Abstract

 Meat is a food from animal that have a high nutrient contents (water, protein, fat, vitamins and minerals). This food is very perishable, because its has enough elements of good nutrition. The nutrient content of meat makes a very suitable medium for the growth of microorganisms, especially bacteria. The presence of bacterial contamination in meat will impact on the meat quality of physical and microbiological. This study aimed to determine the physical and microbiological quality of beef carcass and meat from the slaughterhouse in Pekanbaru and compared with the Indonesian National Standard (INS) No. 3932: 2008 on carcass and meat quality of beef. The results showed that the pH of beef muscle Longissimus Dorsi et lumbarum (LD) is at 5:37, while the Biceps Femoris (BF) is 5.56. Meat color values in LD muscle have a score of 6 (red light), while the flesh BF has a score of 7 (red is a bit darker). While the value of the percentage of free water in LD muscle is 61.80% higher than the BF muscle is 53.53%. Microbiological analysis of the microbial contamination Total Plate Count (TPC), Eschericia coli and Coliform in fresh meat from slaughterhouses inPekanbaru city is above the maximum threshold according to INS 3932: 2008, but negative for Salmonella contamination. The conclusion of this study that physical (pH, color, and percentage of free water) origin beef slaughterhouses in Pekanbaru city still has a good quality and are in the normal range of fresh meat. But in terms of microbiological contamination, especially bacteria TPC, E. coli and coliform were above standard.

Abstract

 This research was conducted in September until October 2012 in the Laboratory of Post-Harvest Technology; Laboratory of Patology, Entomology and Microbiology Islamic State University of Sultan Syarif Kasim Riau, and in the Food Chemistry Laboratory Faculty of Fisheries and Marine Science Riau University. The aims of this research was to know the protein content, fat content, water content and ash content. This research was based on Completely Randomized Design with factorial pattern (two factors) with two repetitions. The first factor was the concentration of  betle leaf juice ( 0%, 5%, 10% and 15% ) and the second factor was the soaking duration (0, 5, 15 and 15 hours). The results showed that increasing betle leaf juice and soaking duration gave very significant effect (P<0,01) to increase protein content, to lower fat content and water content but no significant effect on ash content. The best treatment of protein content 15% and soaking duration 15 hours (29,35%), fat content 15% and soaking duration 15 hours (0,50%), water content 15% and soaking duration 15 hours (45,45%) and ash content 15% and soaking duration 5 hours (1,40%).

Abstract

 The availability of ruminant livestock feed ingredients at region need to be inventoried, which is very important in the development of ruminants. Riau Province has the potential for very large ruminant livestock development, because it is supported by  the availability  of high local resources. Inventory of material feed  for ruminant was conducted to determine the availability of feed resources in Riau Province. Feed materials inventoried in the form of dry matter (DM) included agricultural byproducts (rice straw, corn straw, cassava leaves, sweet potato straw, soybean straw, peanut straw) and plantation byproducts (oil palm fronds and palm leaf, palm kernel cake, coconut cake, cocoa pods) located in 11 districts/cities in Riau Province. Inventory were performed by using primary and secondary data published in 2008. The data obtained were then tabulated based on the conversion rate of Ruminant Livestock Aquaculture Directorate, 2009. The results showed the largest feed ingredients availableis palm kernel cake with DM total of 592,008.57 tons/yr and the lowest was of cocoa pods 145.24 tons/yr. Total availability of DM from all sources of feed ingredients inventoried was 12.253.787,840 tons and could be used to feed ruminant Livestock of about5,237,513.687 AU.

Abstract

 Goat milk quality is an important aspect to get high quality goat milk for consumer. Hence, the information goat milk quality is still not defined. This study aimed to know goat milk quality in Pekanbaru city. A study was conducted to observe milk goat quality at 2 dairy goat farms (Umban Sari farm and Alam Raya farm). The data then analyzed using t-test for comparing the two farms. Parameters used to determine goat milk quality are total plate count (TPC), protein, fat, acidity degree (pH), alcohol test and spesific density of raw goat milk. Research result indicated that raw milk goat from Alam Raya farm was significantly difference (P<0,05) higher than raw goat milk from Umban Sari. The total plate count of raw goat milk from Alam Raya farm is exceed the standard of SNI 01-3141-1998. Results of protein, fat and pH raw goat milk were appropriate to the minimun standard of INS 01-3141-1998 and Thai Agriculture Standard (TAS) of raw goat milk. On the other hand, result showed in milk spesific gravity that is less than INS 01-3141-1998 and Thai Agriculture Standard (TAS) standard.

Abstract

  Traditional medicine from drug crop has more than a pharmacological effect so that its use should be acurate and correct. The mistake in traditional medicine usage and or drug crop can be dangerous for health. Therefore, it is required a complete scientific information to avoid it. It had been done the research of anti-bacteria activity test from crude extract of ethyl acetate and ethanol from skin and seed of Pulasan to bacterium Staphylococcus aureus and Escherichia coli with dilution method to determine Minimum Inhibitory Concentration (MIC) and Minimum Bakterisidal Concentration (MBC). The biggest MIC and MBC was respectively obtained from ethyl acetate extract that was 0,76 mg/ml, and ethanol extract that was 156,13 mg/ml. In general, skin and fruit seed extract of pulasan (Nephelium mutabile) has bigger resistance ones to bacterium Staphylococcus aureus compared to Escherichia coli.
