Abstract

The purpose of this research was to determine the physical, chemical, functional properties, and hydrogen cyanide content of jack bean sprout (Canavalia ensiformis L.) flour. This research used two treatments that was without germination and 48 hours of germination. The treatments were repeated three times resulting in six units of experiments. Jack bean flour and jack bean sprout flour were analyzed by paired T-test. The results showed that the germination of jackbean had a very significant effect on the decrease of oil absorption from 1.59 mg/l to 0.79 mg/l. The treatment had a significant effect on the increase of water content from 11.10% to 11.77%; increase of protein content from 28.52% to 29.18%; decrease of fat content from 6.33% to 5.54%; decrease of carbohydrate content from 51.19% to 50.77%; increase of crude fiber content from 11.69% to 12.30%; increase of water holding capacity from 1.42 ml/g to 1.58 ml/g; decrease of swelling volume from 8.97 ml/g to 8.31 ml/g; increase of solubility from 0.06% to 0.07%; and decrease of hydrogen cyanide content from 14.13 mg/kg to 11.00 mg/kg. Abstract

The aim of this research was to know effect the ratio of pulp and peel of a dragon fruit to the characteristic of jam, and determine the best the ratio made by those pulp and peel, in order to able to produce a good characteristic of jam. This research used Complete Random Design with the treatment comparison of pulp and peel of dragon fruit comprised of 5 (five) treatments, such as 90% pulp : 10% peel, 70% pulp : 30% peel, 50% pulp : 50% peel, 30% pulp : 70% peel, 10% pulp : 90% peel. All of treatments were repeated for 3 times to obtain 15 research units. Data were analyzed using analysis of variance and if an influences occurred among the treatments, the research would be continued to the Duncan’s test. Results of this research had showed that the comparison ratio of pulp and peel of dragon fruits gave influences to the water content, total sugar, total soluble solid, viscosity, pH balance, antioxidant capacity, color, flavor, texture and overall acceptance of a jam. The best ratio of pulp and peel of dragon fruits showed of percentage 30% pulp : 70% peel with 33,42% water content, 31,85% total sugar, 64,80%brix total soluble solids, 0,015% antioxidant capacity, viscosity  0,053 cm/second, 3,99 pH, aroma (normal), color, flavor, texture and overall acceptance (like).

Abstract

This study aims to determine the effect of comparative of wheat and cowpea flour to characteristics of crackers andto knowing the composition to produce crackers with the best characteristics. The experimental design used was Completely Randomized Design with treatment factor that is the comparative treatment of cowpea flour with wheat which consist of 5 levels : 100%:0%, 95%:5%, 90%:10%, 85%:15%, and 80%:205. The treatment was repeated 3 times to obtain 15 units of experiment. The data obtained were analyzed by variance and if the treatment had an effect on the observed variable then continoued with Duncan test. Result of this study showed that comparation of wheat flour and cowpea flour very affected for protein content and coarse fiber content, affected water content, ash content, color, texture, and overall acepatance. Comparation of 80% wheat flour and 20% cowpea flour is the best characteristics of crackers with criteria 2.24% water contet, 2.62% ash content, 23.93% fat content, 10.70% protein content, 61.28% carbohydrate content, 6.61% crude fiber content, 0.44 power of broke, the color was liked, the aroma was neutral, the taste was liked and a little typical of cowpea, texture was crunchy and liked, and overall aceptance was liked. Abstract

This research was conducted to determine the effect ratio of tapioca and Gracilaria sp. to make the best characteristics of sardinella fish sausage. The research was using completely randomized design with ratio of tapioca and Gracilaria sp. as the treatment which consists of six levels, there were 100% : 0%, 80% : 20%, 60% : 40%, 40% : 60%, 80% : 20%, 0% : 100%. The observed parameters were water content, ash content, protein content, lipid content, carbohydrate content, crude fiber content, and sensory characteristics such as color, flavor, taste, texture, and overall acceptance. The results showed that the treatment characteristics of sardinella fish sausage, such as water content, ash content, lipid content, carbohydrate content, crude fiber content, and sensory characteristics such as color, taste, texture, and overall acceptance. The best ratio for producing the best characteristic of sardinella fish sausage was 80% tapioca : 20% Gracilaria sp. which had water content at 63.2%, ash content 2.29%, protein content 7.24%, lipid content 10.7%, carbohydrate content 16.59%, crude fiber content 6.1%, the color were slightly like, flavor were slightly like, taste were like, texture were like, and overall acceptance were like.

Abstract

The study aims to determine the effect substitution of modified purple sweet potato flour on the characteristics of waffle and to know the best substitution of modified purple sweet potato flour with pregelatinization. The study design used was randomized group design with the treatment substitution of modified purple sweet potato flour and wheat flour, which consists of 6 levels such as: 0% : 100%, 20% : 80%, 40% : 60%, 60% : 40%, 80% : 20%, 100% : 0%. The treatment was repeated 3 times to obtained 18 units of the experiment. The data were analysed by analysis variance and if the treatment had an effect on the variable then continued with Duncan test. The result showed substitution of modified purple sweet potato flour and wheat flour had a significant effect on the content of ash, crude fiber, antioksidan capacity, texture, criteria hedonic and skor of colour, texture and taste. Substitution of modified purple sweet potato flour 100% had the best characteristics, with 41,84% water content, 1,94% ash content, 7,17% coarse fiber content, 81,65 (mg GAEAC/kg) antioksidan capacity, 1,64 N texture, criteria skor colour dark brown, texture soft, taste of purple sweet potato very strong and criteria hedonic colour, aroma, texture, taste and overall acceptance were like.

