Abstract

Postmenopausal women are prone to obesity. Soy milk and mung bean porridge contain fiber andflavonoids which are beneficial as anti-obesity. This study aimed to analyze the effect of soy milk and mungbean porridge on waist circumference among postmenopausal women. This was an experimental study usingpre-posttest with the control group. The study was conducted for 4 weeks from December 2018 to January2019 in Serengan, Surakarta. Subjects were randomly divided into control group (n=10), soy milk (n=10) andcombination of soy milk and mung bean porridge (n=10). Soy milk and mung bean porridge provided were 240ml and 180 ml/day/person and given for 4 weeks, respectively. Data were then analyzed with paired t-test, oneway ANOVA and Bonferroni test. There were no significant differences in the nutritional status, occupation andeducation level of the three groups. There was a significant reduction in waist circumference in both the soymilk and combination group compared to the control group (p<0.05). The mean decrease in waist cirumferencewas -2.40±2.23 cm in the soy milk group and -5.30±3.20 cm in the combination group. Soy milk and mungbean porridge can be alternative therapies to reduce waist circumference among postmenopausal women.

Abstract

The objectives of the study were to examine the effect of diet high in alpha-linolenic acid (ALA) on omega-3 long chain polyunsaturated fatty acids (n-3 LCPUFA) and the health status of the heart. Diets were based on a commercial starter diet, with a low level of fat. The experimental diets contained two levels of ALA (2.23 and 19.37%), with the total fat content was approximately 5%. Pure or blended vegetable oils were included at a level of 2.8% in order to produce diets with the desired levels of linoleic acid (LA) and ALA. The ratio of LA to ALA of the diets  was  9.75:1 for control diet and 1.37:1 for high ALA diet. Each diet was provided ad libitum for the duration of the 28-d growth period. At 28 days of age, six selected birds from each pen (12 birds per group) were weighed individually and hearts were collected for analysis. A ratio of right ventricle mass (RV) to total ventricle mass (TV) was used to indicate the health status of the heart. Results showed that dietary treatment increased the level of ALA from 0.1% (control diet) to 0.5% (P<0.01). Increasing levels of dietary ALA raised the level of n-3 LCPUFA and total n-3 in heart tissues by 4-5-fold. There was no significant difference observed in the level of heart LA, arachidonic acid (AA) and total n-6. The increased levels of dietary ALA did not cause changes in the ratio of RV to total TV. In conclusion, it appears clear that based on our data, increasing ALA content in the diet of chickens could potentially be beneficial for the health of the birds; however, further work is necessary.

Abstract

Halal is one of important aspects in consumer protection. Meat and processed meat products are food that should be controlled strictly because those are prone to be adulterated by pork contamination. Therefore, it is necessary to provide detection technique which is accurate, fast and cheap. The objective of this research was to identify the presence of impurities of pork meat on raw chicken meat using gene Cyt-b with duplex-PCR analysis. This research used six samples of raw chicken meat and raw pork. Raw chicken meat was bought from supermarkets in the city of Surakarta and raw pork was obtained from pig slaughterhouse. The percentage of raw pork contamination on raw chicken meat was designed as much as 1, 5, 10, and 25%, respectively. The DNA genome was isolated according to DNA isolation protocol from Genomic DNA Mini Kit. In addition, duplex-PCR was performed based on protocol of KAPA2G Fast Multiplex PCR kit. The data was descriptively analyzed by directly looking the DNA bands on the gel documentation apparatus. The result showed that specific DNA bands for chicken and pig were completely appeared on 1.5% of agarose gels. Duplex-PCR detect contamination of pork on raw meat of chicken at all contamination levels. This research proved that the duplex-PCR detect the contamination of pork until the level of 1%.

