Abstract

There is no further processing of tuna in Nusa Lembongan, so if it is not sold out, tuna will rot and be thrown away, even though the protein content is high, the price is affordable. To overcome this, it is necessary to process tuna, so that later it can have a long shelf life, high economic value. Based on these problems, a research was conducted on the processing of local tuna tuna in Nusa Lembongan into shredded, then measuring the level of consumer preference and testing the nutrition. This research method is experiment, hedonic test with 50 panelists, and nutrition test at Udayana University Analytical Laboratory. The data analysis technique of this research is descriptive qualitative. The results of the research on the ingredients for making tuna shredded are clean tuna, thick coconut milk, liquid coconut milk, shallots, garlic, red chilies, galangal, ginger, turmeric, coriander, sugar, salt, pepper, lime leaves, and coriander leaves. regards. The results of the hedonic test of shredded tuna from 50 panelists in Nusa Lembongan showed that most answered LIKE shredded tuna in terms of taste, aroma, texture, and color. The results of the nutritional test for shredded tuna showed that 100 grams of shredded tuna contained 30.33 grams of carbohydrates, 37.44 grams of protein, 30.36 grams of fat and 503.327 kcal.Keywords: shredded, tuna, processing, hedonic, nutrition

Abstract

This community service aims to provide training in processing local tuna to be shredded in Nusa Lembongan. Based on the analysis of the situation and needs, it is known that many local tuna foodstuffs have not been used optimally. Tuna that is not sold out, rotten and thrown away. Based on this, it is important to carry out a training program regarding the processing of tuna into floss. Apart from being for the community, shredded tuna is later expected to become a culinary tourism product. The methods used in this training session were theoretical lectures on tuna and its potential, cooking demonstrations, and hands-on practice for the participants. The evaluation results showed that the participants were enthusiastic about participating in the training and were able to practice the shredded tuna processing method.

Abstract

The tourism sector is one of the businesses affected by the Covid-19 pandemic. For the prevention and control of Covid-19, the Ministry of Tourism and Creative Economy has compiled Guidelines for the Implementation of Cleanliness, Health, Safety and Environmental Sustainability (CHSE). This study aims to determine the implementation of CHSE at Wyndham Tamansari Jivva Resort Bali. The research was conducted by conducting observations and interviews regarding the implementation of the CHSE. The data analysis technique of this research is descriptive qualitative. The results of this study are that Wyndham Tamansari Jivva Resort Bali has implemented the CHSE guidelines well, as evidenced by the existence of SOPs related to Covid-19 prevention, available hand washing areas and hand sanitizers, body temperature monitoring, use of personal protective equipment such as masks and hand gloves, area cleaning/ spraying disinfectants, special signs to keep a distance, providing food not in a buffet system. However, there are still some shortcomings that are not in accordance with CHSE guidelines, namely the use of personal protective equipment (masks, handglove) which is not consistently applied due to inconvenience and the hotel environment has begun to be poorly maintained due to efficiency in all areas such as labor, electricity and water due to the pandemic Covid-19.

Abstract

This study aimed to enhance the skills and knowledge of the local community in Desa Bugbug, Karangasem, in processing seafood to develop the culinary industry and boost tourism. A combination of qualitative and quantitative approaches was employed, focusing on practical training and continuous mentoring. Data were collected using questionnaires distributed to participants before and after the training sessions, complemented by short interviews. The data were analysed to identify changes in competency levels, focusing on five key variables: culinary skills and knowledge, hygiene and sanitation awareness, professionalism and collaboration, sustainable culinary industry development, and training quality and effectiveness. The results indicated significant improvements in participants' culinary skills and knowledge, particularly in seafood processing, and heightened awareness of hygiene and sanitation practices. However, challenges in professional collaboration and the sustainable development of the culinary industry were identified. The training had a positive impact, increasing local culinary skills and knowledge, enhancing menu diversity, and supporting the preservation of traditional culinary practices. Continuous mentoring from academic institutions is crucial to further develop these competencies and ensure long-term benefits. Future research should explore integrating digital technology into training programs and evaluate the long-term economic impact on local tourism. Overcoming logistical challenges and resistance to new techniques are essential for sustainable development.

Abstract

Lontar fruit is a fruit that comes from the Lontar tree or also known as Palmyra. This study aims to determine the quality and describe the final results of processing lontar fruit as a basic ingredient in making dodol. Dodol is a traditional food that has a sweet taste and chewy texture. The data collection method used in this study was an experiment which was then continued with documentation, organoleptic tests were analyzed using a Likert scale to get the best results from dodol made from Lontar fruit. The test results from 20 fairly trained panelists who were students of the culinary arts study program at the Bali Tourism Polytechnic. The conclusion of this study is that dodol made from lontar fruit gets an average rating of 90%, namely with very good interpretation criteria.

Abstract

Bubunan Village has great potential in the agricultural sector, especially in the availability of local food ingredients such as cassava, corn and sweet potatoes. However, this potential has not been utilized optimally by the local community. Limited knowledge and skills in processing food into value-added products is one of the main obstacles faced. This community service activity aims to increase the capacity of the Bubunan Village community in processing local food ingredients into innovative food products that have economic value. The methods used in this activity include identification of local food ingredients, socialization and recruitment of participants, training in the theory and practice of food processing. This training emphasizes the importance of hygienic processing, product innovation, and effective marketing strategies. It is hoped that the results of this activity will be able to increase the community's skills and knowledge in food processing, as well as encourage the creation of local food products that are competitive in the market. With this training, it is hoped that there will be an increase in the income and welfare of the people of Bubunan Village, as well as strengthening the local economy through utilizing the potential of existing natural resources. Evaluation of this program shows an increase in product quality and entrepreneurial spirit among participants, which is expected to be sustainable and provide long-term benefits for village communities.

Abstract

The purpose of this study was to determine and describe the quality of jelly candy made from kawa leaf water in terms of organoleptic in terms of taste, aroma, texture and color. The lack of utilization of coffee leaves by the community is due to the lack of public knowledge about how to utilize coffee leaves. This study uses a qualitative descriptive method to determine the quality of jelly candy made from kawa leaf water, using data collection techniques: experiments, documentation, organoleptic tests, questionnaires and Likert scales to get the best results from jelly candy made from kawa leaf water. The overall results of jelly candy made from kawa leaf water received an average rating of 89.75% with very good interpretation criteria. This study can be continued with testing to determine the nutritional content of jelly candy made from kawa leaf water.

Abstract

This study examines the organoleptic and nutritional quality of carrot skin-based nuggets as an innovation in healthy food products. The organoleptic test involved 25 panelists to assess the taste, aroma, texture, and color of the nuggets. The results showed that carrot skin nuggets had good organoleptic quality with an average score of 85% for all tested variables. The nutritional content per 100 grams of nuggets includes balanced carbohydrates, proteins, fats, and calories, making them a healthy alternative compared to meat-based nuggets. This study opens up opportunities for diversification of plant-based food products and suggests further research to improve product quality and stability.
