Abstract

Penelitian ini merupakan studi awal untuk mengeksplorasi potensi probiotikBakteri Asam Laktat (BAL) dari dangke, makanan tradisional dari susu sapi dikabupaten Enrekang. Probiotik adalah mikroorganisme hidup yang bila diberikandalam jumlah yang cukup memberikan manfaat kesehatan pada inangnya. Salahsatu mikroorganisme yang berpotensi menjadi probiotik adalah bakteri asam laktatyang banyak ditemukan pada susu. Penelitian ini bertujuan untuk mengetahuibakteri asam laktat yang terdapat pada dangke dengan bahan dasar susu sapi.Isolasi BAL menggunakan media selektif de Man Rogosa Sharpe Agar. BAL akanmenunjukkan zona bening pada medium MRS setelah penambahan indikatorCaCO3 dan diinkubasi selama 24 jam. Seleksi dilakukan dengan mengamatimorfologi sel, pewarnaan Gram, dan uji biokimia. Hasil penelitian menunjukkanbahwa isolat yang diperoleh terdiri dari dua spesies yaitu Lactobacillus fermentumdan Lactobacillus acidophilus yang menunjukkan gram positif dan katalasenegatif.

Abstract

Soil fertility is the ability of the soil to provide complete nutrients in optimum conditions for plants. Evaluation of soil fertility status is very important in crop cultivation activities, including shallot cultivation. This study aims to evaluate the status of soil fertility based on the physico-chemical properties of various shallot agricultural land in South Sulawesi, to be precise in three districts which are the centers of shallot production, namely Enrekang, Jeneponto, and Bantaeng Regencies. This research was conducted in March-May 2022 with research stages including taking soil samples at 5 locations and continued with an analysis of the physico-chemical properties of the soil at the Soil, Plant, Fertilizer, Water Laboratory of BPTP South Sulawesi with parameters including soil texture (physical properties) and parameters of soil chemical properties include pH, organic matter content, total phosphorus (P) and potassium (K), CEC, and base saturation (BS). The results obtained show that based on soil physical properties, agricultural land in Bantaeng Regency is the most appropriate land for shallot cultivation compared to the other four locations because it has a sandy loam soil texture. The same thing applies to the chemical properties of the soil, namely agricultural land in Bantaeng Regency has very high soil fertility status based on the parameters of C-organic, P and K-total content and CEC in the very high category and BS value in the high category, while 2 locations in Enrekang Regency is in the low category and agricultural locations in Jeneponto Regency are in the medium and high categoriesINTISARIKesuburan tanah merupakan kemampuan tanah untuk menyediakan unsur hara yang lengkap dalam kondisi optimum bagi tanaman. Evaluasi status kesuburan tanah sangat penting dilakukan dalam kegiatan budidaya tanaman, termasuk budidaya bawang merah. Penelitian ini bertujuan untuk mengevaluasi status kesuburan tanah berdasarkan sifat fisika-kimia tanah berbagai lahan pertanian bawang merah di Sulawesi Selatan tepatnya di tiga kabupaten yang menjadi sentra penghasil bawang merah yaitu Kabupaten Enrekang, Jeneponto, dan Bantaeng. Penelitian ini dilaksanakan pada bulan Maret-Mei 2022 dengan tahapan penelitian meliputi pengambilan sampel tanah pada 5 lokasi dan dilanjutkan dengan analisis sifat fisika-kimia tanah di Laboratorium Tanah, Tanaman, Pupuk, Air BPTP Sulawesi Selatan dengan parameter meliputi tekstur tanah (sifat fisika) dan parameter sifat kimia tanah meliputi pH, kandungan bahan organik, fosfor (P) dan kalium (K) total, KTK, dan kejenuhan basa (KB). Hasil yang diperoleh menunjukkan bahwa berdasarkan sifat fisika tanah, lahan pertanian di Kabupaten Bantaeng merupakan lahan yang paling tepat untuk budidaya bawang merah dibandingkan keempat lokasi lainnya karena memiliki tekstur tanah lempung berpasir. Hal yang sama berlaku untuk sifat kimia tanah, yaitu lahan pertanian di Kabupaten Bantaeng memiliki status kesuburan tanah kategori sangat tinggi berdasarkan parameter kandungan C-organik, P dan K-total serta KTK dengan kategori sangat tinggi dan nilai KB dengan kategori tinggi sedangkan 2 lokasi di Kabupaten Enrekang pada kategori rendah dan pada lokasi pertanian di Kabupaten Jeneponto berada pada kategori sedang dan tinggi.

Abstract

Lactic acid bacteria (LAB) interest promises a prospective dietary approach for enhancing the management of blood sugar levels in individuals diagnosed with diabetic and those presenting with pre-diabetic conditions. This review article summarizes the available evidence on the role of LAB in blood sugar regulation, focusing on the mechanisms underlying its effects and relevant research results. LAB supplementation has been shown to improve glucose tolerance and insulin sensitivity in animal and human studies, as well as to reduce fasting blood glucose levels in individuals with type 2 diabetes. Potential mechanisms underlying the effects of LAB on blood glucose control include improving insulin sensitivity, reducing inflammation, and improving intestinal barrier function. However, further supporting studies are needed to fully understand the optimal strain and dose of LAB for blood glucose control and to elucidate the mechanisms by which they exert their effects. Despite promising results, the safety and potential side effects of LAB supplements should also be carefully considered. Overall, this review highlights the potential of LAB as a dietary strategy for blood sugar regulation in individuals with diabetic and pre-diabetic.

Abstract

High cholesterol in poultry meat poses a serious public health concern, driving research on healthier animal products. Probiotics such as Lactobacillus plantarum have been investigated for their potential to reduce meat cholesterol through gut microbiota modulation. This study evaluated the effectiveness of L. plantarum derived from Dangke in lowering carcass cholesterol of broiler chickens. The intervention was conducted orally before feeding to ensure precise dosage intake. Four treatment groups were applied: P0 (control), P1 (10⁶ CFU/ml), P2 (10⁸ CFU/ml), and P3 (10¹⁰ CFU/ml). Results showed that P0 had the highest cholesterol level (0.069 mg/dL), while P2 recorded the lowest (0.061 mg/dL), indicating the most significant reduction. This effect is attributed to enhanced colonization of L. plantarum in the cecum, which modulates lipid metabolism and increases bile acid excretion. Beyond cholesterol reduction, broiler performance parameters such as feed conversion ratio (FCR) and body weight gain also improved in probiotic groups, especially at 10⁸ CFU/ml, supporting previous evidence on probiotic efficacy in poultry production. The findings highlight L. plantarum as a promising functional probiotic for reducing cholesterol while enhancing growth efficiency in broilers. From a practical standpoint, incorporation into drinking water may represent a more feasible application strategy, ensuring uniform distribution and easier adoption at the farm level. Future research should address optimal intervention strategies, the sustainability of effects on meat quality, and potential synergistic applications with other probiotics or prebiotics to further enhance poultry health and product safety.
