Abstract

The purpose of this study was to determine the comparison of soybean milk with beetroot extract and concentrate of coconut milk on the characteristics of vegetable ice cream.This research method was conducted in two stages, namely preliminary research consist of analysis of total dissolved solids from the ratio of soybeans to water, namely (1: 4), (1: 6) and (1: 8). The primary research was carried out by using a 3x3 factorial system of randomized block design (RBD)/ Rancangan Acak Kelompok (RAK) with three repetitions. Factor (A) was comparison of soybean juice with beetroot porridge, consisting of 3 (three) levels a1 = 1: 1, a2 = 1: 2, a3 = 2: 1, and factor (B) was the use of coconut milk concentration, consisting of 3 (three ) level b1 = 18%, b2 = 20% and b3 = 22%. The results showed that the comparison of soybean milk with beetroot slurry influences fat content, overrun, melting time, and organoleptic tests including color, aroma and texture. Coconut milk concentration affects organoleptic test of texture attributes. The interaction between soybean juice comparison with beetroot extract and concentration of coconut milk on vegetable ice cream affected the organoleptic test of taste attributes but did not affect the fat content, protein content, overrun, melting time and organoleptic test of the color attributes, aroma and texture. The comparison of soybean juice with beetroot slurry influences fat content, overrun, melting time, and organoleptic tests including color, aroma and texture.

Abstract

Penelitian ini dilakukan untuk mengetahui pengaruh rasio kaldu bandeng presto dengan gula aren terhadap karakteristik kecap ikan. Penelitian ini bertujuan untuk memberikan informasi kepada masyarakat dan industri pangan tentang pemanfaatan dan diversifikasi pangan lokal olahan dengan bahan baku bandeng presto. Stok bandeng presto kaya akan protein, karbohidrat dan lemak sehingga dapat memberikan nilai tambah dan meningkatkan nilai ekonomis dari kaldu bandeng presto dengan gula aren, serta memberikan alternatif pilihan untuk memanfaatkan kaldu bandeng presto yaitu masih dapat diterima secara organoleptik. Penelitian ini menggunakan Rancangan Acak Kelompok (RAK) dengan satu faktor dan enam ulangan. Penelitian ini menggunakan faktor tunggal yaitu rasio kaldu bandeng presto dengan gula aren yang terdiri dari 4 taraf yaitu (2: 3), (1: 1), (3: 2) dan (3: 1). Respon kimiawi pada kecap ikan meliputi kandungan karbohidrat, kandungan protein, kandungan lemak, dan kandungan air. Respon fisik kecap meliputi viskositas dan total padatan terlarut. Uji organoleptik dilakukan berdasarkan tingkat kesukaan panelis dengan metode hedonik meliputi warna, rasa, dan aroma sebagai respon uji Hasil penelitian menunjukkan bahwa perbandingan stok bandeng presto dengan gula aren berpengaruh nyata terhadap karakteristik kecap ikan yang meliputi rasa, aroma, karbohidrat, protein, lemak, air, viskositas, dan total padatan terlarut. Namun, itu tidak terlalu mempengaruhi warnanya.

Abstract

The purpose of this study is to determine the use of extracting materials suitable for dragon fruit skin extraction so that the functional compound (anthocyanin) obtained optimally. The research method consisted of preliminary research and main research. Preliminary research was conducted to determine the maceration method (maceration and maceration modification with agitator) to be used in the main research and raw material analysis. The main research is conducted to determine the appropriate extracting agent (various types of acids and mixtures). The experimental design used in the study was Randomized Block Design (RAK) with 1x6 factorial pattern with 4 replications. Response variable in this research is physical response include analysis of dye and calculation of rendement and chemical response which include determination of acidity level (pH), vitamin C content analysis, water content analysis, and antioxidant activity analysis. The result of preliminary research is obtained that the maceration method chosen is the usual maceration method and the result of raw material analysis which includes the vitamin C level of 184,937 mg vitamin C / 100 gram sample; analysis of dye where L * 37.56 a * 9.29 b * -0.31; and acidity level (pH) 4.73. While based on the results from the main study obtained that the selected extracting material is 2% tartrate (w / v). Response result obtained that is yield 19,09%; dye analysis with L* 48,12 a * 31.02 and b * 2,70; acidity level (pH) 0.73; rate of water 6,3%; vitamin C levels of 167.63 mg vitamin C / 100 gram samples; as well as antioxidant activity of 10,242.83 ppm.

