalsium terhadap sifat sensoris dan fisika-kimia kerupuk ikan gabus. Penelitian ini menggunakan rancangan acak lengkap dengan perlakuan substitusi tepung tulang ikan gabus dalam tepung tapioka dengan kadar (0; 4; 8; 12; dan 16% b/b) dan di ulang sebanyak empat kali. Parameter yang dianalisis pada penelitian ini adalah sifat sensoris dan sifat fisika-kimia. Hasil penelitian menunjukkan bahwa substitusi TTIG berpengaruh nyata (p<0,05) terhadap sifat sensoris rasa, aroma, warna dan tekstur serta sifat fisika-kimia kerupuk ikan gabus. Peningkatan kadar TTIG menurunkan kadar air dan volume pengembangan kerupuk ikan gabus, tetapi meningkatkan kadar protein dan kadar kalsium (p<0,05). Substitusi TTIG sampai dengan 4% menghasilkan kerupuk ikan gabus dengan volume pengembangan yang sama dengan kontrol (tanpa substitusi TTIG) dengan kadar kalsium 200 mg/100 g dan kadar protein 14,27%. Rasa dan warna kerupuk ikan gabus disukai hingga substitusi TTIG 12%, sedangkan aroma dan tekstur disukai hingga substitusi TTIG 8%.

Abstract

Snakehead fish (Channa striata), a freshwater fish, is known to havefunctional properties in helping the process of healing burns andwounds after surgery. Besides that, the use of seaweed as a source offood fiber is also widely reported. This research was conducted todesign fiber-rich fish nuggets. The purpose of this study was todetermine the maximum levels of seaweed substitution in theprocessing of snakehead fish nuggets based on sensory properties.Single-factor experiment (seaweed, Eucheuma cottonii, substitution)arranged in a Completely Randomized Design with four replicationswas applied in this study. The parameters observed were hedonic andhedonic quality sensory properties for the attributes of color, aroma,texture, and taste of nuggets. The data obtained were analyzed by theFriedman Test, followed by the Wilcoxon Rank Test to detect thedifferences between treatments. Treatment of up to 75% seaweedsubstitution (0, 25, 50, and 75%) decreases significantly (p 0.05) thehedonic sensory acceptance of the snakehead fish nuggets for allattributes except the texture which shows an increase. Whereas, thetreatment with substitution of seaweed in the narrow percentage of 0,5, 10, 15, and 20% gave an expected result, which showed that therewas no significant difference (p 0.05) of the hedonic sensoryresponse for the overall acceptance. Nevertheless, 15% of seaweedsubstitution provides the best hedonic sensory response for overallacceptance. These results indicate that 15% of seaweed (Eucheumacottonii) substitution is recommended for use in the processing ofsnakehead fish nuggets.

Abstract

Innovation in increasing the wet noodles performance was conducted by substituting super red dragon fruit (pitaya) peel (DFP) puree to get DFP wet noodles that have red color and rich in fiber. Wheat flour (WF) was substituted with super red DFP puree in a portion of 0-20%. A single factor experiment arranged in Completely Randomized Design with four replications for each treatment was conducted. Hedonic and quality hedonic properties for color, aroma, texture, and taste were determined. Data were analyzed by the Friedman test continued by the Wilcoxon Sign Rank test. The DFP wet noodle with DFP puree substitution of 10% gave the best hedonic sensory response for overall acceptability with the properties of like for color, texture, and taste, but rather like for aroma. The DFP wet noodles have hedonic quality properties of a light reddish color, slightly scented of dragon fruit peel with a texture of rather hard and rather taste of DFP. The fiber content of the DFP wet noodles was 0.135 ± 0.003%.

Abstract

The aim of this research was to determine the physicochemical characteristics of cassava peel and the sensory acceptability of its chip form three varieties generally planted in Samarinda, e.g. Pacar, Kuning/Mentega, and Buton cassava. The flour of the three cassavas pulp has HCN content of 14.04, 12.02, and 19.38 mg/kg. A single factor experiment arranged in Completely Randomized Design and each treatment was repeated nine times. Thickness, moisture content, crude fibre content, and ash content of the casava peel were observed, as well as hedonic and quality hedonic sensory acceptability of cassava peel chips for crispiness, taste, aroma, and colour. The result showed that except moisture content, the peel of the three cassava varieties was significantly different (p<0.05) for the thickness, crude fibre content and ash content. The moisture content of the three cassava varieties was around 66.70-70.07%. Peel of Pacar, Kuning/Mentega and Buton cassava has a thickness of 1.52, 2.32, and 1.84 mm, the crude fibre content of 2.70, 2.18, 1.68%, and ash content of 1.19, 2.18, and 0.94%, respectively. The cassava peel chips of the three cassava varieties were significantly different (p<0.05) for hedonic and quality hedonic acceptability (crispiness, taste, aroma, and colour). Pacar cassava showed the most acceptable for crispiness and taste, which has a hedonic and hedonic quality scale of 4.50 (1-7, crispy moderately to crispy) and 5.35 (1-7, taste moderately like cassava to taste like cassava).

