Abstract

Pentingnya praktik higiene dan sanitasi, yang merupakan salah satu inisiatif untuk mencegah kontaminasi makanan. Higiene dan sanitasi dari makanan serta minuman merupakan upaya pencegahan yang memfokuskan kepada kegiatan dan yang perlu dilakukan untuk membersihkan makanan serta minuman dari semua bahaya yang dapat mengganggu kesehatan, dimulai sebelum diprosuksinya makanan, dilanjutkan melalui pengolahannya, penyimpanannya, dan transportasi, dan diakhiri dengan makanan dan minuman yang telah diproduksi siap untuk dikonsumsi oleh masyarakat umum atau konsumen. Tujuan penelitian ini untuk mengetahui gambaran higiene dan sanitasi warung makan bubur Manado (Tinutuan) di Kecamatan Langowan Utara. Penelitian ini dilakukan di Kecamatan Langowan Utara, dengan total populasi dan sampel 10 warung makan. Metode Penelitian ini adalah survei deskriptif. Variabel pada penelitian ini yaitu Higiene dan Sanitasi. Hasil penelitian ini mendapati bahwa secara keseluruhan warung makan yang ada di Kecamatan Langowan Utara belum memenuhi syarat Higiene dan Sanitasi. Karena batas layak higieen dan sanitasi warung makan yang memenuhi syarat bila jumlah skor = 685 dan dikatakan tidak memenuhi syarat bila jumlah skor <685. Oleh karena itu diharapkan kepada pemilik/penjamah makanan untuk dapat memperhatikan higiene dan sanitasi warung makan. Kata Kunci : Higiene, Sanitasi Warung Makan  ABSTRACTThe importance of hygiene and sanitation practices, which is one of the initiatives to prevent food contamination.  Hygiene and sanitation of food and beverages is a prevention effort that focuses on activities and what needs to be done to clean food and beverages from all hazards that can interfere with health, starting before food is produced, continued through its processing, storage, and transportation, and ends with food and beverages.  Drinks that have been produced are ready for consumption by the general public or consumers. The purpose of this study was to describe the hygiene and sanitation of a Manado porridge food stall (Tinutuan) in North Langowan District.  This research was conducted in North Langowan District, with a total population and sample of 10 food stalls.  Methods This research is a descriptive survey.  The variables in this study are Hygiene and Sanitation.  The results of this study found that overall the food stalls in North Langowan District did not meet the Hygiene and Sanitation requirements.  Because the limits for proper hygiene and sanitation are food stalls that meet the requirements if the total score = 685 and is said to be ineligible if the total score is <685.  Therefore, it is expected that the owner/food handler can pay attention to the hygiene and sanitation of food stalls. Keywords: Hygiene, Food Stall Sanitation

Abstract

  Background: River water quality is influenced by various pollutants, particularly organic and chemical contaminants resulting from anthropogenic activities. In rural and peri-urban areas, domestic waste is a major contributor to the decline in water quality, which may pose risks to environmental and public health. Purpose: To analyze river water quality based on lead (Pb), Biological Oxygen Demand (BOD), and Chemical Oxygen Demand (COD) parameters, and to identify the psychological impacts on communities living along the river. Method: A quantitative descriptive study with an observational approach was conducted using the grab sampling method. Water samples were collected from three points representing upstream, midstream, and downstream sections. Laboratory analyses were performed, and the results were compared with the water quality standards established by Government Regulation of the Republic of Indonesia No. 22 of 2021. The study was carried out from November to December 2025. Results: BOD values at all sampling points (7 mg/L upstream, 12 mg/L midstream, and 6 mg/L downstream) exceeded the permissible limits, indicating non-compliance with water quality standards. In contrast, COD values ranged from 7 to 8 mg/L across all points and remained within acceptable limits. Pb concentrations ranged from 0.001 to 0.006 mg/L, which were also below the regulatory threshold. Conclusion: The findings indicate that the deterioration of water quality in the Sawangan River is primarily driven by organic pollution rather than chemical or heavy metal contamination. These results highlight the need for improved domestic waste management and continuous monitoring to maintain river water quality.
