Abstract

An investigation about Mercury metal content in marine sediment around Poboya stream has been done. The sediment samples were collected at 5 points of Poboya stream with 0; 15 and 30 days of time variations. The physical conditions of the water was analyzed i.e pH, temperature and salinity. The result showed that the lowest and the highest Mercury metal content (0,0103 and 0,185 mg/Kg) were found at point E and C respectively. It was found at the second and the first sampling accordingly. There was no significant increase of Mercury accumulation by time. In general, the Mercury metal content in the sediment around Poboya stream was still under government rule.

Abstract

The physicochemical propertis of forest honey (Apis dorsata) become one of the supporting qualities of honey. Good honey can be viewed from the quality of honey which refers to the Indonesian National Standard (SNI). Therefore, this research aims to determine the physicochemical properties of forest honey from the village of Bonto Manurung, Maros district, Tompobulu village, Pangkep district and Paranglompoa village, Gowa district in accordance with the SNI. The results showed that the best physicochemical properties of honey were from the village of Bonto Manurung, Gowa district which had a moisture content of 19.19 %b/b, ash content of 0.045 %b/b, viscosity of 14.82 poise , acidity is 42.43 mL N NaOH/kg, reducing sugar is 69 %b/b and HMF levels are 2.99 mg/kg. As for the analysis of metallic impurities, all samples examined forest honey is not contaminated by metals arsenic (As), cadmium (Cd) and lead (Pb).

Abstract

Berdasarkan survei, pengetahuan masyarakat tentang bahaya formalin dan cara mendeteksinya masih terbatas karena pengujian formalin biasanya memerlukan laboratorium. Untuk itu, pelatihan diberikan dengan memanfaatkan kulit buah naga sebagai bahan alami yang sederhana dan mudah diakses. Program pengabdian masyarakat ini bertujuan meningkatkan kemampuan ibu-ibu di Majelis Taklim Permata Babul Maghfirah, Majene, dalam mendeteksi kandungan formalin pada bahan pangan secara mandiri. Kegiatan ini meliputi beberapa tahapan: persiapan melalui komunikasi dengan mitra, pelaksanaan berupa penjelasan teknik deteksi formalin dan eksperimen langsung, serta monitoring dan evaluasi untuk mengukur keberhasilan pelatihan. Hasilnya menunjukkan peningkatan pemahaman dan keterampilan peserta hingga 80%. Peserta mampu melakukan metode deteksi sederhana secara mandiri dan mengidentifikasi bahan pangan yang dicurigai mengandung formalin. Kesimpulannya, pelatihan ini berhasil meningkatkan pengetahuan dan keterampilan praktis peserta dalam mendeteksi formalin menggunakan bahan alami. Metode sederhana ini terbukti efektif dan mudah diterapkan dalam kehidupan sehari-hari. Disarankan agar program serupa diperluas dengan memanfaatkan bahan alami lain untuk mendeteksi zat berbahaya serta melibatkan peserta yang lebih beragam, termasuk laki-laki dan generasi muda, guna meningkatkan kesadaran dan keterampilan masyarakat secara luas.

Abstract

Gelatin is a type of protein resulting from the partial hydrolysis of collagen found in animals' skin, bones, and connective tissue. Gelatin is widely used in the food and pharmaceutical industries. Using Tongkol fish bones as a source of gelatin is a safe alternative for the human body and halal for consumption. Characteristics of gelatin from the bone waste of Tongkol fish extracted with starfruit acid are important to know, therefore it can be used as a substitute for cow and pork skin. The purpose of this study was to determine the characteristics of Tongkol fish bone gelatin extracted with tamarind starfruit. The extraction method was used in this research using 5 levels of starfruit acid concentration (10%, 20%, 30%, 40%, 50%) with the ratio of solvent and fish bones 1: 4 (w/v). The use of starfruit acid with a concentration of 40% produced the highest yield with the characteristics of the resulting gelatin having a brownish yellow color, yield of 1.43%, water content of 17%, ash content of 15%, degree of acidity (pH) of 6.5 and protein content of 47.98%.
