Abstract

The occurrence of stunting in toddlers is often unnoticed, and after two years, it is seen that the toddler is short. Chronic nutritional problems in toddlers are caused by poor nutritional intake for a long time due to parents/families do not know or are not aware to provide food that suits their child's nutritional needs. The purpose of this research is to provide an overview of the sociocultural community that forms the understanding of toddler mothers about stunting, consumption patterns, personal and hygienic parenting patterns, and the environment of the Kapuas riverbank area of Tanjung Hilir Pontianak City. The research method is Qualitative Research using a Descriptive research design. The sample in this study was 40 toddlers aged 24-59 months. Sampling techniques using purposive sampling method, Data analysis is done descriptively. The study results obtained fostering patterns in toddlers' normal nutritional status, and stunting nutritional status has the same parenting pattern. Feeding children in a day less than three times a day in toddlers stunting nutritional status. Environmental sanitation or hygiene assessment in the Kapuas Tanjung Hilir River Bank area showing an unhealthy environment. Conclusion There are differences in usage that form the mother's understanding of stunting, consumption patterns, parenting patterns, and personal and environmental hygiene in the Kapuas Tanjung Hilir River Bank area.

Abstract

Bubur bayi instan merupakan makanan pendamping ASI (MP-ASI) yang berbentuk bubuk dan bersifat instan sehingga dalam penyajiannya tidak diperlukan proses pemasakan. Beranekaragam pangan lokal sumber karbohidrat seperti sagu, pisang dan umbi-umbian dapat dimanfaatkan sebagai pangan alternatif yang relatif lebih aman dalam penyediaan energi dalam pembuatan bubur instant. Penelitian ini bertujuan untuk mengembangkan formulasi bubur instant berbasis pangan lokal ditinjau dari citarasa, sifat fisikokimia dan kandungan gizi. Metode penelitian ini merupakan penelitian eksperimen dengan rancangan acak lengkap (RAL) dengan perlakuan 3 jenis formula. Cita rasa bubur instant dilakukan dengan uji organoleptiuk dan dianalisis dengan uji friedman. Penetapan kandungan gizi dilakukan dengan analisis proksimat dan kandungan antioksidan dengan metode DPPH. Hasil uji freidman menunjukkan bahwa tidak ada pengaruh yang nyata penambahan tepung ubi jalar ungu, tepung pisang dan tepung kacang kedelai terhadap daya terima warna, aroma dan rasa bubur instant. Namun penambahan tepung ubi jalar ungu, tepung pisang dan tepung kacang kedelai memberikan pengaruh yang nyata terhadap daya terima tekstur bubur instant.

Abstract

The study explores the potential of utilizing talas tuber flour (Colocasia Esculenta L. Schott) and katuk leaf flour (Sauropus androgynus L. Merr) in biscuit production to enhance nutritional value and promote lactation in breastfeeding mothers. Talas, rich in complex carbohydrates, fiber, minerals, and vitamins, and katuk leaves, high in protein, vitamins A and C, iron, and lactogenic active substances, were used to develop biscuits in three different formulations: F1 (95%: 5%), F2 (90%: 10%), and F3 (85%: 15%). The organoleptic test identified F1 as the best formulation, and proximate analysis showed that F1 contained 6.14% moisture, 2.52% ash, 27.04% fat, 8.59% protein, 50.3% carbohydrates, and 6.70% crude fiber. The biscuits also contained 0.209% phosphorus, 80.4 mg/kg iron (Fe), and 142 mg/kg calcium (Ca). These findings suggest that biscuits made from talas tuber and katuk leaf flour can be a valuable nutritional supplement, potentially aiding in the improvement of breast milk production.
