Abstract

This IbIKK is one of the entrepreneurship activities in the Laboratory of Processing of Animal Product Technology Faculty of Animal Husbandry Brawijaya University. The objective of this activity was to produce fermented milk products, such as yogurt ice candy, yogurt drink, kefir drink, kefir mask and kefir toner that was free of preservatives and has been done research and ready to sell to various consumer: direct consumers, through cooperatives in campus environment and through electronic media. The production of Probiotics was conducted in Processing Technology Laboratory using batch pasteurizer, and incubator to produce quality yoghurt and kefir. The fermented milk products were packed in packs: yogurt ice candy (40 mL) yogurt drink (125 mL), kefir drink (125 mL), kefir mask (100 g) and kefir (100 mL) toner at consumer prices compared to brands other. The marketing method was conducted by direct promotion in Brawijaya University (students, staffs and lecturers), through partnership of Malang university cooperative, through stall around student's residence, canteens in elementary, junior and senior high school in Malang and through the website, www.natural-probiotic.co.id and through social networking.

Abstract

Tujuan dari penelitian nugget ayam yang ditambahkan tepung porang ini adalah mengetahui pengaruh penambahan tepung porang yang berbeda jumlahnya dalam nugget ayam dan mengetahui pengaruh tepung porang terhadap sifat kimia dan organoleptik nugget ayam. Metode yang digunakan dalam penelitian ini adalah percobaan dengan menggunakan rancangan acak lengkap dengan 5 perlakuan dan 5 kali ulangan. Perlakuan yang dilakukan adalah: P0 = nugget ayam dengan 0% tepung porang; P1 = nugget ayam dengan 5% tepung porang; P2 = nugget ayam dengan 10% tepung porang; P3 = nugget ayam dengan 15% tepung porang; dan P4 = nugget ayam dengan 20% tepung porang. Hasil dari penelitian ini menunjukan bahwa penambahan tepung porang pada nugget ayam memberikan perbedaan yang sangat nyata (P<0.01)terhadap kadar air, rasa, dan tekstur, sedangkan pada  kadar protein dan lemak tidak memberikan perbedaan yang sangat nyata (P>0.05). Perlakuan terbaik pada penelitiian ini adalah penambahan tepung porang 10% pada nugget ayam, hasilnya menunjukan pada kadar air (9,65±1,98%), kadar protein (11,19±0,13%), kadar lemak (3,19±0,06%), rasa (3,68±0,62) dan tekstur (3,52±0,50). Kata Kunci : tepung porang, nugget ayam, uji kima, uji organoleptik

Abstract

The purpose of this research was to determine the characteristic of physical properties and emulsifying activity index with different concentrations (0%, 1%, 3%, and 5% (v/v)) on the viscosity, solubility, turbidity, emulsifying activity index, and microstructure. The experiment was designed by Completely Randomized Design (CRD). The data were analyzed by Analysis of Variance (ANOVA) and continued by the Least Significant Difference (LSD) test. The addition of TiO2 with different concentrations gave a highly significant difference characteristic on syneresis, viscosity, solubility, turbidity, and emulsifying activity index (P<0.01) and the addition of TiO2 with different concentrations show the different effect on protein casein and chitosan aggregate. The surface microstructure of nanocomposite casein-chitosan addition of TiO2 for low-level concentration TiO2. It can be presumed presence of TiO2 as a photocatalyst indicated increasing the syneresis, viscosity, solubility, turbidity, and emulsifying activity index.

Abstract

The objectives of this study were to determine of bioactive compoounds from the different plants such as kapok, calliandra and rubber. The samples were obtained from Kediri (Calliandra), Sragen (Rubber) and Pasuruan (Kapok). The results showed the different of bioactive compounds. It had the following phenolic content ranged from 309.12 ± 33.40 mg/GAE kg (Kapok honey) to 557.93 ± 13.41 mg/GAE kg (Calliandra honey), flavonoid content ranged from 47.25 ± 1.49 mg QE/100 g (Kapok honey) to 156.27 ± 5.69 mg/GAE kg (Calliandra honey), vitamin C content ranged from 25.47 ± 1.62 mg/100 g (Kapok honey) to 31.04 ± 1.45 mg/100 g (Calliandra honey). The IC50 of Calliandra honey (3.36 ± 0.89 mg/mL) showed that antioxindat activity is higher than Rubber and Kapok honey (15.08  ± 1.49 mg/mL and 16.83 ± 1.23 mg/mL, respectively).

