Abstract

Cairan pulpa hasil samping fermentasi biji kakao dapat difermentasi menjadi cuka kakao. Namum, produk tersebut perlu didistilasi untuk pemurnian produk distilat cuka kakao. Tujuan penelitian ini untuk mendapatkan distilat cuka kakao yang terbaik dari berbagai prosentase volume distilat hasil distilasi sederhana. Penelitian ini dilakukan dengan mendistilasi cuka kakao hasil fermentasi lanjut dari cairan pulpa. Distilat cuka kakao dibedakan atas beberapa prosentase (volume distilat/volume cuka kakao) , yaitu: 0-30, 31-50, 51-70, dan 71-90 %(v/v). Masing-masing prosentase tersebut dikarakterisasi sesuai syarat mutu cuka fermentasi diantaranya: kadar asam asetat, total gula, total padatan terlarut (TPT), dan pH serta ditentukan juga waktu prosesnya. Hasil yang diperoleh menunjukkan bahwa karakteristik distilat cuka kakao pada prosentase volume 0-30, 31-50, 51-70, dan 71-90%, berturut-turut mengandung kadar asam asetat : 1,96, 2,34, 2,76, dan 3,94%;  total gula : 0,09, 0,08, 0,08, dan 0,06%; TPT: 0,88, 0,91, 0,9, dan 1,13%Brix; dan pH: 3,00, 2,98, 2,94, dan 2,82; serta memerlukan waktu distilasi: 38,50;  25,50;  28,50; dan 28,00 menit. Prosentase volume distilat 71-90% (v/v) merupakan produk distilat cuka kakao yang paling potensial dengan kandungan asam asetat memenuhi persyaratan mutu sesuai SNI cuka fermentasi.

Abstract

This research aim to identify the society food preferences at the level of households based onper capita income of the region in the West Kalimantan province. The research method usedwas cross sectional study. The location of the research is grouped into three strata of theeconomy based on GDP, namely Pontianak city (high strata), Sekadau district (the lowerstrata) and Ketapang district (the intermediate strata). Then selected two subdistrict fromeach city/district. The sample of subjects is selected by purposive 25 householdsper subdistrict, and the total sample 150 households. The results showed that the foodpreferences of the subject significantly associated with per capita income of the area (p<0.05), namely corn, noodle, cassava, sweet potato, taro, sago, beef, chicken, duck egg, freshfish, shrimp, shellfish, anchovies, fish with soy, milk, milk powder, cooking oil, coconut,pecans, walnuts, chocolate, green beans, douchi fermented beans, granulated sugar, brownsugar, syrup, instant drinks, string beans, carrots, bananas, papaya, guava, mango, jackfruit,coffee and tea. Reasons for the selection of food preferences of the subject, because thehabits and the daily food.

Abstract

The purpose of this study was to determine the hypoglycemic effects of flake made from amixture of corn flour and seaweed Gracilaria sp. (corn flake-seaweed) in diabetic rats.Stage of research began with making of corn flake-seaweed, testing nutritional value offlake and continued with bioassay testing using induced diabetic rats. Twenty-one rats(Wistar) were used in this study. Rats were divided into 3 groups: PS (-), PS (+), and PF.Each group was given a different feed. Analysis was conducted on the analysis of proximateand crude fiber content of flake, blood sugar analysis, weighing and observations in animalfeed consumption. The results showed that flake had 3,62 % of a moisture content, 4,59 %of ash content, 9.30% of protein content, 8,27 % of fat content carbohydrates by differentlevels of 74.22% and 36.54% of crude fiber. Bioassay testing showed that the corn flakeseaweedhas hypoglycemic effects and could lower blood glucose levels by 48.43% indiabetic rats.