Abstract

This study was conducted to evaluate the external physical quality and sensory quality of eggs fed diets added with purslane meal (Portulaca oleraceae) as a source of alpha-linolenic acids. The materials used were Hy-Line Brown laying hen (n= 150 hens, 54 weeks old). The design of the study was a one way classification with five experimental diets. Each diet was replicated five times with five hens for each replication. The diets were formulated by supplementing purslane meal to a basal diet. The levels of purslane meal were 0% (T0), 2% (T1), 4% (T2), 6% (T3), 8% (T4). The diets were given to the hens for 35 days with 7 days of adaptation period. To analyse the external quality of the eggs, a total of 30 eggs (n=6 per dietary treatment) collected at day 33, 34, and 35 were used. The sensory analysis used eggs from day 32. The results of the external quality of eggs showed that the addition of purslane meal (Portulaca oleracea) into the diets of laying hens reaching a level of 8% tended to increase egg weight and did not decrease shell thickness, shell weight, the shape index, and specific gravity (P>0.05). Dietary inclusion of purslane meal up to a level of 8% significantly increased (P<0.01) the preference of egg yolk color while texture, taste, flavor, and overall acceptance were not affected. The conclusion is that purslane meal can be included in the laying hen diets up to a level of 8% without decreasing the external physical quality and the sensory quality of boiled eggs. Diets containing purslane meal increase the preference of egg yolk color due to the increase in yolk color intensity.

Abstract

The oligosaccharide content of red dragon fruit shows prebiotic properties as nutrients for the growth of probiotic bacteria in yogurt, as well as provides the additional substrate to increase probiotic activity reaching the large intestine so that it affects appetite regulation caused by gastric emptying rates and increased postprandial amino acids. The purpose of this study was to analyze the effect of giving red dragon fruit and red bean yogurt to the satiety index in 60 obese adolescents for 14 days, who live in Mataram City, West Nusa Tenggara Province. Research respondents were divided into five groups with each group consisting of 12 people. In the control group (K), group P1 was given 70 g of red dragon fruit and 169 ml of red bean yogurt, group P2 was given 140 g of red dragon fruit and 113 ml of red bean yogurt, and group P3 was given 210 g of red dragon fruit and 57 ml of red bean yogurt, group P4 was only given 280 g of red dragon fruit. This research was an experimental trial with a randomized controlled trial design, pre-post test design with control group design. Appetite levels including hunger, satisfaction, and desire to eat were evaluated using the Visual Analogue Scale (VAS). Normality test using Kolmogorov-Smirnov test. Statistical analysis using Paired-t-test, Wilcoxon, and One Way Anova with a significant value of p <0.05. There was a difference in the satiety index between the 4 treatment groups at 0, 30 and 120 minutes (p <0.05) and there was no significant difference at the 60th minute. and 90 (p>0.05). Meanwhile, the control group compared to the 4 treatment groups showed that there was a significant difference in satiety index (p<0.05). Giving red dragon fruit and red bean yogurt resulted in a different satiety index at 0, 30, and 120 minutes compared to the control group.

Abstract

Latar belakang. Air susu ibu eksklusif dianjurkan diberikan pada bayi berat lahir rendah (BBLR), tetapi pertambahan berat badannya sering tidak memadai. Hindmilk merupakan bagian air susu ibu (ASI) yang mengandung kalori dan lemak tinggi. Tujuan. Untuk mengetahui apakah pemberian hindmilk meningkatkan status gizi yang lebih baik daripada ASI standard. Metode. Penelitian Randomized Control Trial dilakukan di unit perawatan neonatus antara Februari-Mei 2022. Kriteria inklusi adalah bayi dengan berat lahir 1000-2000 gram yang berumur 0-30 hari, sudah minum penuh ASI eksklusif,  dan payudara ibu mampu memroduksi ASI minimal 200 mL/hari. Kriteria eksklusi adalah bayi dengan kelainan bawaan, gangguan metabolik, ibu COVID-19, atau ada kontra-indikasi pemberian ASI. Subjek yang sesuai kriteria inklusi dan eksklui dirandom dengan cara blok untuk dimasukkan dalam kelompok perlakuan (hindmilk) atau kontrol (ASI standard).Hasil. Terdapat 54 subjek yang masuk penelitian yang terbagi pada kelompok hindmilk (28 subjek) dan kelompok ASI standard (26 subjek). Penurunan status gizi sangat kurus pada kelompok hindmilk ASI lebih banyak daripada ASI standard (71,42% vs 57,69%). Peningkatan status gizi lebih baik pada kelompok hindmilk (p=0,019).Kesimpulan. Peningkatan status gizi pada BBLR yang diberi hindmilk lebih baik daripada ASI standar.Tujuan: untuk menganalisis pengaruh pemberian hindmilk ASI terhadap peningkatan status gizi dan lama rawat bayi terhadap berat badan lahir rendah dan sangat rendah.Metode: Penelitian ini merupakan penelitian Eksperimental Randomized Control Trial dengan rancangan pre posttest with control group desain. Pengambilan sampel dilakukan secara consecutive sampling yang dilakukan pada bulan Februari-Mei 2022 di Ruang Perinatal RSUP Dr. Sardjito Yogyakarta. Subjek penelitian ada 54 Bayi Berat Lahir Rendah (BBLR) 1000-2000g. Pengamatan dilakukan mulai bayi masuk dirawat, fullfeeding sampai dengan diperbolehkan pulang.Hasil: Penelitian ini menunjukkan adanya peningkatan berat badan dan status gizi secara signifikan pada BBLR 1000-2000g yang diberikan hindmilk ASI (p=0,019 < 0,05). Penurunan status gizi sangat kurus pada BBLR 1000-2000g yang diberikan hindmilk ASI dari 71,42% (20 BBLR) menjadi 7,14% (2 BBLR) dan mix ASI dari 57,69% (15 BBLR) menjadi 30,77% (8 BBLR). Sementara itu tidak ada perbedaan yang bermakna pada lama rawat inap BBLR 1000-2000g yang diberikan hindmilk ASI dan mix (foremilk dan hindmilk) dengan rata-rata lama rawat 22 hari dan 20 hari (p= 0,370 > 0,05). Lama rawat inap dapat dipengaruhi oleh morbiditas dan gejala pada BBLR.Kesimpulan: Hindmilk ASI secara signifikan dapat meningkatkan status gizi BBLR 1000-2000g. Tidak ada perbedaan secara signifikan lama rawat BBLR 1000-2000g yang diberikan hindmilk dan mix (foremilk dan hindmilk) ASI. Perlu penelitian lebih lanjut untuk melihat umur kehamilan, gejala dan morbiditas BBLR.