Abstract

Enzyme Modified Cheese (EMC) is the cheese flavor that was being made through an accelerated enzymatic process by biochemical processes that occur on protein and fat in natural cheese. The research objective is to determine the effect of stirring speed and temperature of fermentation in the manufacture of Enzyme Modified Cheese (EMC) that was made with raw materials Cheddar cheese. The benefits of this research are as diversification to dairy products thereby increasing the economic value and flavor. The study consisted of preliminary and primary research. The preliminary study aims to determine the optimal fermentation time consisting of 6 hours, 8 hours and 10 hours in the manufacturing of Enzyme Modified Cheese (EMC) that taken for the reference for main research. The main research aims to determine the stirring speed and optimal fermentation temperature for the manufacture of Enzyme Modified Cheese (EMC). Stirring speed used was 50 RPM, 60 RPM, and 70 RPM, while the fermentation besides, temperature used was 400C, 450C, and 500C. The experimental design to be used in the research was (3x3) factorial in a randomized block design (RBD) with three replications. Preliminary and primary research responses include chemical response that consists of a water amount, protein amount and fat amount, as well as sensory responses to the aroma and flavor. Based on the results of this study concluded that the sample was selected from the preliminary study is a sample with a fermentation time of 10 hours. Results of a major study presented stirring speed factors affect the water amount, fat amount, aroma and flavor. Fermentation temperature factors affect the water amount, fat amount, aroma and flavor. The interaction between the rate of stirring and the temperature of fermentation affect the water amount, protein amount, aroma and flavor.

Abstract

Tujuan penelitian ini untuk memperoleh produk pangan darurat dan diharapkan sebagai alternatif produk pangan yang memiliki kandungan gizi lengkap sehingga dapat memenuhi kebutuhan energi. Penelitian ini menggunakan rancangan percobaan faktorial 3x3 dalam rancangan acak kelompok (RAK) dalam ulangan sebanyak 3 kali, dimana faktornya meliputi : pengaruh konsentrasi bubur buah (A) yang terdiri dari tiga taraf, yaitu a1 (5%), a2 (10%), a3 (15%) serta konsentrasi tepung kedelai (B) yang terdiri dari 3 taraf, yaitu b1 (14%), b2 (16%), b3 (18%). Respon pada penelitian ini adalah respon kimia, yaitu kadar protein, kadar karbohidrat, dan kadar lemak. Respon fisik yaitu kekerasan. Respon organoleptik yang meliputi warna, rasa, dan tekstur dan pengujian aktivitas antioksidan pada sampel terpilih.Konsentrasi bubur buah berpengaruh nyata terhadap kadar karbohidrat, kadar protein, kadar lemak, kekerasan, rasa, dan warna. Konsentrasi tepung kedelai berpengaruh nyata terhadap kadar karbohidrat, kadar protein, kadar lemak, tekstur, dan kekerasan. Interaksi antara konsentrasi bubur buah dan tepung kedelai berpengaruh nyata terhadap kadar karbohidrat, kadar protein, kadar lemak, dan kekerasan pada fit bar black mulberry. Berdasarkan respon fisik dan respon kimia yang telah dilakukan a3b3 (konsentrasi bubur buah 15% dan konsentrasi tepung kedelai 18%) adalah prduk terpilih dengan kadar karbohidrat 43,21%, kadar protein 11,53%, kadar lemak 9,23%, kekerasan 2,15 mm/sec/100 gram, dan aktivitas antioksidan sebesar 139,480 ppm (sedang).
