Abstract

Penelitian ini bertujuan untuk menganalisa pengaruh pemberian perbandingan dolomit dengan tanah dan perlakuan volume air terhadap pertumbuhan bibit kelapa sawit di pre nursery. Penelitian dilaksanakan di Lahan Penelitian FP UDA dari bulan Mei hingga bulan Agustus 2020. Metode penelitian ini menggunakan Rancangan Acak Kelompok (RAK) faktorial yang terdiri dari dua faktor. Faktor pertama adalah perlakuan perbandingan dolomit dengan tanah yang terdiri atas 3 taraf yaitu: D0 = kontrol, D1 = 1:100 dan D2 = 2:100. Faktor kedua adalah volume penyiraman air (V) terdiri atas 3 taraf yaitu : V1 = 0.1 l/polybag/hari, V2 = 0.2 l/polybag/hari dan V3 = 0.3 l/polybag/hari. Hasil penelitian memperlihatkan bahwa perlakuan perbandingan Dolomit dengan tanah tidak nyata terhadap seluruh variabel respon yang diamati. Perlakuan volume penyiraman berpengaruh nyata terhadap tinggi tanaman dan luas daun. Tinggi tanaman dan luas daun tertinggi diperoleh pada perlakuan volume penyiraman 0.3 l/polybag/hari.

Abstract

Naniarsik adalah bahan pangan berupa ikan ditambah beraneka bumbu, yang dengan cukup banyak air dididihkan dan dimasak dengan menggunakan api sedang secara konstan hingga bumbu meresap ke dalam ikan, dan meningggalkan cairan yang sangat sedikit. Bumbu yang ditambahkan terdiri dari beraneka rempah dan herbal, yang sebagian digiling halus, dicincang atau cukup dimemarkan. Selain menjadi penyedia zat gizi, bumbu naniarsik memiliki karakteristik fungsionalitas dalam menjaga kesehatan tubuh. Tulisan ini mengangkat potensi dari naniarsik sebagai pangan fungsional melalui penelusuran literatur terhadap rempah dan herbal yang digunakan sebagai bumbu naniarsik. Aspek-aspek fungsional yang terdata ternyata dapat menjaga dan meningkatkan sistem kekebalan tubuh ditambah dengan khasiat diantaranya seperti antioksidan, antiimflammatori, antivirus, dan anti mikroba. Di tengah pandemi saat ini, ketika obat yang dapat secara spesifik mematikan virus SARS-CoV-2 masih belum ditemukan, maka masyarakat perlu manjaga sistem immune tubuh sebagai suatu strategi untuk mencegah penyakit infeksi tersebut, berbarengan dengan tindakan-tindakan pencegahan secara fisik dan vaksinasi. Naniarsik merupakan salah satu jenis pangan lokal yang mudah diakses dan dipersiapkan dalam rangka membantu untuk tetap sehat.

Abstract

Being living organs, fresh harvested fruits and vegetables remain metabolically active and undergo ripening and senescence processes. They needs oxygen to stay alive, which is vital for energy production through respiration process. Modified Atmosphere Packaging (MAP) technology utilises in-packaging equilibrium atmosphere, in which the relatively low oxygen and high carbondioxide concentration is achieved naturally inside the package as respiration occurs, which later on leads to a lower respiration rate. Low oxygen concentration could also be achieved by replacing some oxygen with nitrogen and/or application of oxygen scavenger inside in package, thus the respiration rate is reduced and the aging process is retarded. The use of packaging films of correct intermediary permiability to meet a desirable equilibrium modified atmosphere become a key to the succes of MAP. A new technique, so called Perforation-Mediated Modified Atmosphere Packaging (PM-MAP), by having microperforation in the plastic films is applied to correct the exchange of air during storage. Therefore Modified Atmosphere Packaging (MAP) technology offers advantages which leads to extension of the shelf life of fresh produces. Fresh and fresh-cut food industry utilise this advantages to meet the growing demand of convinient and fresh quality fruits and vegetables, in order to maintain freshness quality attributes and to extend the shelf life.

Abstract

This study evaluated the antioxidant activity, ascorbic acid, and beta-carotene levels in two underutilized species of  Sumatran Baccaurea Lour. The fruit of red tampoi or Baccaurea costulata (Miq.) Műll. Arg is orange, while rambai or Baccaurea motleyana (Műll. Arg) Műll. Arg has a pale-yellow color with an “a” value of 29.22±0.51 and 2.67±0.58, respectively, measured with a hand chromameter. The half-maximum inhibitory concentration (IC50) of the free radical scavenging activities of both fruits was determined using the 2,2-diphenyl-1-picrylhydrazyl (DPPH) free radical scavenging method. The IC50 of B. costulata (51.63±3.42 µg/g) indicated that its fruit juice has a strong antioxidant property, while B. motleyana (76.95±1.28 µg/g) has a moderately antioxidant characteristic.  A high antioxidant activity of B. costulata was followed by a high amount of ascorbic acid (55.86±1.73 mg/100g) and beta carotene (150.77±2.16 μg/g), in comparison to those of B. motleyana, which has a lower amount of ascorbic acid (37.30±2.34 mg/100g) and beta carotene (25.36±1.37 μg/g). It was also found that there was a moderate correlation between scavenging capacities (expressed as the reciprocal of the calculated IC50 value), a strong positive correlation with beta-carotene (r2 = 0.90), and a moderately positive correlation with ascorbic acid (r2 = 0.77). It can be concluded that both Baccaurea fruits are nutritious foods due to their high ascorbic acid and beta-carotene content, and they also possess high antioxidant properties. Both ascorbic acid and beta-carotene contributed significantly to the antioxidant activity.