Abstract

The materials used in this research were egg crackers made from albumen, tapioca, wheat flour, garlic, salt, water and sodium bicarbonate. The variables measured were expansion power, breaking force, water content, protein content, mineral content and organoleptic quality (colour, flavour, crispiness). Data were analized with analysis of variance and followed by Duncan's Multiple Range Test.The result showed that the preservation with paraffin and the use of sodium bicarbonate had a highly significant effect (P<0.01) on expansion power, breaking force, water content, protein content, minerals content and organoleptic quality (colour, flavour and crispiness). It's interaction had a highly significant effect (P<0.01) on protein content and organoleptic quality (flavour and crispiness) of eggcrackers. It is found that egg coated with paraffin can be kept for 60 days had highfoaming foroe similar value with egg without preservation however, it haddisadvantages on expansion poweq breaking force and colour than fresh egg, so suggested to improve by use increase quantity albumen and decrease the Use of Sodium bicarbonate.

Abstract

The purpose of this research was to determine the best concentration of adding sago flour in yoghurt based on viscosity, overrun, melting rate and total solid of yoghurt ice cream. The experiment was designed by Completely Randomized Design (CRD) using four treatments were 0 %, 2 %, 4 %, 6 % from volume of fresh milk and four replications. The data were analyzed by using Analysis of Variance (ANOVA) and continued by Duncan’s Multiple Range Test (DMRT). Result of this research showed that concentration of adding sago flour in yoghurt gave highly significant difference effect (P<0.01) on viscosity, overrun, melting rate and total solid of yoghurt ice cream. It can be concluded that the adding of sago flour 2% in yoghurt gave the best result with the viscosity was 1750.75 cP, overrun was 25.14%, melting rate was 39.13 minutes/50 g, total solid was 36.20% and gave the best quality of yoghurt ice cream.

Abstract

The purpose of this research was to determine the best treatment NaOH addition on pidan eggs. The materials used for this research was pidan made from duck egg, NaOH, salt, black tea and water. The method was used experiment laboratory and Completely Randomized Design (CRD) using 4 treatments and 4 replications. The treatments were T0 (control), T1 (1.4%), T2 (2.8%) and T3 (4.2%). The data were analyzed by Analysis of Variance (ANOVA) if there was significantly continued by Duncan’s Multiple Range Test (DMRT). The result showed that NaOH concentration on pidan eggs gave significant effect (P<0.05) on albumen protein content, gave highly significant (P<0.01) on pH value and yolk colour. The conclusion of this research was 4.2% NaOH addition on pidan egg was the best treatment with gave result yolk and albumen pH: 10.69; 10.25, albumen protein content 26.89%, egg yolk colour L* (lightness), a* (redness), b* (yellowness):  26.89; 11.33, and 26.77. The suggestion of this research was ussed different immersion time on pidan egg production.

Abstract

This study aims to determine the antimicrobial activity of red fruit paste against Staphylococcus aureus FNCC-0047 and Eschericia coli FNCC-0091 by using ethanol and n-hexane as well as the total plate count value of the patty with red fruit paste added on different observations day. The concentration of paste extract for antimicrobial activity test was 6.25%, 12.5%, 25%, 50%. The calculation of the total value of the burger patty plate is calculated on the 3rd, 7th and 14th d with the red fruit paste content in the formula as much as 0%, 5%, 10%, 15%. The results showed that the fatty acids of red fruit paste were dominated by oleic acid and linoleic acid, which are unsaturated fatty acids and palmitic acid, which are saturated fatty acids. The yield of red fruit paste in n-hexane solvent was higher than ethanol solvent. There was a significant difference (P <0.05) from the use of different solvents to the mean clear zone of the two bacteria tested. The antibacterial activity shown by the ethanol extract and n-hexane extract of red fruit paste was in the inactive category at the 6.12% level, the moderate category at the 12.5% to 25% level and the strong category at the 50% level. There was a significant difference (P <0.05) from the total microbial value in each treatment where the higher the red fruit paste content in the patty, the lower the total microbial value found on each d of observation. The use of red fruit paste at a level of 10% to 15% can withstand the rate of microbial growth

Abstract

Mayonnaise is an oil-in-water emulsion product that uses egg yolk as a stabilizer agent. Low-fat mayonnaise is made as a product modification to make it healthier by reducing fat. whey protein concentrate is given as a natural emulsifier. The objective of this study was to determine the effect of whey protein concentrate addition on low-fat mayonnaise based on carbohydrates, ash, fat content and emulsion droplets. The material used in this study was vegetable oil, and the addition of whey protein concentrate. This research used was a laboratory experimental method with a completely randomized design with 4 treatments and 5 replications. The treatments using control treatment without the addition of whey protein concentrate and treatment using whey protein concentrate as much as 5%, 10%, and 15% of the total use of oil. The variables measured were carbohydrate, ash, fat, antioxidants and emulsion droplets. The results showed that the use of whey protein concentrate in mayonnaise gave highly significant difference (p<0.01) in carbohydrate and fat content, gave a significantly different result (p<0.05) in the ash content, didn’t gave significant difference (p>0.05) in antioxidants and gave a highly significant difference (p<0.01) in the length of the emulsion droplet diameter so that it looked uniform in shape and size. The conclusion of this study is the use of whey protein concentrate as much as 15% produces the best low-fat mayonnaise
