Abstract

Ikan opah (Lampris guttatus) merupakan salah satu jenis ikan laut yang mengandung kadar formaldehida alami cukup tinggi. Hal tersebut menjadi hambatan utama karena disebabkan oleh pendeteksian formaldehida alami dan formaldehida artifisial yang ditambahkan. Pembusukan pada ikan dapat mengakibatkan pembentukan formaldehida secara alami melalui reduksi enzimatik trimetilamina oksida (TMAO), yang mengarah pada pembentukan produk sampingan, yaitu formaldehida dan dimetilamina (DMA). Penelitian ini bertujuan menentukan indikator pembeda antara formaldehida alami dan artifisial berdasarkan parameter kemunduran mutu pada ikan opah selama 14 hari penyimpanan suhu chilling. Penelitian ini menggunakan rancangan acak lengkap faktorial (RALF) dengan perlakuan penambahan konsentrasi formaldehida 0, 2 dan 4% serta waktu penyimpanan selama 14 hari. Parameter yang diamati, yaitu pH, total volatile base (TVB), formaldehida (FA), dan dimetilamina (DMA). Hasil penelitian menunjukkan bahwa konsentrasi formaldehida 0% memiliki nilai yang berbeda nyata dengan konsentrasi lainnya. Formaldehida (FA) dapat menjadi indikator kuat sebagai pembeda asal formaldehida pada ikan. Parameter lain, yaitu pH, TVB dan DMA tidak dapat dijadikan sebagai indikator tunggal, tetapi kombinasi keempat parameter kemunduran mutu dapat digunakan sebagai indikator kuat pembeda asal formaldehida pada ikan opah.

Abstract

The practice of formaldehyde abuse as a food preservative, especially in fishery products, is commonly occurred. However, the differentiation of the formaldehyde origin in fish is difficult to be performed. Meanwhile, physical observation is not sufficient to determine the additional formaldehyde in fishery products. This study aimed to formulate a quantitative method to detect the origin of formaldehyde in fish. The formulation was developed based on the differences in some chemical properties (Formaldehyde (FA), Trimethylamine (TMA) and Trimethylamine oxide (TMAO) of fish treated with and without formaldehyde addition. The fish used as samples were beloso fish/lizardfish (Saurida tumbil). Fish were prepared with and without the addition of  formaldehyde and  then stored in ice for 21 days. The content of FA, TMA, and TMAO of gill and flesh during storage were analyzed every 3 days to determine the difference in the trend of distribution patterns of two fish treatments. The data were statistically processed to produce two mathematical formulas to identify the origin  of formaldehyde. The results reveal that detection of the origin of formaldehyde in fish could be done using two approaches: the diffusion rate approach (validation 75-100%) and the ratio of formaldehyde, TMA, and TMAO (validation 96,47%).Keywords: Formaldehyde, fishery product, food preservative, mathematical formalulation, Surida tumbil

Abstract

Plastic debris and microplastic (MP) have been associated with marinepollution. The present study aimed to assess the MP accumulation in differentorgans (gut and gill) of 6 economically important fish species from twoessential coastal areas, Jakarta Bay and Cirebon Bay. MP was isolated withNaCl, followed by the identification of MP profiles with digital microscope andFourier Transform Infrared Spectroscopy (ATR-FTIR), respectively. The resultshowed that MP was found in all samples. Generally, MP concentration in fishfrom Cirebon Bay was slightly higher than that from Jakarta Bay, with benthicspecies more concentrated than pelagic fish in both sites. Microplastic wasmore concentrated on the gill of fish from Jakarta Bay, in contrast withCirebon Bay. The predominantly MP in Jakarta Bay fish was fiber, while in CirebonBay was fragmented with minor granule and film in both locations. Polyethylene(PE), polyvinyl chloride (PVC), and polypropylene (PP) were the most dominantMP in the fish samples from both study areas. Microplastic size showed thatthe majority (65%) was the small size (1 mm), compared to the biggerone (1-5 mm), while blue, black, and red are the predominantly MP colors.This research supports the need to minimize plastic pollution in aquaticecosystems to tackle the detrimental impact of MP accumulation to fish andhuman health. It is suggested to compare MP profiles on fish samples and inwater or sediment compartments and identify the chemical constituents ofMP.
