Abstract

The objectives of this study is to determine the best proportion of rice flour, wheat flour, and tapioca as shell in the making of tempe gembus chips. The results showed that the proportion of rice flour 30%, wheat flour 40%, and tapioca 30% was the best treatment. The product had characteristics as moisture content 1,7243%, free fatic acid 0,391%, proteins 7,3471%,  broken ability 0,2624 kg/cm2, output 65,9471%, crispiness, taste, appearance, and aroma prefered by panelists.   Keywords: tempe gembus, chips, flour proportion

Abstract

The waste from pre and post harvesting may cause environmental problem. This problem need to be solved. The waste water (whey) from tofu production is one of that always be produced in large amount. The objective of this research was to use whey of tofu to produce nata de soya and to reduce environmental pollution by varying incubation time. Total nitrogen, reducing sugar, COD value, and pH were analyzed in initial whey of tofu. Thickness and weight of nata that produced, volume and COD (Chemical Oxygen Demand) value of whey residue were observed after 10, 12, 14, 16, and 18 days. The optimum incubation time for nata production was 14 days with the thickness and the wet weight of nata that produced are 4,75 mm and 24,58 g, respectively and COD reduction 46,22%. These results were derived from 200 ml whey that enriched by sucrose 10% (w/v) and mungbean sprout extract 0,5% (v/v)   Keywords: tofu wastewater, nata de soya, incubation, pollution reduction

Abstract

Hypoglicemic effect of soybean, soybean protein fraction and tempe was determined in alloxan-induced diabetic rats.  Blood glucose and urinary glucose level were measured to determine this effect.Soybean protein fraction had the highest hypoglicemic property.  It lowered blood glucose level from 37.35 to 5.48 mg/dl/day/g carbohydrate consumed (85%).  Tempe showed lower hypoglycemic effect than soybean  protein fraction.  Blood glucose level decreased 51%, from 31.57 to 15.59 mg/dl/day/g carbohydrate consumed.  Soybean had the lowest hypoglycemic effect.  It lowered blood glucose level from 47.47 to 27.70 mg/dl/day/g carbohydrate consumed (42%).  Urinary glucose level had the same pattern as blood glucose level.Keywords :  Hypoglicemic effect, blood glucose level, soybean, tempe

Abstract

Salah satu bentuk pengolahan Alkyl Benzene Sulfonate adalah secara biologis, yaitu dengan menggunakan bakteri perombak ABS, bakteri tersebut adalah Pseudomonas fluorescens. Bakteri ini dapat menghasilkan enzim lipase dan enzim alkylsulphatases yang dapat memotong rantai Alkyl Benzene Sulfonate (ABS). Proses perombakan ABS merupakan proses aerob sehingga pengaturan kecepatan aerasi sangat diperlukan untuk memaksimalkan hasil degradasinya. Selain kecepatan aerasi, volume medium juga mempengaruhi perencanaan unit perombakan ABS, sehingga diperlukan pengaturan peningkatan volume medium yang sesuai untuk mendapatkan hasil perombakan yang maksimum. Hasil penelitian menunjukkan bahwa perlakuan volume medium NPK memberikan pengaruh nyata terhadap persentase perombakan ABS dan jumlah bakteri, perlakuan kecepatan aerasi memberikan pengaruh nyata terhadap jumlah bakteri dan interaksi antara perlakuan volume medium NPK dan perlakuan kecepatan aerasi memberikan pengaruh nyata terhadap persentase perombakan ABS tetapi berpengaruh sangat nyata terhadap jumlah bakteri. Persentase perombakan ABS tertinggi diperoleh pada kombinasi perlakuan volume medium NPK 500 ml dengan kecepatan aerasi 1 vvm yaitu sebesar 81,91%, jumlah sel bakteri tertinggi diperoleh pada kombinasi perlakuan volume medium NPK 100 ml dengan kecepatan aerasi 1,5 vvm yaitu sebesar 1,75 . 107 cfu / ml, nilai pH medium tertinggi diperoleh pada kombinasi perlakuan volume medium NPK 500 ml dengan kecepatan aerasi 1,5 vvm dan volume medium NPK 2500 ml dengan kecepatan aerasi 1,5 vvm yaitu sebesar 6,85. Abstract

The aim of the research was to  study the effect of temperature and the time exposure of deproteinization toward demineralized crab shell characteristic. This experiment was done in various temperature i.e.  650 C, 750C and 850 C and time exposure i.e. 2, 6 and 10 hours. The results showed the temperature treatment had influence toward ash content, calcium content, protein content  and the yield very significantly. The time exposure treatment had influence toward ash content, calcium content and  protein content very significantly. Interaction  both of that had influence toward calcium content only. The best treatment was selected by Multiple Attributes Methods. It was demineralizalition  at temperature 85 0C for 15 hours, The characteristics  of demineralized shell were ash content  0,277%, calcium content  0,123%,  water content  5,364 %, protein content 30,3% and the yield  13,21%. This treatment gave  mineral content and calcium content of demineralized shell   that fulfilled the chitin standard.Key words: chitin, demineralization, crab shell

Abstract

The aim of  research was to study the effect of temperature and the time exposure of deproteinization toward chitin characteristic. This experiment was done in various temperature i.e.  65, 75 and 85 0C and time exposure i.e. 2, 6 and 10 hours. The results showed the temperature treatment had influence toward degree deacetylization, nitrogen content and the yield very significantly. The time exposure treatment had influence toward degree deacetylization and nitrogen content very significantly. Interaction between two kinds of treatment had influence only toward degree deacetylization. The best treatment was selected by Multiple Attribute Method. It was deproteinization at 750C for 6 hours, result in nitrogen content 4,58%, degree deacetylization 12,14%, water content  4,41%, ash content 1,07% and the yield  14,57%. That chitin fulfilled chitin standard.   Key words : chitin, deproteinization, crab shell
