Abstract

Oxidative stress is a factor that contribute in pathogenesis of endometriosis. This condition could also implicated in infertility. Lycopene is a carotenoid that has antioxidant activity. Supplementation of lycopene can reduce oxidative stress in peritoneal fluid of women with endometriosis. This study aims to compare the effect of lycopene on malondialdehyde (MDA) levels in peritoneal fluid of women with endometriosis. It is an experimental study on peritoneal fluid from five women with endometriosis. The result show that lycopene supplementation affecting the MDA levels in peritoneal fluid. MDA levels in peritoneal fluid with lycopene is lower than without lycopene. It conclude that lycopene is proved lowering MDA levels in peritoneal fluid of women with endometriosis. Keywords: endometriosis lycopene, malondialdehyde

Abstract

Cases concerning the substitution of meat raw material also occur in Indonesia and are quite common. Therefore, careful monitoring and control that needs to be done on the meat products. Screening or sampling products on the market should be conducted periodically to ensure the safety of consumers and society in general. Such screening should be done accurately. This study aimed to analyze the composition of meat in processed products in traditional markets in Bandung using PCR method. This study was using four specific primers to detect four different species. Screening is done on samples of meatballs from several markets. The results showed the presence of several samples that contain meat of some species. based it can be concluded that the substitution of raw materials processed meat products also occurs in the traditional market in the city of Bandung, and the PCR method referred to can be used as the basis for the development of detection methods of food security in Indonesia.

Abstract

Post-harvest handling of horticultural products is very influential on product quality, because storage temperature is one of the important factors to maintain product quality, especially fresh fruits and vegetables. The purpose of this study were to determined the effect of calcium chloride concentration (CaCl2) and starch type as edible coating material against inhibition of chilling injury of tomato. The research method were carried in two stages, namely the preliminary research and main research. The preliminary research was conducted to determine the temperature and time of starch drying.  The main research using Randomized Block Design (RAK) method with 3x4 factorial with 2 replications. The first factor was chloride calcium concentration consisting of 3 levels of a1 (1%), a2 (2%) and a3 (3%). The second factor is type of starch as edible coating material which consists ogf 4 levels of b1 (without edible coating), b2 (sweet potato starch), b3 (cassava starch) and b4 (ganyong starch). The main research responses include chemical responses (vitamin C and total soluble solid), physical responses (weight loss and firmness), and organolptic reponses (color and appearance). Preliminary research results were obtained the temperature of 60 ° C and the best 5 hours for starch drying. The main research results showed that the concentration factor of calcium chloride (A) affected the color and appearance either on day 5 or day 10. The type of starch as an edible coating material (B) had an effect on vitamin (C) content, total soluble solid, color and appearance on day 5 and day 10. Factor interaction of calcium chloride concentration and type of starch as edible coating material influenced to shrinkage oweight, color and appearance on day 5 and day 10. Ganyong starch has better results based on the response of vitamin C, total soluble solid and weight loss.

Abstract

Kegiatan ini bertujuan untuk mengembangkan usaha berbasis buah stroberi yang banyak di tanam di Desa Suntenjaya Kecamatan Lembang. Target khusus yang ingin dicapai adalah pengolahan buah stroberi menjadi pangan olahan kering, yang dapat menjadi bahan baku intermediet pangan olahan lanjutan seperti bubuk stroberi, tisane maupun garnish. Metode yang digunakan dalam mencapai tujuan kegiatan ini adalah dengan pelatihan dan bimbingan teknis pada saat produksi, pengemasan dan juga strategi pemasaran. Kegiatan yang dilakukan dalam program ini diawali dari evaluasi proses penanaman dan panen stroberi yang sudah berjalan, penyusunan proses produksi, persiapan alat dan bahan pelatihan, kegiatan pelatihan, evaluasi hasil pelatihan, dan pembuatan produk siap jual. Kegiatan pelatihan yang dilakukan dengan cara pemaparan materi dan juga praktek oleh peserta pelatihan. Selanjutnya peserta pelatihan ditugaskan melakukan proses secara mandiri. Evaluasi hasil pelatihan dilakukan tiga minggu setelah pelatihan. Hasil pelatihan menunjukkan masyarakat penanam stroberi mampu menghasilkan produk stroberi kering, namun belum mampu memproduksi dalam jumlah yang memadai untuk dipasarkan.

