Abstract

Tujuan penelitian ini adalah mengkaji karakteristik biji kakao kering yang dihasilkan dari proses fermentasi dalam sekala kecil dan mengkaji pengaruh penggunaan wadah fermentasi yang berbeda pada kapasitas kecil, lama fermentasi serta pebedaan suhu pengeringan terhadap kualitas biji kakao kering yang dihasilkan. Penelitian ini menggunakan Rancangan Acak Kelompok dengan tiga faktor. Faktor pertama adalah wadah fermentasi (A) yang terdiri dari dua jenis yaitu wadah kotak kayu dan wadah karung. Faktor kedua adalah lama fermentasi (B) yang terdiri dari dua taraf yaitu 5 hari dan 6 hari. Faktor tiga adalah suhu pengeringan (C) yang terdiri dari 50o C dan 60o C. Masing-masing perlakuan diulang sebanyak 2 kali. Hasil penelitian menunjukan bahwa perlakuan biji kakao yang difermentasi dalam wadah kotak kayu selama 6 hari dan dikeringkan pada suhu 50oC (W1L350) menunjukkan karakteristik biji kakao yang baik, selanjutnya perlakuan tersebut merupakan perlakuan yang direkomendasikan sebagai perlakuan terbaik. Abstract

The purpose of this study was to determine the effect of variations in container dimensions and fermentation time on the quality of dried cocoa beans from fermented with different container dimensions variations and also to determine the best treatment of the results of drying cocoa beans after the fermentation process. This research uses a factorial completely randomized design with two factors, namely the first factor is the variation of different container dimensions and the second factor is the fermentation time, which consistsof three levels, namely 5 days, 6 days and 7 days. The results of the research carried out showed that the dimensions of the container treatment and fermentation time affect the fermentation temperature, the number of seeds per 100 grams, water content, skin content and the results of the split test ie unfermented seeds, semi-fermented seeds and perfectly fermented seeds. From the results of observations that have been made, the best treatment on the fermentation temperature parameters is the largest dimension of the wooden box container treatment with 6 days fermentation time, which shows the number of results of the most perfectly fermented seed splitting test is the most compared to the unfermented split test and fermented half seed

Abstract

Active packaging is an innovative packaging concept to maintain quality and increase product shelf life where active compounds added to the packaging can interact with food products and the environment, so research on active packaging is worth dev eloping. This study aims to produce the most optimum combination of KMnO 4 concentration and castor oil concentration to produce bioplastic active packaging characteristics that are in accordance with SNI Standards and International standards, and to determ ine the mathematical model of tensile strength response, elongation, elasticity, using Response Surface Methodology (RSM). Data was processed using Design Expert ® 12 software. The results of testing and analysis obtained a quadratic model on the observed responses. KMnO 4 concentration of 1.75% and castor oil concentration of 1% was the optimum combination selected. The verification test results showed the actual value of tensile strength 18.56 MPa, elongation 0.02 % modulus young 659.15 MPa. The response o f the combination of KMnO4 concentration and optimum castor oil concentration has a desirability value of 0 . 751% indicating that 75.1% of the expected response criteria can be met.

Abstract

This research aims to obtain the best concentration of coconut water and citric acid as a solution to extend Chrysanthemum cut flowers’ freshness period. The research is consisted of 25 experimental units, each experiment was repeated twice to gain 50 experimental units. The research uses a completely randomized design (CRD) with an experimental factor. The factor is a combination of coconut water and citric acid. The concentration of coconut water which was used 0%, 4%, 8%,12% and 16% meanwhile the concentrations of citric acid which was used 0 ppm,100 ppm, 200 ppm, 300 ppm, and 400 ppm. The parameters which is measured are;the flower‘s freshness period, percentage of flower bloom, the absorbed solution and the flower’s color. Based on the results of the research, it is known that the best treatment is the concentration of coconut water 4% and citric acid 400 ppm that will gain 11 days of flowers’ freshness period, the percentage of flowers’ bloom is 65.5%, the total absorbed solution is 177.5 ml with flower’s color becoming very faded and slightly brown.

Abstract

PT Nusantara Segar Abadi is a company that focuses on the cultivation of Cavendish bananas located in Jembrana Regency. According to the Central Statistics Agency, banana production data in Indonesia reached 9,245,427 tons in 2022, with PT NSA contributing 68,254 tons to the production in the same year. The challenge faced by PT NSA is t he improper handling of banana waste, which can lead to pollution and aesthetic issues. This research aims to create compost from banana waste using the continuous flow bin vermicomposting method. The research treatments include 7 kg of cow dung bedding wi th 1 kg of worms (A1), 7 kg of cow dung bedding with 1.5 kg of worms (A2), and 7 kg of cow dung bedding with 2 kg of worms (A3), each receiving 1.25 kg of banana waste every 3 days. Observations are conducted according to the Indonesian National Standard 1 9 - 7030 - 2004. The obtained data are analyzed using descriptive statistical analysis. After 18 days, the composting performance and characteristics of the compost vary. In terms of the C/N ratio parameter, treatment A1 exceeds the maximum standard at 20.12%, while treatment A2 is at 16.43%, and treatment A3 is at 16.11%, meeting the standard. Other characteristics include a pH value of 7.4 - 7.5, moisture content of 8.8% – 9.69%, organic C content of 27.43% – 29.37%, total N content of 1.46% – 1.71%, phosphorus (P) c ontent of 0.15% – 0.25%, and potassium (K) content of 0.33% – 0.37%, all of which comply with the compost standards specified in SNI 19 - 7030 - 2004. Treatment A3, with 2 kg of worms, proves to be the best treatment as technical parameters and macroelement conten t in all tests meet the standards

