Abstract

Noodle is one of the most popular foodstaple in the community. Nowdays, the noodle was made as a replacement food of other staple foods such as rice. Generally, raw material of noodle is flour. However, the flour can also be modified with other foods such as tempe and carrot. Based on its nutrient composition, tempe and carrot are potential as a source of nutrition, which contains proteins, fat, calcium, phosphorus, iron, vitamin A, tiamin , vitamin C, riboflavin, niasin and fiber. The purpose of this research is to know the nutrient content and acceptability from the noodle with addition of tempe and carrot. This research is a research experiment making wet noodle with addition of  tempe and carrot by comparison (30% : 20%, 25% : 25%, 20% : 30%). Panelists in this study are university students of public healty in University North Sumatera , as many as thirty peoples. Acceptance of test data was analyzed by anova test and double Duncan test, and nutrient content is determined by using DKBM. The parameters analyzed  include the lucrative nature of the organoleptic color, aroma, taste and texture of wet noodle. The results of this research showed that the organoleptic test of color, flavor, taste, and texture are the most preferred panelist is wet noodle by addition of 25% tempe and 25% carrot. Based on the analysis of varians, the addition of tempe and carrot in different concentration on the creation of a wet noodle gave different effects of calor, flavor, taste, texture of a wet noodle. It is suggested for consumer to make wet noodles with addition of tempe and carrot  as an alternative food for rice. In addition, it is necessary to implement other foods diversification by added tempe and carrot to enrich  nutrient food. Keywords : wet noodle, tempe, carrot, organoleptic test, nutrient content

Abstract

Anemia is a condition in which the hemoglobin (Hb) level in the blood is lower than the normal range based on age and gender. Adolescent girls are at a higher risk of experiencing anemia because their growth requires higher nutritional intake, and other factors such as insufficient iron consumption, menstruation, medication, and tea consumption after meals can contribute to it. The negative impacts of anemia on adolescent girls include reduced immunity, impaired concentration in learning, decreased fitness, and decreased productivity. Community engagement activities aim to provide socialization about Anemia Prevention to adolescent girls in Desa Sigalogo, Tapanuli Utara Regency. The methods involved in these activities include needs identification, program planning, socialization implementation, and evaluation. The results of these activities demonstrate an improvement in the knowledge of adolescent girls regarding anemia and an increased awareness of the importance of prevention. They also performed well in the post-test, which measured their understanding after the socialization.

Abstract

Nutritional problems in infants and toddlers are still a serious challenge in health development in Indonesia, especially in areas with limited access to information and health services. This community service activity aims to conduct anthropometric measurements as an effort to detect the nutritional status of infants and toddlers early and provide nutritional education to parents in Laucih Village, Medan Tuntungan District. This activity was carried out by lecturers and students of the Nutrition Bachelor Study Program, North Sumatra Health Institute (INKESSUMUT) as part of the 2025 community service program initiated by the INKESSUMUT Research and Community Service Institute (LPPM).The methods used include measuring weight, height/length, and upper arm circumference (LILA) of 45 toddlers using WHO standard measuring instruments. The data was then analyzed using the WHO Z-score reference to determine nutritional status. In addition to measurements, this activity also includes nutritional education to mothers of toddlers regarding the importance of balanced nutrition, correct feeding practices, and regular monitoring of child growth through Posyandu.The results of the activity showed that the majority of toddlers had good nutritional status (68.9%), but there were still cases of malnutrition (17.8%), severe malnutrition (4.4%), and risk of stunting (8.9%). These findings indicate the need for further intervention and assistance to families who have children with problematic nutritional status. The nutrition education provided was also well received by the community and was able to increase parents' understanding of parenting and feeding patterns. This community service activity shows the effectiveness of collaboration between higher education institutions and the community in supporting the national program to accelerate the reduction of stunting. In the future, similar activities need to be continued with a more comprehensive and sustainable approach, including training of cadres and utilization of local data for planning nutritional interventions. This community service is also a real form of implementing the Tri Dharma of Higher Education in the field of community service which has a direct impact on community welfare.