Abstract

This study aims to gather information of various banana corm effects to the characteristics of lawar. The RBD with single factor was used in this reseach. The type of banana corm used as a treatment that, consist of 6 level ie :raja banana corm, susu banana corm, kepok banana corm, emas banana corm, klutuk banana corm, and muli banana corm. Each treatment was repeated three times to obtain 18 experimental units. The variable observed were : proximate analysis (moisture, ash, protein, fat, carbohydrate), crude fiber, tannin, and sensory analysis ( color, aroma, texture, flavor and over all acceptance).  The data ware analysed by ANOVA test with a 5% significant level. If there was impact on the research, the analysis would be followed by Duncan's Multiple Range Test (DMRT). The results showed the use of various of banana corm give the significant effect to characteristics of lawarie : proximate, crude fiber, tannin, and sensory properties. The best characteristics of lawar banana corm is resulted by klutuk banana corm (B5) which has moisture content 71.21%, ash 1.82%, protein 3.83%, fat 13.63%, carbohydrate 5.14%, crude fiber 10.33%, and tannin 0.28%. Sensory properties   color 5.7 (like), flavor 5.2 (a bit like), the texture 6.0 (like), taste 5.5 (rather like), and 6.2 overall acceptance (like).

Abstract

The purpose of this research was to know the effect of comparison wheat flour with cowpea sprout flour to the characteristics of cookies and to know the right comparison between wheat flour with cowpea sprout flour that was able to produce cookies with the best characteristics. The experimental design used Completely Randomized Design with the treatment comparison of wheat flour and cowpea sprout flour consisting of 6 levels: 100%:0%; 90%:10%; 80%:20%; 70%:30%; 60%:40%; 50%:50%. The treatment was repeated 3 times to obtain 18 units of experiment. The data obtained were analyzed by ANOVA and if the treatment had an effect on the variable then continued with Duncan test. The comparison of wheat flour with cowpea sprout flour significantly affected the content of water, ash, fat, protein, carbohydrate, coarse fiber, color, aroma, texture, taste as well overall acceptance of cookies. Comparison of 80% wheat flour:20% cowpea sprout flour had the best characteristics of cookies the content of water 2.41%, ash 1.26%, fat 23.44%, protein 11.38%, carbohydrate 61.51%, crude fiber 8.94%, the color, flavor, texture, taste, overall acceptance liked, had brown color and very crunchy texture.

Abstract

This study purpose to determine the effect of added sappan wood extract to be sugar palm fruit natural colored toward characteristic sensory evaluation, activities of antioxidant, and to know the best concentrate of sappan wood extract with higgest characteristic sensory and antioxidant. The research design was used Completely Randomize Design with 6 treated exctract concentrating which is 0% ; 2% ; 4% ; 6% ; 8% ; 10%. The treatment was repeated three times so that have 18 unit experimental. Data were analyzed by Analysis of Variance (ANOVA) and then continued with Duncan Multiple Range Test (DMRT). Result of this shown that the extract concentrate have very significant effect towards activities antioxidant, and anthocyanin levels. Have significant effect towards color (hedonic test). Has not significant effect towards flavour, taste, and overall acceptance (hedonic test). Concentrate 10% was the best treatment for produce sugar palm fruit with characteristic sensory color (liked), taste (rather liked), flavour (liked) and overall acceptance (rather liked), the highest value of antioxidant activitiest (based on IC50) 169.65 mg/ml, and anthocyanin 0.40 mg/100g. Abstract

The objective of this study is to determine the inhibition of cemcem leaf extract (Spondias pinnata (L.f) Kurz.) to the growth of Escherichia coli ATCC 8739 in vitro and to observe the type of antibacterial compounds contained in the cemcem leaf extract. This research uses a experimental method with five treatments concentration of cemcem leaf extract that is 10%, 20%, 30%, 40% and 50%. The results of experiment were presented in tables and pictures. Data were analyzed by descriptive statistic. The results showed that the cemcem leaf extract could inhibit the growth of Escherichia coli ATCC 8739 with the highest inhibition at 40% concentration (4.62 ± 1.0953 mm) and cemcem leaf extract contain antibacterial compounds such as flavonoid, tanin and saponin.

Abstract

The purpose of this study was to determine the microbial contamination on beef rendang and hygiene sanitation practices at Padang restaurant in Kuta subdistrict, Badung regency, Bali. This study used survey method with purposive sampling technique. The sampling determination was conducted at several Padang restaurants in Kuta subdistrict, Badung regency, Bali. The data obtained were presented in the form of tables, pictures, and analyzed descriptively. The variable observed were total microbes, Escherichia coli, and Staphylococcous aureus. The results showed that 90% of beef rendang was suitable with requirements of total microbes for processed meat in Indonesia ( SNI< 5 x 105), 80% of beef rendang was suitable with requirements of Escherichia coli for processed meat in Indonesia and 100% of beef rendang was suitable with requirements of Staphylococcous aureus for processed meat in Indonesia. The amount of 90% of beef rendang was cooked in the morning, 20% of rendang was served over 24 hours. The hygiene and sanitation practices at Padang restaurant in Kuta subdistrict, Badung regency were good enough.