Abstract

The aim of this research was to determine the effect of etanol vapor on the quality and the shelf life of mangosteen at the room temperature. Three different volumes of ethanol, namely 0 ml, 2 ml and 4 ml, were trapped in the 5gram carrageenan placed in the tea sachets. The sachet was then put on the basal of styrofoam tray on which 5 fruits were placed and then wraped by streching film LDPE. Control fruits or un-treated fruits were also provided as comparison. The result showed that the ethanol vapor treatments, in general, significantly reduced the intensity of damage, weidght loss, slowing the change rate of texture, color of fruit surface and aril, total soluble solid and vitamin C of the aril, compared to the control fruits. The ethanol vapor was also able to give better preferences of panelists on the color and flavor of the aril, as well as the overall performances of the fruits compared to the controls. The 4 mL ethanol per package created ethanol vapor of which the best vapor to reduce the rate of damage and the change of quality and increase the panelists preferences.

Abstract

The purpose of this research is knowing the influence of different consentration mixture between sesame and citronella oil in water as coating material on the quality of citrus fruits during storage at room temperature. Consentration sesame oil emulsion varied 0%, 0.5%, and 1% in citronella oil combination 0%, 0.5%, 1% and 1.5%. The additional ingredients used to make emulsions were 1% of tween 80, 0.5% oleic acid, and 3% alcohol. Untreatment control fruit was also prepared for comparison. The experiment was conducted using a Completely Randomized Design (CRD) with three replications. The results showed that the treatment of sesame and citronella oil significantly affected the quality and storage period of citrus fruits. The combined concentration of 0.5% sesame oil and 0.5% citronella oil provides the best results which can reduce weight loss, decay damage, pH alteration and total dissolved solids of fruit juice, and fruit hardness.

Abstract

Coffee is a very potential raw material when utilized in the form of solid fuel. Coffee husk is classified as an agricultural waste and its processing is made into artificial solid fuel used to replace alternative energy s ources expressed as briquettes. Th e research objectives expected in this study are to get the effect of variations in the particle size of raw materials and the percentage that glues well to the characteristics of the briquettes created, and to get the tre atment that produces briquettes wi th the best characteristics according to SNI. The experimental design in this research uses factorial RAK through 2 factors consisting of particle size with 3 levels (S1: 30 mesh, S2: 40 mesh, S3: 60 mesh) and the second f actor is the percentage of adhesiv e with 3 levels (L1: 30%, L2: 35%, L3: 40%). The combined design of the research trial through 2 trials obtained 18 trial units. The parameters observed in this research are water content, ash content, compressive strength , mass density, volatile matter, b ound carbon and combustion speed. The results showed that the interaction between particle size and percentage of coffee skin briquette adhesive contributed significantly to the quality parameters of the briquettes created . T he treatment of briquettes with a particle size of 60 mesh and a percentage of adhesive of 40% (S3L3) was declared the treatment that created the best quality briquettes. The briquettes from the S3L3 treatment had a moisture content of 4.43% ( bb ) , ash co nte nt of 4.69%, compressive strength of 202.81 kgf/cm 2 , mass density of 0.64 g/cm 3 , volatile matter of 53.68%, bound carbon value of 51.01%, and burning rate of 0.032 g/min

Abstract

The purposes of this research was to determine the effects of various concentrations of beeswax emulsion as a coating material on the quality of Siam citrus fruits during storage. The research used completely randomized design (CRD) with three different concentration of beeswax emulsion in water consisted of 0%, 2%, and 4%. Fruit without treatment provided as a control. The analysis of variance showed that the emulsion concentrations of significantly (P<0.05) affected the weight loss, damage intensity, total soluble solid, texture,color difference, vitamin C, total acid and organoleptic prefrences (peel color, texture, flavor, and overall acceptance) of the fruits. The concentration of 4% was the best beeswax emulsion to delay quality deterioration of citrus fruits during storage at the room temperature.

Abstract

The physical characteristics of bioplastic packaging can be affected by the type and concentration of filler. This research was conducted to obtain bioplastic packaging films that met the Indonesian National Standard (SNI). The experimental design used was a randomized block design (RBD) with the first factor being the type of filler (J) with 2 levels: ZnO and cellulose. The second factor is the concentration of filler (K) with 3 levels, namely 0.5; 0.7; 0.9g. Each treatment was repeated three times, so the re were a total of 18 experimental units. The data will be analyzed using variance. If it turns out that the treatment has a significant effect on the parameters being observed, then the next step is to perform Duncan's test. The results indicated that the different types and concentrations of filler in the manufacture of bioplastic packaging had an effect on the values of tensile strength, elongation, elasticity, water absorption but had no effect on the rate of bioplastic biodegradation. Treatment with cellulose filler concentration of 0.5 g was the treatment that produced bioplastic packaging with the best characteristics, namely tensile strength of 14.31 MPa, elongation of 24.76%, elasticity of 53.72 MPa, water absorption of 0.71% and long biodegradati on time 7.5 days.
