Abstract

Study of green tea instant processing with flavor of kweni fruit (Mangifera odorata Grift) using spray drying has been conducted. The objectives of this research were to obtain green tea instant with flavor of kweni fruit as product diversification of green tea and observe the effect of addition of kweni fruit extracted and Arabic gum to maltodextrin ratio toward the quality of green tea instant product. they were two  stages of this research, i.e. the previous study and finally the main study. The previous study were ; (1) chemical properties analysis from green tea and kweni fruit including water content, volatile reducing substance (VRS) value, ash content, tannin and catechin, and microorganism contamination in terms of total plate count and colifrom bacteriae; (2) Determination the best condition for green tea extraction and (3) Determination the optimal condition for kweni fruit extraction. Green tea of grade III was extracted using hot water in 90 derajat C during 5, 8 and 11 minutes with green tea and hot water ratio at 10 : 100, 15 :100 and 20 g : 100 ml; while kweni fruit was extracted using etanol 90% concentration during 15, 30, 45 minutes with kweni fruit to etanol ration at 100 : 100, 100 : 200 and 200 g : 100 ml). The main study were green tea processing and product quality evaluation including the yield, water content, VRS value, ash content, tannin content and solution ability and sensory analysis of green tea instant product using hedonic test. The result showed that the addition of flavor extract from kweni fruit in producing green tea instant has given significantly effect to the  value of yield, VRS and ash content; however Arabic gum has given signicantly effet to the VRS vale. Generally, organoleptic evaluation showed that panelis more like the taste, aroma and color of the product. The best green tea instant product wih flavor extracted from kweni fruit was obtained from A1B3 treatmnet (Arabic gum to maltodextrin ratio at 9 : 1 and kweni fruit extract concentration 20%) with the yield 7.64% water content 7.14, VRS 7.25 meq/g, ash content 8.72% , tannin conten 8.96% and salvation 89.47%.

Abstract

Antioxidant were added to the processing of "kolang-kaling" (Arenga pinnata Merr) in syrup processing as ascorbic acid, sodium erythorbate, a mixture of ascorbic acid and sodium erythorbate. The products were stored at room temperature of three months. Total soluble solid, pH, vitamin c, total bacterial count and organoleptic test were observed during storage. The addition of ascorbic acid or ascorbic acid and sodium erythorbate resulted in decreasing of pH and increasing of vitamin C, while the total soluble solid was stable. Total soluble solid increased but vitamin C decreased during storage. Organoleptic test showed that the addition of these antioxidants was basically acceptable.

Abstract

Design and performance testing study of the dryer and the clarifyer equipments of Virgin Coconut Oil (VCO) has been done for producing better quality of the product. The power of the electrical motor for stirrer of the dryer used was 5 hp and it has reduced from 1500 rpm to 300 rpm using gear box T.S. 80 type and finally become 4 rpm on the stirrer in order to running well. Electrical motor connected to the timer apparatus to change the rotation of the dryer which automatically work well so that the grated coconut meat to be dried accepted the heat energy uniformly. The flow direction of the refinery of oil and the fluid (mix of the oil and water) from the bottom of the refine equipment was raised up and then went down to the bottom, so that the oil product did not break to the treatment of heat. According to this indicated that the stirrer apparatus could worked well. Analytical result shows that the VCO moisture content is 0,11 %, free fatty acid is 0,22 % and lauric acid is 49,92 %. The whole of equipments system process is running well. Drying rate of water at 70 C, condition is 7,9% (w/w) per hour, heating efficiency is 18,99% at 6 hours drying time, capacity of dryer 231,1 kg per batch, efficiency of the refinery oil per batch 97 %.

Abstract

A high-performance liquid chromatography-UV detection method for determination of Alpha-and Beta-cryptoxanthins and, Alpha-and Beta-carotenes in Buah Merah oil was developed. The separation of the four carotenoids was achieved by a combination of a Handy ODS column (150x4.6 mm, i.d.) and a Develosil Combi-RP-5 (50x4.6 mm, i.d.) via a 3-port switching valve. The mobile phase used was a mixture of CH3CN/CH3OH/ethyl acetate (=68:23:9, v/v/v). The retention times of Alpha-and Beta-cryptoxanthins and, Alpha and Beta-carotenes were 18, 20 53 and 60 min, respectively. The clean-up of Buah Merah oil was performed by liquid-liquid extraction after saponification with 13.5 M KOH solution. The calibration curves of the carotenoids showed good linearity (r> 0.000. The detection limits of four carotenoids at a signal-to noise of 3 were from 0.36 to1.14 ng/mg. Furthermore, the proposed method could be successfully applied to determine the carotenoids in 10 Buah Merah oil samples.