Abstract

Honey is a complex mixture that contains nutrients and bioactive composition and chemical compositionthat is needed by the human body. Honey is also rich in antioxidants because it is prone to falsification given its manyproperties. This study discusses the chemical and nutritional profiles and the observation of counterfeiting in honey usingthe infrared septicroscopy method. The honey used is obtained from providers of native honey from Kalimantan forestswith 3 kinds of honey brands, namely Mahuka A (MHA), Mahuka B (MHB) and Mahuka C (MHC). Tests of chemicaland nutritional profiles included Water content, ash content, protein content, fat content and calcium levels followed byhoney counterfeiting observation using the Fourier Transform Infrared (FTIR) method with a combination of Partial leastsquare (PLS) calibration model and Principle Component Regression (PCR). The results of all honey samples havevarying values in the water content between 26.75 - 31.00%. Ash content of 0.10 -0.16%. Protein content 0.24 - 0.88%fat content 0.08 -0.44% carbohydrate content. Observation of FTIR honey counterfeiting is used to replace the authenticity of Honey (MH). FTIR combined with Partial Least Square (PLS) was optimized in the subsequent testing ofa mixture of sucrose (MCS) with native honey (MH). Calibration models were taken in a combination of regions 1423 -1825 cm-1. A high coefficient of determination (R2) of 0.9960 with a calibration value (RMSEC) of the root error of thesquare root low of 0.0898% v / v was successfully understood in the MHA on the PLS model. high R2 values and lowRMSEC and RMSEP values on calibration and validation assessments with both accuracy and precision models used.

Abstract

Penelit ian ini bertujuan untuk mengetahui pengaruh berbagai konsentrasi asam klo rida (HCl) dan lama perendaman dalam larutan asam klo rida terhadap rendemen, kadar air, kadar protein, dan kekuatan gel gelatin yang diekstrak dari ku lit ikan tenggiri. Penelitian menggunakan rancangan acak lengkap dua factor, dengan factor pertama adalah konsentrasi HCl masing -masing 4%, 6%, dan 8%, sedangkan factor kedua adalah lama perendaman dalam larutan HCl selama 48 jam, 72 jam, dan 96 jam, masing -masing dengan 3 ulangan. Hasil penelit ian menunjukkan konsentrasi HCl dan lama perendaman dalam larutan HCl berpengaruh terhadap rendemen, kadar air, kadar protein , dan kekuatan gel dari gelatin yang dihasilkan. Hasil terbaik diperoleh dari ko mbinasi perlakuan konsentrasi HCl 4% dan lama perendaman 48 jam, dengan nilai rendemen 5,62%, kadar air 12,35%, kadar protein 80,08%, dan kekuatan gel 29,50 bloom.

Abstract

Roselle (Hibiscus sabdariffa L.) calyces can be used as natural food colorant. The objective of this study is to observe the effect of drying time and temperature on physical and chemical characteristic of rosela calyces powder. The experiment is arranged in Completely Randomized Design and each treatment is replicated by three times. The factors are drying temperature (60, 70, 80 C) and drying time (5, 7, 9 h). The results showed that the combined treatment of drying temperature at 80 C and drying time for 5 h gave the best result, i.e yield of 9.46 %, water absorption of 1.92 g/g sampel, color intensity of 1 % rosella calyces powder solution showed an absorbance of 0.28 at 605 nm, water content 6.42 %, ash content 0.51 %, and total acid of 5.14 % as malic acid.

Abstract

Banana “kapas” is an original banana cultivar from Samarinda, with the characteristics at the time of mature is yellow fruit skin color, flesh color yellowish white and has a sweet taste. During this time the banana kapas has not been utilized properly. Based on the characteristics possessed by banana kapas can be processed into the processed products sale banana. This study aims to determine the effect of temperature and drying time on the chemical properties of sale of banana kapas produced, the level of panelist reception at organoleptic test and to get the time and temperature of the dryer that produces a quality banana sale based on chemical properties and organoleptic. The results showed that the temperature and duration of the dryer and its interactions had the significant effect on water content, ash content, vitamin C and reducing sugar content. Treatment with temperature 75oC and 21 hours drying time gave the best result with water content, ash content, vitamin C and reducing sugar are 32.80%, 1.13%, 60.65 mg/g and 16.08% respectively. For hedonic test, hedonic values of color, flavor, aroma and texture is like the hedonic quality of brown, sweet taste, rather banana flavored and hard texture.
