Abstract

Kepmenkes No.129/Menkes/SK/II/2008 concerning Minimum Hospital Service Standards (SPM) states that as much as 20% of food leftovers are not eaten by patients. Patient nutrition becomes inadequate and inefficient due to wasted costs. This study aims to analyze food waste from inpatients at the hospital. Using a cross-sectional design, measurements were made of 113 inpatients at Ahmad Yani Metro Hospital, taken proportionally from classes I, II, and III with the consecutive method. As the dependent variable is leftover food and the independent variable is food appearance (portion and serving), food taste (seasoning and food temperature), and food from outside the hospital. Data were collected by interview technique using a closed list of questions and assessment using the Comstock Form. The analysis will be carried out to the bivariate level using a t-test. The results of this study indicate that 79.6% of inpatients at the Ahmad Yani Hospital in Metro City left less than 20% of food left. Meanwhile, the average leftover food reached 18.5% (SD=14.7%). There was a relationship between food presentation (p-value=0.018), food temperature (p-value=0.048), and food from outside the hospital (p-value= 0.044) with leftover food. Meanwhile, the portion of food (p-value=0.178) and seasoning (p-value=0.115) had no significant relationship with food waste. Therefore, it is recommended to hospitals as nutrition service providers improve the vegetable menu in the menu cycle.

Abstract

The incidence of Chronic Energy Deficiency (CED) in pregnant women can increase the mother's risk of anemia, low body weight, bleeding, infectious diseases, and low birth weight. One of the efforts to reduce the incidence of CED pregnant women is the provision of additional food (PMT). Steamed Bolu can be an alternative to PMT for pregnant women. This study aims to determine the acceptability of beetroot cake as PMT for pregnant women and the effect of giving beetroot steamed cake on pregnant women's Hb levels. This type of research is an experiment with a completely randomized design (CRD). The number of experimental units was 4 treatments and each treatment was repeated with 3 replications. The results of the study were analyzed by ANOVA. The results of the preference test showed that Formula 2 (addition of 150gr of beets) turned out to be preferable in terms of taste (p-value=0.452), and aroma (p-value=0.713). Meanwhile, F1 (addition of 125gr of beets) is preferred in terms of color (p-value=0.922), texture (p-value=0.201), and aroma (p-value=0.713). Formula 3 (addition of 175gr of beetroot) turned out to contain higher energy, protein, fat, carbohydrates, Fe, and water content than other formulas. The results of the trial on pregnant women showed that there was no significant difference between Hb levels before and after being given a steamed sponge. This study concludes that formula 1 (F1) is preferred. Then formula 3 (F3) contains the highest nutrient content. There was no difference in the Hb levels of pregnant women before and after being given steamed beet cake.

Abstract

Makanan pendamping air susu ibu (MP-ASI) adalah asupan transisi dari asupan yang awalnya hanya susu menuju ke makanan semi padat. Masa peralihan dari ASI eksklusif menuju makanan keluarga juga dikenal sebagai masa penyapihan (weaning period). Cakupan wasting pada balita di Indonesia pada tahun 2022 sebesar 7,7% dan cakupan underweight balita sebesar 17,1%, sedangkan untuk cakupan stunting pada balita di Indonesia sebesar 21,6% (SSGI, 2022). Penelitian ini bertujuan untuk mengetahui Praktik pemberian MP-ASI pada baduta 6-24 bulan Wasting dan Stunting di wilayah kerja Puskesmas Kemalo Abung Kab. Lampung Utara Jenis penelitian ini adalah penelitian deskriptif. Penelitian ini dilakukan di wilayah kerja puskesmas Kemalo Abung bulan April 2023. Sampel pada penelitian menggunakan total populasi yaitu 36 ibu yang memiliki bayi usia 6-24 bulan Wasting dan Stunting di wilayah kerja Puskesmas Kemalo Abung Kab. Lampung Utara. Analisis data yang dilakukan adalah analisis univariat untuk mendeskripsikan karakteristik setiap variabel penelitian. Hasil penelitian menunjukkan bahwa ibu memiliki tingkat pendidikan SLTA/sederajat 47,2%, ibu tidak bekerja 86,1% dan respoden berpendapatan rendah sebanyak 80,6%. Ibu yang memiliki pengetahuan cukup sebesar 55,6%. Dalam praktik pemberian MP-ASI masih banyak yang tidak sesuai dengan anjuran praktik pemberian MP-ASI diantaranya pemberian MP-ASI dini (63,9%), keragaman pangan MP-ASI (69,4%), tekstur MP-ASI (55,6%), frekuensi pemberian MP-ASI (58,3%), dan porsi pemberian MP-ASI (77,2%). Praktik pada pemberian MP-ASI di wilayah kerja Puskesmas Kemalo Abung Kab. Lampung Utara diharapkan dapat lebih baik lagi dengan pendampingan tenaga kesehatan yang melibatkan kader posyandu dengan meningkatkan kemampuan dan keterampilan ibu baduta dalam menyiapkan MP-ASI berupa edukasi, konseling serta praktik demonstrasi MP-ASI Pangan Lokal.

Abstract

Weight and height measurements are crucial for monitoring toddler growth and enabling early detection of developmental disorders. Cadres at posyandu (integrated health service posts) play an essential role in this monitoring; however, many lack adequate skills. This study employed a pre-experimental design with pre-test and post-test assessments conducted in the Kedondong Health Center area of Pesawaran Regency. The study involved 47 randomly selected active posyandu cadres, focusing on their skills in measuring toddler height. The treatment variable was the support provided by health workers to these cadres. Skill measurements were taken twice: before (pre-test) and after (post-test) assistance. A checklist outlining the steps for measuring children's height was utilized as the assessment tool. Data analysis included the Shapiro-Wilk test for normality and the Wilcoxon test to evaluate differences in skills pre- and post-mentoring. Results demonstrated a significant improvement in average skill scores, with the infant meter increasing from 6.44 to 8.92 and the stadiometer from 6.06 to 9.11. Statistically significant differences were found before and after mentoring for both instruments (p-value=0.012 for the infant meter; p-value=0.000 for the stadiometer). The study recommends that health workers effectively mentor cadres using these measurement tools, aligning with existing standard operating procedures (SOPs).