Abstract

The research was conducted to determine the effect of pumpkin and rice flour ratio to Nutrition Value and ?-carotene content of ombus-ombus cake. This research using randomized block design with 5 treatment of substitution of pumkin and flour rice: 0% pumpkin: 100% rice flour, 20% pumpkin: 80% rice flour, 30% pumpkin: 70% rice flour, 40% pumpkin:60% rice flour, 50% pumpkin: 50% rice flour. Those treatment repeated 3 times. Data obtained analyzed with anova, treatment with significant different tested by Duncan test. The results of the research showed that substitution of pumpkin and rice flour gave different effect on water content, ash content protein content, fat content, carbohydrate content, ?-carotene, colour, taste, aroma, and overall acceptance. substitution 50% of pumpkin and 50% rice flour gave the nutrition value of ombus-ombus cake with water 48.70%, ash 6.16%, protein 4.44%, fat 0.18%, carbohydrates 41.58 %, and  ?-carotene 6.31%, while sensories evaluation such as color 4,3 (yellow), flavor 4,4 (like), aroma 4,2 (typical pumpkin) and overall acceptance 4,8 (really like) by the panelists.

Abstract

Food grade grease (FGG is a kind of lubricant made from vegetable oil. Food Grease isconsidered safe for healthy and it does not pollute the environment so that it can be veryimportant for particular industries such as pharmaceutical, animal feeding, cosmetic, andespecially food industry. This study is aiming at obtaining optimum basic formulation ofthickening agent (LiOH) that can produce qualified food grade grease. It is a kind of factorialexperimental study by using complete random sampling. Based on Fisher test, the treatmentshows a different result significantly. Then, it is continued by conducting Duncan’s MultipleRange Test (DMRT). 2% of activated charcoal is the best treatment because it results FFAscore, lower water content, and the bright yellow color that is shown by the score of 5.48%,0.0498 %, and 3 % that successively obtained. The treatment on thickening agent (LiOH)(P1) and the revious one (L1) are the best treatment which produce qualified food gradegrease, corrosion resistance value 12.0, dropping point 130C, lubricating texture value 1,pH value 9.45, water content 0.19%, and ash content value 0.76%.

Abstract

The purpose of this study was to determine the amount of microbial contamination andbacterial pathogens as well as the level of safety on some of loloh Bali in Denpasar. Thestudy consisted of two phases i.e. first: an inventory of some loloh Bali in Denpasar, amongothers, loloh don base, loloh don sirsak, loloh don jarak, loloh samiloto, loloh dontempuyak, loloh kunyit, loloh temulawak and loloh don piduh. The second stage: the analysisof microbial contamination and bacterial pathogens of loloh BaliIn the first stage concluded that there were loloh don base, loloh don sirsak, loloh don jarak,loloh samiloto, loloh don tempuyak, loloh kunyit, loloh don piduh and loloh temulawak inDenpasar. The second phase resulted that 100% of the samples loloh don base, don piduh,don sirsak, don jarak, and don tempuyak compliant with the value of total microbes, 16.7%of the samples loloh samiloto, 75% loloh kunyit and 50% loloh temulawak meet therequirements of total microbes. 100% of loloh don piduh, 16.7% loloh don base, 0% lolohsamiloto, 0% loloh don sirsak, 0% loloh don jarak, 0% loloh don tempuyak, 75% lolohkunyit and 50% loloh temulawak meet the requirementsof total coliform and 100% of thesamples have been analyzed showed did not contain E.coli. Loloh don base 4, loloh kunyit2, loloh kunyit 4, loloh don piduh meet all the requirements of total microbes, coliform andE. Coli.

Abstract

The aim of this research was to know the influenceof tofu and moringa leaf comparison to the characteristic of nugget and to know the best comparison of nugget. The experimental design used in this research was  randomized block design (RBD), by treatment comparison of tofu and moringa leaf , that is 97% tofu : 3% moringa leaf, 94% tofu :6% moringa leaf, 91% tofu : 9% moringa leaf, 88% tofu : 12% moringa leaf, 85% tofu : 15% moringa leaf, 82% tofu : 18% moringa leaf. All of those treatments were repeated for 3 times to obtain 18 research units. Data were analyzed using analysis of variance and if influence occurred among the treatments, the data will be processed using Duncan’s test. Results of this research had shown that the comparison ratio of tofu and  moringa leaf gave influence to the water content, protein content, vitamin C content, antioxidant capacity, ash content, color, and taste. The best treatment was the nugget using 82% tahu and 18% moringa leaf, with 22,53% water content, 2,34% ash content, 10,13% protein content, 18,10% vitamin C content, 73,53 mg/L GAEAC antioxidant capacity, color, texture, aroma , taste , and overall acceptance with the like criteria.

