Abstract

The “Indri Sejahtera” Fisheries Group is a beginner group that produces fishery products, but it has encountered several problems in both production and marketing. The variety of processed fish products is still quite limited, so contemporary innovations are needed to compete in the market. One such innovative product is rambutan fish. Rambutan fish is a processed fish product made by grinding fish meat, shaping it into balls, coating it with dumpling skin strips, and deep-frying it until crispy. When fried, the outer layer stands up, resembling the hair-like strands of a rambutan fruit. This community service activity was carried out using a mentoring approach. This mentoring method was implemented through several stages: the delivery of educational materials, the training on how to make rambutan fish, and the monitoring and evaluation of the activity. The training on processing mackerel into a value-added product—rambutan fish—was successfully conducted at the Indri Sejahtera Poklahsar Tarakan. The material was presented by the speaker in a clear and logical accompanied by a hands-on demonstration of how to prepare “ikan bulan-bulan” as “ikan rambutan,” covering everything from ingredient preparation and dough-making to shaping and frying. Based on the questionnaire results, 93% of participants expressed satisfaction with the training activity, with knowledge increasing from 20% to 100% and participants’ skills improving from 10% before the training to 100%. The training was able to enhance partners’ understanding regarding the utilization of moonfish into diversified processed products. This activity provided insights into scientific knowledge and the application of appropriate technology in producing competitive products.

Abstract

The habit of consuming less nutritious snacks among children remains a contributing factor to low protein and essential nutrient intake. The development of healthy snacks based on local fishery resources is one effort to improve children's nutritional quality. This study aims to evaluate the nutritional content and acceptance level of tilapia-based fish sticks (Oreochromis mossambicus) as a healthy snack alternative. The study used a Completely Randomized Design (CRD) with one factor, namely the addition of tilapia fish meat of 0%, 15%, 30%, and 45% with three replications. The parameters observed included water, protein, fat, ash, and carbohydrate content, as well as the level of panelist acceptance through a hedonic test. The results showed that the addition of tilapia fish meat had a significant effect (P<0.05) on increasing protein levels, with the highest value being 23.78% in the 45% treatment, and reducing carbohydrate levels to 49.43%, while water, fat, and ash levels did not differ significantly between treatments. The hedonic test results showed that all formulations were well-received by the panelists, with the formulation with 45% tilapia fish being the most acceptable for appearance, aroma, taste, and texture. This formulation has the potential to be developed as a healthy snack alternative with good nutritional quality and consumer acceptance to support children's nutritional status.

Abstract

Freshwater crayfish (Cherax quadricarinatus) are among the most economically valuable aquaculture species, with strong market potential in both domestic and international markets. However, one of the major challenges in freshwater crayfish farming is the deterioration of water quality caused by the accumulation of uneaten feed and metabolic waste. This study aimed to evaluate the effects of combinations of organic materials used as bioremediation agents on the absolute weight growth and specific length growth rate of freshwater crayfish. The experiment was conducted from August to September 2025 at CV. Cova Aquaculture using a Completely Randomized Design (CRD) consisting of four treatments with three replicates each (12 experimental units) over a 30-day culture period. The treatments consisted of powdered dried Indian almond leaves (Terminalia catappa) applied alone as the control (Treatment A), combined with spinach powder (Treatment B), pumpkin powder (Treatment C), or bean sprout powder (Treatment D). The organic materials were applied every three days and after each water exchange. Data were analyzed using one-way analysis of variance (ANOVA). Water quality parameters, including temperature, dissolved oxygen, and pH, were monitored daily. The results showed that the highest absolute weight growth and specific length growth rate were obtained in Treatment C, with an absolute weight gain of 0.78 g and a specific length growth rate of 2.16% day⁻¹. The combination of dried Indian almond leaf powder and pumpkin powder may function not only as an indirect itional supplement but also as an environmentally friendly bioremediation strategy that helps maintain water quality, thereby supporting the sustainable culture of freshwater crayfish.
