Abstract

Dimsum ikan merupakan salah satu diversifikasi produk olahan hasil perikanan yang dapat meningkatkan produksi produk perikanan di Indonesia. Kriteria terpenting pada produk-produk fish jelly seperti dimsum, antara lain adalah kestabilan emulsi, tingkat kekenyalan, dan kerenyahan, yang dapat memengaruhi tingkat kesukaan konsumen. Oleh karena itu diperlukan bahan penstabil yang perlu ditambahkan dengan takaran yang tepat ke dalam adonan dimsum yang dibuat. Karagenan merupakan bahan alami untuk penstabil adonan makanan yang terbuat dari rumput laut. Tujuan penelitian ini adalah menganalisis karakteristik mutu fisik dan hedonik dimsum ikan nila dengan penambahan konsentrasi karagenan yang berbeda. Penelitian ini merupakan penelitian eksperimen dengan metode rancangan acak lengkap satu faktor dengan empat taraf. Faktor yang diuji pada penelitian ini yaitu perbedaan penambahan karagenen sebesar 1%, 3%, 5%, dan 7% sebanyak 2 kali ulangan. Analisis parametrik menggunakan uji F pada Anova dan jika memberikan pengaruh yang berbeda terhadap dimsum ikan nila maka dilanjutkan dengan uji Duncan. Analisis non parametrik menggunakan uji Kruskal- Wallis dan jika berbeda nyata dilakukan uji lanjut Multiple comparison. Hasil penelitian menemukan bahwa penambahan karagenan yang berbeda memberikan pengaruh nyata terhadap parameter uji gigit, uji lipat, kekuatan gel, stabilitas emulsi, warna, tekstur, dan rasa. Nilai uji fisik akan berbanding lurus dengan penambahan karagenan pada dimsum ikan nila. Formulasi terbaik berdasarkan tingkat kesukaan panelis adalah formulasi A1, dengan spesifikasi karateristik mutu fisik berupa uji gigit dengan katagori normal, uji lipat dengan katagori tidak retak bila dilipat satu kali, kekuatan gel 242.16 g.cm, daya mengikat air 70.22 %, dan stabilitas emulsi 71.34 %.

Abstract

The use of fish high in sarcoplasm such as tongkol (Euthynnus sp) as raw material for surimi requires a washing process to increase the yield and level of gel strength. Modifying the pH of washing surimi to be more alkaline is an effective method for increasing protein yield in the surimi processing. The aim of this research is to obtain the optimal surimi protein yield and determine the characteristics of the resulting gel. The research results showed that the optimum pH for washing tongkol surimi was pH 8 with 2 times washing (p>01). The proximate values ​​of tongkol are 76.58% water, 18.23% protein, 2.34% fat, 1.22% ash and 1.63% carbohydrates (By different). The proportion of sarcoplasmic protein and myofibrils in tongkol meat is 49.0% and 45.90%. The highest yield was obtained when modifying the water pH to 8 and twice washing time is about 64.75%. The texture characteristics of the kamaboko surimi profile analyzer were modified with washing water pH 8 and twice washing time, hardness 300 g, gumminess 202.90 g and chewiness 98.97 mJ. The water holding capacity (WHC) of kamaboko surimi tongkol is 53.50%.

Abstract

The patin catfish process into smoked catfish kabayaki will produce organic wastes such as fishbones. One of the fish waste handling method is to process the waste into derivative product such as gelatin which can be utilized further as an edible coating precursor. The aim of the research was to analyze the effect of the application of fishbones waste-based edible coating on smoked catfish kabayaki product on organoleptic quality deterioration and shelf life of the product in refrigeration temperature, and the consumer preferences. Organoleptic quality deterioration was measured by descriptive analysis for 11 days of storage in refrigeration temperature. Costumer preferences was measured by hedonic test. The result shows that the application of edible coating on the product cause negative impacts on initial organoleptic quality and organoleptic quality deterioration rate of the product, especially on aroma and texture parameters. The recommended shelf life of the product was 6 days at most based on the organoleptic quality measured (all the parameters values were above 7). Hedonic test also showed negative impacts of edible coating application on all the measured parameters. Based on the results of the research, the application of fishbones waste-based edible coating on smoked catfish kabayaki product was determined to be ineffective and was not recommended in an effort to inhibit the organoleptic quality deterioration rate of the product during refrigeration temperature storage.
