Abstract

SDGs are a global concern of the international community, including the Indonesian nation. There are many activities carried out by the international community to address this SDGs issue. Starting from real actions in the field to a continuous data collection process. In Indonesia, data collection has been carried out repeatedly, but the follow-up to each data collection is felt to be lacking, therefore Hamzanwadi University, using the Gemilang Village Thematic KKN application, has also played an active role in the data collection process. However, up to now, information about data collection results and follow-up actions has not been provided properly, in fact none of the data collection results have been processed to obtain clear and measurable information. Through internal higher education research carried out by Hamzanwadi University, an attempt was made to carry out research starting with the SDGs data processing process, namely education and health, to provide knowledge and information about whether or not there is an influence of education on the health of the people of Suralaga District, East Lombok Regency, so that if the influence If education plays a significant role, the Suralaga District Government can take concrete steps to improve it in the future. From the results of data processing it can be concluded that the influence of education on the level of public health is very high, using 90% training data and 10% testing data can achieve an accuracy of 88.61%, which means 700 data show a positive trend of education on the level of public health

Abstract

Abstrak - Kamaboko adalah salah satu produk olahan dengan memanfaatkan ikan sebagai raw material. Kamaboko ikan lele dengan metode pengukusan mengandung protein sebesar 8%. Sehingga perlu dilakukan upaya peningkatan kadar protein dengan penambahan isolat protein kedelai. Tujuan penelitian ini adalah untuk mengetahui pengaruh penambahan isolat protein kedelai dan untuk mendapatkan konsentrasi penambahan isolat protein kedelai yang menghasilkan kualitas kamaboko ikan lele terbaik. Metode penelitian yang dilakukan adalah metode eksperimen dengan menggunakan rancangan acak lengkap (RAL) sederhana. Perlakuan penambahan isolat protein kedelai pada kamaboko ikan lele yaitu (6;6.5;7;7.5;8%). Perlakuan penambahan isolat protein kedelai berbeda terhadap kamaboko ikan lele memberikan pengaruh terhadap nutrisi produk. Perlakuan terbaik diperoleh pada kosentrasi isolat protein kedelai 7,5 %. Kadar protein sebesar 12,79%, kadar air 71,27%, kadar lemak 6,61%, kadar abu 1,73%. Kata Kunci : Clarias gariepenus, Isolat Protein Kedelai, Kamaboko, Nutrisi. Abstract - Kamaboko is one of the processed products by utilizing fish as raw material. Catfish kamaboko by steaming method contains 8% protein. So it is necessary to increase the protein content by adding isolate soy protein. The purpose of this study was to determine the effect of the addition of isolate soy protein and to obtain the concentration of the addition of isolate soy protein that produced the best quality of catfish kamaboko. The research method used is an experimental method using a simple completely randomized design (CRD). The treatment of adding isolate soy protein to catfish kamaboko was (6;6.5;7;7.5;8%). The addition of different isolates soy protein to catfish kamaboko had an effect on the nutrition of the product. The best treatment was obtained at the soy protein isolate concentration of 7.5%. Protein content is 12.79%, water content is 71.27%, fat content is 6.61%, ash content is 1.73%. Keywords : Clarias gariepenus, Isolat Soy Protein, Kamaboko, Nutrition.

Abstract

Tujuan penelitian adalah melakukan identifikasi material atau bahan iota caragenan-FPM kulit ikan patin-Tepung buah mangrove spesies Bruguerra gymnoryza sebagai bahan pembuatan biocomposite edible film. Karakteristik fisiko-kimia  bahan dan interaksi bahan melalui ikatan gugus fungsi yang diamati dengan menggunakan FTIR dapat digunakan untuk mengetahui kualitas biocomposite edible film. Interaksi komponen protein, hidrokoloid sebagai polimer dan karbohidrat serta lipid dalam bentuk starch pada campuran bahan dapat mempengaruhi Tensile Strength, hardness, elongasi, kadar air, kelarutan dan Swelling power serta WVTR biocomposite edible film. Selain itu keberadaan gugus fungsional dalam bahan dan interaksi dalam campuran bahan bias juga digunakan untuk melihat hubungan kualitas biocomposite edible film. Metode penelitian adalah penelitian eksperimental dengan melakukan  identifikasi yang datanya disajikan secara deskriptif  meliputi data karakteristik kimia dan gugus fungsi  iota caragenan, FPM kulit ikan patin dan tepung buah Mangrove spesies Bruguerra gymnoryza. Hasil penelitian menunjukkan bahwa. Bahan campuran Iota caragenan-FPM kulit ikan patin-tepung buah Mangrove lindur (Bruguerra gymnoryza) memberikan kuat tarik tertinggi sebesar 0,9 (N/mm2), hardness tertinggi sebesar 18,07 (N), kadar air tertinggi sebesar 23,38%, elongasi tertinggi sebesar 76,03%, WVTR sebesar 20,34 (gr/m2/h). Kesimpulan penelitian adalah Penggunaan campuran antara karbohidrat  dan protein dapat memperbaiki kualitas biocomposite edible film. Interaksi bahan terhadap kualitas biocomposite dipengaruhi adanya ikatan hydrogen atau Hydrogen bonding yang dapat diamati melalui FTIR.Disarankan untuk melakukan uji kelarutan biocomposite edible film untuk penggunaan lebih lanjut pada bidang pangan.