Abstract

The purpose of this study was to determine the differences in the characteristics of rib eye meat in instant rib soup using nylon retort and aluminum retort packaging in a vacuum. The method used in this study is the paired samples T test with the application of Statistical Package for the Social Sciences (SPSS) version 22.0. This design consists of two variables, namely the response to the nylon retort pouch packaging and the response to the aluminum retort pouch packaging. The parameters tested consisted of four responses, namely, water content using the gravimetric method, pH value using the pH meter method, total microbes using the Total Plate Count (TPC), and organoleptic using the hedonistic quality test. The results of this study showed that the water content, pH value, and total microbes in rib eye meat in instant rib soup using nylon retort pouch packaging had no or an insignificant difference with the water content, pH value, and total microbes in rib eye meat in instant ribs using aluminum packaging. retort pouch for twenty-one days of storage. The results of the organoleptic response on the scent and texture attributes of ribs in aluminum retort pouch packaging are different from ribs that are packaged in nylon retort pouches and without sterilization. In terms of color and taste attributes of unsterilized ribs packaged with nylon retort pouches and aluminum retort pouches, there was no significant difference.

Abstract

This research aims to obtain the optimal process in the production of inchi sacha bean flour using Design-Expert 13 Response Surface Method based on chemical and physical properties. The benefit of this research is to provide information on the use of inchi sacha beans as functional food flour. The research consisted of two stages, namely preliminary research and main research. The preliminary research was to analyze the fat in sacha inchi beans, while the main research conducted was to determine the process optimization of sacha inchi bean flour using the Design Expert 13 program using the Response Surface Method by analyzing each process recommended by the program. The analysis conducted is testing water content, analyzing fat content and solubility. The research results based on the prediction of Design Expert 13 obtained as many as 13 recommended runs. There was one optimal run process with a desirability value of 0.949 with a drying temperature of 80°C and a drying time of 5.325 hours. Based on the selected process, laboratory verification was carried out and obtained moisture content of 0.77%, fat content of 48.70% and solubility of 87.31%.

Abstract

Entrepreneurship plays a crucial role in developing countries by creating employment opportunities and reducing unemployment. This study addresses those issues by examining the impact of entrepreneurial competencies on business success. The novelty relies on its empirical study which is still lacking among Indonesian literature concerning entrepreneurial competencies. This study used PLS-SEM to investigate eight dimensions of entrepreneurial competencies: learning, ethical, familism, relationship, conceptual, opportunity, personal, and strategic competencies. The findings revealed a positive and substantial impact of entrepreneurial competencies on business success. All dimensions are equally important, underscoring the need for stakeholders to prioritize the development of these competencies among young entrepreneurs for the sustainability and growth of their businesses. This study can be a valuable reference and insight for other researchers and Indonesian government to improve business performance among young entrepreneurs.

Abstract

Penelitian ini bertujuan untuk mengetahui pengaruh penambahan konsentrat tomat terhadap karakteristik bubuk flavor kulit dan kepala udang. Penelitian ini menggunakan Rancangan Acak Lengkap (RAL) terdiri dari 1 (satu) faktor dengan 3 (tiga) kali ulangan. Terdapat faktor A merupakan Konsentrat Tomat yang terdiri dari 5 taraf yaitu a0 (0%), a1 (5%), a2 (10%), a3 (15%), dan a4 (20%).Rancangan respon yang dilakukan pada penelitian ini yaitu respon kimia yang meliputi kadar air, dan kadar asam glutamat. Respon fisik meliputi kelarutan, rendemen, kolorimetri, dan Respon Organoleptik. Hasil penelitian pendahuluan yaitu didapatkan hasil bahwa variasi suhu dan waktu pengeringan terpilih yang disukai oleh kebanyakan panelis pada uji hedonik yaitu suhu 60oC selama 6 jam, sehingga suhu dan waktu pengeringan yang digunakan pada penelitian utama adalah suhu 60oC selama 6 jam Hasil penelitian utama menunjukkan bahwa penambahan konsentrasi konsentrat tomat berpengaruh nyata terhadap kadar air, kadar asam glutamat, kelarutan, nilai rendemen, kolorimetri nilai L* a* b*. Penambahan konsentrasi konsentrat tomat berpengaruh terhadap respon organoleptik uji mutu hedonic dengan atribut warna coklat, aroma khas udang dan rasa gurih.