Abstract

Pandanus conoideus (Buah Merah) Is Exclusively Grown In Papua Island And Its Neghbour Areas And Indigenous People Has Been Utilizing Its Extract Oil (SBM)Thousand OfDear Years. We Have First Found Relatively High quantity Of Carotenods which Carotenoids Which Consists Of Alph-And Bet-Carotene As Well As Alpha-And Beta-Cryptoxanthin In SBM. Beta -Eryptoxanthin Is a Of SBM Has Not Been Well Examined.We Evaluated Antitumor Potentials Of SBM In Vitro And In Vivo.In The In Viro Study, Proliferation Of Human Non-Small Lung Cancer Cells.A549Were Inhibited By SBM At More Than 500 Hg/mL iN mtt Assay . The In Vivo Antitumor Activity Of SBM Was Evaluated Using SBM Demonstrated Significant Antitumor Effects In Ether Tumor Volumes Or Tumor Weights. Experiment Using Nude Mice In A549 Assay Demonstrated That Antitumor Effect Of SBM May Not Be Associated With Involvement. Abstract

The result showed that one day storage (with wring) gave the yield of 2,28%, and free menthol content of 51.59%. It was obvious that both the yield and free menthol content obtained from one day storage are higher than those obtained from two, three and four days storage.

Abstract

Fannel (Foeniculum Vulgare Mill) has been well known by indonesia people. Fannel seeds have strong pleasant odour because of essential oil. The major essential oil constituents of fannel were anethole and limonene, with more than 80% of the total oil. The other chemical consituents were- pinene, myrcene, y-terpinene, fenchone, estragole and fenchyl acetate. To increase the use of fannel oil, anethole consituent can be converted to its derivations by oxydation, acetylation, reduction, esterification and alcylation processes. Fennel seeds are used as a flavoring for goods and beverages and the essential oil from seed and plant has flavoring, cosmetic and pharmacuetical uses. The tendency in consumming medicine from natural plant material source, cause in the increasing use fennel as medicine raw material, especially the simplified usage which was used in traditional medicine.

Abstract

A study was The study was aimed at designing adsorption and desorption model of "dendeng" by investigating its static equlibrium moisture content conducted at 30 degree C and 40 degree C,relative humidity (RH)level 32,43,62,63.5,75,80,and 81% for adsorption model,and11,32,43,62,63.5,755 for desorption model.Six model of courie bradley,halsey,oswin,and clen-clayton were employed and modified to investigate a model which appropriate for "dendeng"composition.Before gaining the models and cerves it were initally calculated some constants.The modification of cauries model gave the best results for both adsorption and desorption condition.

Abstract

Vitamin E can be derived from palm oil as a mixture of alpha tocopherol and tococtrienols.As a minor components,vitamin E have traditionally been the most interesting.It does not only posses antioxidant properties which is important for enhancing the stability of the oil against oxidation but also possess physiological properties that are presentlygaining much prominence in biomedical applications.Some studies indicated that tocotrienols were more efficient than tocopherol in terms of hypocholesterolemic,anti-cancer and antioxidant properties.This artcle reviews characterization and production of vitamin component,nutrional properties,and potential applications of vitamin E from palm oil in the food and pharmaceutical industries.

Abstract

The essential oil of Leptospermum flavescens leaves and twigs has been studied. The distillation techniques used were water distillation and water and steam distillation in order to determine the most suitable technique. The essential oil of the twigs and leaves are of the same type. Linalyl acetate, beta-terpineol, terpineol-4 and borneol are the major constituents of the oils and present in different quantities. The high content of linalyl acetate (34.44%) showed that the oil could become a new source of linalyl acetate. The result of the two distillation technique showed the significant difference in the leaves
