Abstract

Fruit juice is one of the favorite soft drink products in Indonesia. PT. Amanah Prima Indonesia is an agroindustry company that produces the fruit juice RTD for the HORECA market. In the company’s activities, the company will not be separated from a plan. One of the planning activities is forecast demand. The results of product demand forecast can assist in the decisions making to determine the amount of raw material inventory needs. The purpose of the research are: 1) to find out the forecast method used by the company, 2) to analyze the best demand forecast method, and 3) to analyze the optimal amount of the raw material inventory requirements based on the best forecast method results. This research used product sales data in the period of May 2016-April 2018. Demand forecast analysis used the ARIMA method and Exponential Smoothing method. Then inventory analysis used the Min-max Stock method. The result of this research shows that the forecasting system used by the company is currently unrealistic because it has big significant of difference with the actual data. The best time series model of forecast analysis acquires ARIMA model with value of MSE was smaller than DES (Holt) model. Analysis of the raw material inventory requirements with Min-Max Stock results obtain supplies the raw material of strawberry puree is 1688 kilograms, with safety stock of 106 kilograms puree, minimum stock of 830 kilograms puree, maximum stock of 1447 kilograms puree, and reorder point for the next purchase of strawberry as much as 562 kilograms.

Abstract

This study aims to analyze the level of farmer capacity in managing lowland rice farming in Pandeglang district and the determinants that can influence the capacity building of lowland rice farmers in supporting family food security in Pandeglanag Regency. The population in this study were lowland rice farmers who were in the research location. The research location was in three districts, namely Munjul, Sobang and Panimbang districts. The research design used qualitative and quantitative approaches involving 144 respondents representing three districts, the data collected were primary data and secondary data. Primary data were collected through interviews using questionnaires, in-depth interviews, observation and documentation study. The data consists of the characteristics of the respondent (ξ1); Technological innovation (ξ2); Extension activities (ξ3); Capacity (η1); and Family food safety (η2). The selection of respondents was carried out by proportional random sampling (proportionally random sampling) based on the research criteria. Data analysis used descriptive statistics, one way ANOVA and Structural Equation Modeling (SEM). The results showed that the capacity of lowland rice farmers was in the medium category. The element that most influenced the capacity level was the respondent's characteristic of 0.81 (76.25 percent) through land tenure and farming experience. Meanwhile, extension activities only contributed 0.07 (2.3 percent) through indicators of extension methods and intensity. Meanwhile, technological innovation still has a negative effect on the capacity of farmers in increasing family food security. In general, the capacity of lowland rice farmers has high support for family food security, especially in indicators of consumption levels and food sustainability.

Abstract

Diversity of Food Consumption Based On Hope Food Patterns in Rural and Urban Area of Serang Regency. The objectives of the study are: To determine the diversity of food consumption based on the expected food patterns, the energy consumption of the people, what factors are hindering food diversification, formulate models for diversifying consumption patterns in rural and urban areas. The research is conducted in a span of 8 (eight) months, starting from May to December 2020. The study is conducted in Serang Regency, Banten Province. The research location is chosen deliberately. The research method used a survey, with sampling is cluster sampling, where 100 people as the sample taken (50 people in urban areas and 50 people in rural areas). The data collection method used is the 1x24 hour recall method and the frequency questionnaire method, then analyzed with the PPH software from the Food Security Agency. Data processing and analysis are carried out using the help of the SPSS (Statistical Product and Service Solution) and LISREL (Linear Structural Relationships) programs. The results showed that the levels of energy and protein consumption of respondents in rural areas were 90.60% and 110.46%, while in urban areas it was 93.21% and 124.27%. The energy consumption level for energy is in the medium category and the level of protein consumption is good. The diversity of food consumption based on PPH is still below the standard, namely PPH in rural areas 63.25 and urban areas 71.22.

Abstract

ABSTRACTTalas beneng is indigenous food from Pandeglang that had potential to be alternative carbohydrate source beside wheat flour. The aim of this study was to characterize physical and chemical properties of flour from Talas beneng. Physical properties this flour had L 91.13, a 2.75, b 11.27, and white degree 68.56%. This flour had brownish color. The result of chemical properties showed that water content, ash, fat, protein, carbohydrate, starch, amylose, and amylopectin respectively 9.04%, 2.25%, 0.17%, 6.73%, 81.81%, 56.29%, 19.27%, and 37.02%. Beneng taro flour could be made product that need low protein flour such as cookies, crackers, brownies, waffle, crepes, or pancake.

Abstract

Fermentation of rice bran is applied to facilitating the release of and may lead to higher yields of bioactive compound in its extraction product. The use of electrolyzed water as the solvent and the influence of this water on antioxidant activity of the fermented rice bran extract compounds is unclear. The bran of white (Jalawara) and red (Marahmay) rice from Banten Province are fermented using R. oligosporus and extracted using electrolyzed water at 2.5, 6.5, 7, 9.5, and 11.5 of pH value. This research presents that Marhmay contains more active antioxidant compounds with 422.11 ppm of IC50 by DPPH evaluation method and effectively extracted by electrolyzed water at pH 2 yielded of 3% extracted phenol more than water at pH 7. Furthermore, this treatment gives insights on the potency of electrolyzed water as solvent on extraction method of biological compound.