Abstract

Rambak (hide’s cracker) produced by small and medium-scale local communities still relies on production processes that have been passed down from generation to generation, resulting in minimal application of information and technology related to food safety. Thus, training in food hygienic practices needs to be carried out on different food handlers in order to provide an overview of the level of success of a program. This research aims to evaluate the impact of food hygienic practices training on knowledge, perception, attitude, and practice of food handlers in producing rambak. Training activities were carried out at the rambak production site involving 14 workers. The training process included presentations of raw materials (hides), rambak qualities, and good hygienic practices, then it was followed by demonstrations of good hygiene practices. Furthermore, the workers put into practice the work method demonstrated by the team. The assessment of knowledge, attitudes, and practices using questionnaire were carried out before and after the training. After training, the majority of rambak workers understand how to use raw materials and food hygiene practices, but they lack knowledge about packaging aspects and good rambak quality, such as washing fresh ingredients with tap water. Worker attitudes show that they have positive attitudes toward good hygiene practices, with the exception of touching food with bare hands. Food hygiene practice demonstrates that they had good hygienic practices, but they did not separate raw materials from cooked rambak. The effect of food hygiene practices training on internal characteristics demonstrates that workers' attitudes improved significantly (p<0,05), but not their knowledge and practice of hygienic principles. In summary, several aspects of worker characteristics need to be improved includes knowledge, attitude, and practice of food hygiene. The training effect improved rambak workers' attitudes but did not improve their knowledge or practice of hygienic principles

Abstract

The high prevalence of malnutrition and stunting in Indonesia is evidence of a lack of protein consumption in toddlers. One source of protein that has the perfect protein content is fish because fish contains essential amino acids that meet the needs of the body. The lack of fish processing that is in demand by toddlers is the reason for the lack of fish consumption in Indonesia. Fish consumption in Indonesia is shown to be lower than in Singapore and Malaysia. Nuggets are one of the processed foods that are in demand by children because of their various shapes. It is expected that many studies on the effect of fish-based Nuggets can be used as PMT for toddlers with malnutrition and stunting. Objective: Analyzing the effect of giving fish nuggets to increase weight and height in toddlers. Methods: This study is a literature review sourced from Google Scholar, PubMed, Proquest, and ScienceDirect related to the effect of giving fish nuggets on the weight and height of toddlers. The Data used in the literature review is research conducted over the past 10 years. Results and discussion: from the results of the selected articles obtained several 4 by the criteria and in line with the objectives of the study. Conclusion: there is an effect of giving fish nuggets to toddler weight and there is no effect of giving fish nuggets to toddler height.