Abstract

This research was conducted to determine temperature and time exraction effect onflavonoid content and antioxidant activity of soursoup leaf extract. The experimental designused in this research was a factorial completely randomized design which consisted of twofactors. The first factor was temperature of extraction that consists of temperature 35C,45oC, and 55oC. The second factor was the time of extract namely 10, 20, and 30 minuts.The treatment was repeated twice to obtain 18 units of the experiment. Data were analyzedwith analysis of variance, followed by Duncan test. The results showed that the besttreatment of soursoup leaf extract temperature of 450C and extraction time 20 minutesresulted in yield 19.14%, total flavonoids 903.90 mgQE /g extract and IC 50 value was 258.155 mg / L.

Abstract

Pengenyal merupakan bahan yang sangat penting dalam pembuatan bakso ayam karena dapat menghasilkan bakso dengan karakteristik kenyal, kompak dan juicy. Hingga saat ini, bahan pengenyal yang banyak dan umum digunakan adalah sodium tri poli fosfat (STPP). STPP merupakan bahan tambahan pangan sintetik, yang bila digunakan secara berlebihan akan beresiko pada kesehatan. Disis lain pati talas kimpul termodifikasi (PTKT) yang merupakan pati tipe C memiliki daya ikat air tinggi, stabilitas terhadap panas yang baik, dan kemampuan membentuk gel yang tinggi. Sifat-sifat ini dapat digunakan sebagai pengenyal alami menggantikan STTP. Penelitian ini bertujuan untuk mengetahui pengaruh penambahan PTKT terhadap karakteristik bakso ayam, pengaruh jumlah penambahan PTKT yang optimal pada proses pembuatan bakso ayam, dan mengetahui karakteristik bakso ayam yang ditambahkan PTKT. Disain penelitian menggunakan rancangan acak kelompok dengan perlakuan berupa penambahan PTKT yang dilakukan dalam enam taraf (0,5,10,15,20 dan 25%) dan diulang sebanyak tiga kali. Data dianalisis dengan sidik ragam dan perbedaan antar nilai rata-rata diuji dengan Duncan’s multiple range test. Data kadar air tertinggi didapat pada taraf perlakuan 20%. Hasil analisis sensori menunjukkan adanya pengaruh pada karakteristik (aroma dan citarasa) bakso ayam. Jumlah penambahan PTKT yang paling disukai sebanyak 10% dan masih dapat diterima hingga 15%.

Abstract

Penelitian ini bertujuan untuk mengetahui perubahan loloh bluntas selama penyimpanan pada suhu ruang sehingga dapat menentukan umur simpan loloh bluntas bedasarkan kualitas mikrobiologis. Loloh bluntas berasal dari 3 produsen loloh di daerah Denpasar - Badung disimpan pada suhu ruang selama 24 jam. Pengamatan mikrobiologis loloh dilakukan setiap 6 jam, yaitu : 0 jam, 6 jam, 12 jam, 18 jam dan 24 jam, meliputi pemeriksaan terhadap pH, TSS, Total Mikroba dan Total Kapang/Khamir. Penyimpanan memberikan pengaruh yang signifikan terhadap nilai total mikroba dan total kapang/khamir dari loloh bluntas. Terjadi peningkatan total mikroba yaitu 4,77 log Cfu/mL (0 jam) menjadi 6,44 log Cfu/mL (24 jam). Nilai total kapang/khamir meningkat dari 3,15 log Cfu/mL (0 jam) menjadi 4,26 log Cfu/mL (24 jam). Loloh bluntas dapat disimpan sampai dengan 24 jam pada suhu ruang, penyimpanan diatas 24 jam tidak dapat dilakukan karena loloh bluntas telah mengandung jumlah mikroba diatas standar yaitu diatas 106 Cfu/mL.
