Abstract

Ice cubes are one of the food products that are well known by the public and are considered safe for consumption. The Aim of this research is to see the contamination of Coliform bacteria and the presence of Escherichia coli in ice cubes. Test methods used include: Coliform test and identification of Escherichia coli bacteria. The results showed that 2 of the 6 positive samples contained Coliform bacteria and Escherichia coli bacteria with MPN values above the safe limit. The conclusion of this study is that the ice cubes used by the perpetrators around the city of Karawang have microbiological quality that is not suitable for consumption by the public and does not comply with the microbiological quality requirements of the Indonesian National Standard 01-3839-1996 regarding ice cubes, namely the Total Coliform Bacteria exceeds 0/ 100mL.

Abstract

Research has been carried out on testing the quality of characteristics chitosan from cuttlefish bone waste with variations in deacetylation temperature. The purpose of this study is to identify the potential of cuttlefish bone as a raw material for producing chitosan and the effect of variations in deacetylation temperature on the quality of the chitosan. The tests of water content, ash content and chitosan solubility values. Solubility test showed that the three samples were soluble in 2% acetic acid. The results of the water content test with variations in deacetylation temperatures of 110 0C, 120 0C, 130 0C were 0.3467%, 0.1063% and 0.0135%, respectively. The ash content of chitosan is 0.2627%, 0.0125% and 0.0060%. The results of testing water and ash content showed a decrease in the value linear within increasing temperature.

Abstract

Kangkung Pagar (Ipomoea carnea Jacq) leaves is one of the plants that is used as a treatment. This study aims to determine the content of secondary metabolites and antibacterial activity of kangkong pagar leaves against Bacillus subtilis. Extraction using maceration method with n-hexane, ethyl acetat and methanol. Antibacterial assay using well diffusion method. The extract concentrations used were 40%, 60%, 80% and 100%. The positive control used was Ciprofloxacin and the negative control used was DMSO 5%. Data were analyzed by one way ANOVA test followed by Post Hoc Tukey test. The results showed that the extracts of ethyl acetate, methanol and n-hexane had a minimum inhibitory concentration of 40% with inhibition zones formed of 8.23 mm, 9.4 mm and 4.2 mm. Meanwhile, at the highest concentration of 100%, an inhibition zone of 12.6 mm was formed in the ethyl acetate extract, 15.23 mm in the methanol extract and 11.4 mm in the n-hexane extract. The results showed that extract of Kangkung Pagar (Ipomoea carnea Jacq)leaves was able to inhibit the growth of Bacillus subtilis bacteria.
